CANNED APPLE PIE FILLING

Yield 7 quarts

Number Of Ingredients 9

6 quarts blanched sliced fresh apples
5 1/2 cups sugar
1 1/2 cups clear gelatin
1 tablespoon cinnamon
2 1/2 cups cold water

7 drops yellow food coloring

Steps:

  • Use firm crisp apples, such as golden delicious, Rome or other apples of similar quality.
  • Wash, peel and core the apples. Slice them about 1/2 inch wide and place in water containing ascorbic acid to prevent browning. Blanch 2 quarts at a time for 1 minute in boiling water. While blanching other apples, keep ones already blanched in covered pot to keep warm.

APPLE PIE FILLING II

Apple Pie Filling II image

This one uses tapioca. You can multiply the recipe as many times as you'd like.

Provided by Karen

Categories     Desserts     Fruit Dessert Recipes     Apple Dessert Recipes

Yield 8

Number Of Ingredients 5

5 cups thinly sliced apples
1 cup white sugar
2 tablespoons quick-cooking tapioca
½ teaspoon ground cinnamon
1 teaspoon lemon juice

Steps:

  • Combine apples and sugar in a large saucepan. Mix together, then let stand until juice starts to be released from apples. Place over medium-high heat and stir frequently until mixture comes to a boil. Boil hard 1 minute, continuing to stir frequently.
  • Mix tapioca, cinnamon, and lemon juice into apples. Boil hard for 1 minute more, continuing to stir. Pack mixture into a sterilized quart jar, a spoonful at a time, ensuring that there are no air bubbles in mixture. Secure sterilized lid.
  • Place a rack in the bottom of a large stock pot and fill halfway with boiling water. Carefully lower jar into pot using a holder. If processing more than one jar, leave a 2 inch space between jars. Add more boiling water if necessary, until tops of jars are covered by 2 inches of water. Bring water to a full boil, then cover and process for 30 minutes.
  • Remove jars from pot and place on cloth-covered or wood surface, several inches apart, until cool. Once cool, press top of each lid with finger, ensuring that seal is tight (lid doesn't move up or down at all). Can be stored up to one year.

ROSY CRABAPPLE OR APPLE PIE FILLING - (FREEZE OR CAN)

Rosy Crabapple or Apple Pie Filling - (Freeze or Can) image

This excellent recipe was passed to me along with a pail of the smaller apple crabs. It works great with the fall apples too - especially those not requiring peeling ... works well with any baking apple. I use this with the larger fall apples - some of which do require peeling. When dealing with large quantities of the fall apple crop I double and triple this, refrigerating while preparing pastry using recipe#89861 - soon have an assembly line going. In short order have pies prepared then go on to making and freezing pie filler for the winter months with the rest of the apples. This does freeze well.Have canned a good many jars but find freezing gives me an equally good product with far less work.

Provided by Gerry

Categories     Dessert

Time 19m

Yield 1 pie

Number Of Ingredients 7

6 cups of sliced unpeeled crabapples or 6 cups fall apples
1/3 cup water (I use 2/3 cup of water)
1 cup sugar
1 tablespoon flour
1 1/2 tablespoons lemon juice (I usually use Realemon)
1 1/2 tablespoons butter or 1 1/2 tablespoons margarine
1/4 teaspoon salt (optional)

Steps:

  • In large pot steam sliced apples 1- 2 minutes.
  • Cool 1- 2 minutes.
  • Add the rest of the ingredients and pie filler is ready to use.
  • Hint When dealing with large quantities of apples I prepare double and triple batches of the pie filler, cool and set into the fridge while preparing the pastry.
  • I find using the recipe 'Lemon Tang Pastry' which was passed to me as no-fail pastry works so very well making the preparation of pies for the freezer a snap.
  • Time depends on how fast you can prepare the apples, those with experience do get throught prep time quickly!

FROZEN APPLE PIE FILLING RECIPE - (3.8/5)

Frozen Apple Pie Filling Recipe - (3.8/5) image

Provided by lindaauman

Number Of Ingredients 8

7 to 8 cups sliced apples (thin)
1 tablespoon lemon juice
1 to 1 1/2 cup sugar
1/4 cup flour
1 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon nutmeg
2 tablespoons butter cut into chunks

Steps:

  • Take a Ziplock bag and dump in everything except the apples and lemon juice and butter. Hold the top of the bag and shake it up really good. . (I did 10 of these bags at a shot, and let the kids help me, since they would just measure the same thing over and over into each bag) Peel, core and slice your apples and dump them into the bag. Chop the butter up into chunks (I tried to get at least 8 chunks.. it helps to freeze the butter before chopping it up) and dump that in the bag. Zip it shut with lots of air and flip the bag over and shake it all really good until everything is coated well. Open the bag, pour in the lemon juice, squish it around and suck all the air out of the bag with a straw and zip it shut. Squish it flat and lay it flat in the freezer. Don't wait until all the bags are done before putting them in the freezer.... they get WAY to juicy.. and don't pour the lemon juice ON the apples before putting in the bag, because then the mix in the bag doesn't coat the apples well. When you want pie, take it out and lay flat on the counter for about 30 minutes (covering with a warm wet t-towel helps speed it along) OR in the fridge over night. Squish it around to make sure the butter is evenly distributed and dump in a 9" regular raw pie shell & cover with a crust. Set the pie on a drip pan (you WILL need it) and bake as you would a normal pie (I did about 20 minutes at 400°F, and then 45 at 325°F). It takes approximately 9 apples to make a pie, and we used about a bushel to do 20+ pies. \

4 ounces cold butter, cut into pieces
1/2 cup shredded sharp Cheddar
2 to 3 tablespoons ice water
Cinnamon-sugar, for dusting
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
4 carrots (about 8 ounces), peeled and grated
3 large beets (about 1 pound), peeled and grated
12 ounces oil
2 cups granulated sugar
3 eggs
3 ounces sour cream, at room temperature
3 tablespoons lemon juice
Zest of 2 lemons
12 ounces cream cheese
8 ounces butter
1 1/2 pounds powdered sugar, sifted
1 teaspoon vanilla extract
1 tablespoon ground cinnamon
2 apples, cored, peeled and chopped
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon

Steps:

  • For the cheddar cheese pie crust: In a food processor, pulse the flour and salt until well combined. Add the butter and cheese and pulse until small pea-size balls form. Gradually add the ice water, up to 3 tablespoons. Remove the dough from the food processor bowl, fold the dough, wrap with plastic wrap and refrigerate for at least an hour.
  • Preheat the oven to 325 degrees F. Dust the work space with flour. Roll out the pie dough and cut desired shapes with a cookie cutter. Place the shapes on a baking sheet, brush with water, dust with cinnamon-sugar and bake until golden brown, about 15 minutes.

In the bowl of an electric mixer with the whisk attachment, add the carrots, beets, oil and granulated sugar and whisk on medium for 1 minute until combined. Add the eggs, one at a time, scraping the bowl as needed. Add the sour cream, lemon juice and lemon zest and mix for about a minute until well combined. With the mixer on low, gradually add the flour mixture just until combined. Then remove from the mixer and scrape by hand. Fill the prepared muffin pans three-quarters full with batter and bake until a toothpick inserted comes out clean, about 24 minutes.
  • For the frosting: Whip the cream cheese and butter in an electric mixer with the paddle attachment until fully incorporated. With the mixer on low, gradually add the powdered sugar until combined. Add the vanilla and mix until combined. Finally, add the cinnamon and mix until fully incorporated.
  • For the apple filling: In medium saucepan over medium heat, combine the apples, sugar and 1/8 cup water. Bring to a boil and stir until the water has evaporated and the apples are soft. Add the cinnamon and refrigerate until cool.
  • To assemble: Use a knife to make a hole out of the center of the cupcakes. Fill with apple pie filling, and then frost with cinnamon cream cheese frosting. Top with a Cheddar cheese shape.

CARAMEL APPLE PIE FILLING (OAMC)

Caramel Apple Pie Filling (Oamc) image

This is a recipe that my husband came up with when we had a lot of apples after apple picking several years ago. It has become a family favorite and one that we look forward to making after what has become a fun annual family outing at a beautiful orchard. We like using a combination of at least two or three varieties of apples for flavor and texture. Our favorite combination is Macintosh, Jonagold, and Granny Smith. I double or triple this recipe to can or freeze to use later in pies, over ice cream, on my oatmeal, or straight up, but it is so good it doesn't last long.

Provided by UrbanYogaMommy

Categories     Pie

Time 1h

Yield 1 quart, 1 serving(s)

Number Of Ingredients 8

2 1/2 lbs apples, peeled cored, and sliced (about 7 apples)
2 tablespoons lemon juice, freshly squeezed
1 teaspoon ground cinnamon (use the best quality you can afford, it makes a real difference)
1/4 teaspoon nutmeg, freshly ground
1/4 cup firmly packed brown sugar
1/4 cup butter
1/4 teaspoon salt
1 teaspoon cornstarch (optional)

Steps:

  • Peel, core, and slice apples. Should be about 6 cups of apples when sliced. Toss with lemon juice, cinnamon, and nutmeg.
  • Cover or place into a resealable bag and allow flavors to mingle for 30 minutes.
  • In a heavy bottomed saucepan, melt butter and brown sugar together. Stir frequently. Heat on medium heat until mixture starts to bubble. Add salt.
  • Add apple mixture and all of the juices. Allow mixture to come to a gentle boil, lower heat and allow to simmer, stirring often, until the firmest apples start to soften. Cooking time can be adjusted to suit your preference for apple texture. My family likes their apples on the softer side, so I let it cook until the firmest apples are fork tender.
  • If there is a lot of liquid, add 1 teaspoon of cornstarch and stir through. Let this simmer a bit longer because the cornstarch will not thicken unless the liquid is at a boil.
  • Ladle into a prepared quart jar with at least 1" headspace and proceed with sealing. Or ladle into a container for freezing. 1 quart will fill one pie generously.

APPLE PIE FILLING

Apple Pie Filling image

Many apple pies call for simply tossing cut apples with sugar, adding a thickening agent and some spices, and plopping it all into a crust. But precooking the apples has multiple advantages: First, it draws out some of their juices, to ensure consistency. (No undercooked apples or runny filling here!) And, second, it prevents the filling from sinking away from the crust as it cools, leaving a pocket of air between filling and crust. Use this all-purpose filling in a traditional pie, tiny hand-held pies, or in a cobbler. It can be made several days ahead, leaving just assembling and baking.

Provided by Erin Jeanne McDowell

Categories     pies and tarts, dessert

Time 15m

Yield 6 cups (enough for 1 9-inch pie)

Number Of Ingredients 11

4 tablespoons/55 grams unsalted butter (1/2 stick)
6 to 8 medium apples, such as Honeycrisp, Granny Smith or Gala, peeled, cored and cut into 1/2-inch dice (about 6 1/2 cups/1 kilogram)
2 tablespoons lemon juice (from 1 lemon)
1 1/2 teaspoons vanilla extract
1 cup/220 grams light or dark brown sugar
1 tablespoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
3/4 teaspoon fine sea salt
1/2 cup/100 grams granulated sugar
1/3 cup/45 grams all-purpose flour

Steps:

  • In a medium pot, melt butter over medium heat. Add apples, tossing to coat in the butter. Add lemon juice, vanilla, brown sugar, cinnamon, ginger, nutmeg and salt and stir to combine. Continue to cook, stirring occasionally, until the sugar dissolves and the apples start to soften, 5 to 6 minutes.
  • In a small bowl, whisk together granulated sugar and flour. Add to the pot and stir well to combine. Stir constantly until the mixture thickens, 2 to 3 minutes.
  • Let the filling cool completely before using. (You can speed this process up by spreading it into an even layer on a baking sheet.) The filling will keep, refrigerated, for up to 3 days.

Press chunks down to bottom of bowl with fork. Add more water by the tablespoon, until dough is moist enough to hold together when pressed together.
  • To test the dough for proper moistness by squeezing a marble-sized ball of dough in your hand. If it holds together firmly, do not add any additional water. If the dough crumbles, add more water by the tablespoonful, until dough is moist enough to form a smooth ball when pressed together.

  • Place about 1 tablespoon apple filling on each dough circle. Moisten edges with water. Fold in half over filling. Press with fork to seal. Place on ungreased baking sheet. Prick tops with fork to let steam escape.
  • Bake 20 minutes or until golden brown. Cool 10 minutes on wire rack.
  • Combine powdered sugar, milk and vanilla in small bowl. Stir well. Drizzle over turnovers. Serve warm or cool.

Bring to a boil over medium-high heat, stirring constantly, and cook until mixture thickens and begins to bubble. Add lemon juice, return to a boil and boil for 1 minute, stirring constantly. Remove from heat. Drain apple slices and immediately fold into hot mixture. Before processing, heat, stirring, until apples are heated through.
  • Ladle hot pie filling into hot jars leaving 1 inch headspace. Remove air bubbles. Wipe rim. Center lid on jar. Apply band until fit is fingertip tight.
  • Process jars in a boiling water canner for 25 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed.

Apple pie is a classic American dessert that has been around for many years. The simple combination of sweetened apples and fragrant spices baked in a flaky pastry crust is a perfect way to end any meal. However, making apple pie filling from scratch can be quite challenging for many people, which is why there are many apple pie filling recipes available online and in cookbooks.

What is Apple Pie Filling?

Apple pie filling is a mixture of cooked apples, sugar, spices, and sometimes thickener such as cornstarch or flour. It is an essential ingredient in making classic apple pies or any other baked goods that require a sweet apple filling, such as turnovers and tarts.

Types of Apples for Apple Pie Filling

Not all apples are created equal when it comes to apple pie filling; some apple varieties work better than others. The best apples to use for apple pie filling are those that hold their shape and won't turn mushy when baked. Some of the top choices include:

  • Granny Smith: tart and firm
  • Honeycrisp: juicy and slightly tart
  • Cortland: slightly tart and crisp
  • Braeburn: sweet and firm
  • Pink Lady: tangy and firm

Spices Used in Apple Pie Filling

Cinnamon is the most common spice used in apple pie filling recipes. However, there are other spices that can be added to enhance the flavor of the filling, such as:

  • Nutmeg: adds a warm and nutty flavor
  • Ginger: adds a slightly spicy and bright flavor
  • Allspice: adds a complex flavor with hints of cinnamon, nutmeg, and clove
  • Cloves: adds a warm and sweet flavor, use sparingly as it can be overpowering

Sugar in Apple Pie Filling

Sugar is an essential ingredient in apple pie filling as it sweetens the apples and binds the filling together. Generally, 1/2 to 1 cup of sugar is used for every 6 cups of sliced apples, depending on the tartness of the apples and personal preference. Brown sugar can also be used for a richer flavor, and some recipes even call for a combination of white and brown sugar.

Thickener for Apple Pie Filling

To prevent a runny apple pie filling, a thickener is often added. Some popular thickeners include:

  • Cornstarch: creates a clear and glossy filling
  • Flour: creates a more opaque filling
  • Quick-cooking tapioca: creates a thicker and slightly chewy filling

Variations of Apple Pie Filling

There are many ways to customize apple pie filling recipes to make them your own. Here are some variations to try:

  • Add dried cranberries, raisins or chopped nuts to the filling for texture and extra flavor.
  • Replace some of the apples with pears for a sweeter and softer filling.
  • Add a splash of lemon juice to the filling to brighten the flavors and help prevent browning.
  • Add a splash of apple cider or bourbon to the filling for a boozy twist.

Cooking Apple Pie Filling

Cooking apple pie filling is a straightforward process that involves combining the apples, sugar, spices, and thickener in a large saucepan and cooking until the apples are tender and the filling has thickened. Once the filling is cooked, it can be used immediately to make a pie or stored in the refrigerator or freezer for later use.

Conclusion

Apple pie filling is a versatile and delicious filling that can be used in a variety of baked goods. With a few simple ingredients and some basic cooking techniques, anyone can make their own homemade apple pie filling to enjoy all year round.

Apple pie is a classic dessert in America, and making the perfect apple pie filling is the key to a delicious pie. Whether you're a beginner or a seasoned baker, there are some valuable tips that can help you create the perfect apple pie filling. In this article, we will discuss some of the most important tips that can help you make the best apple pie filling recipes.

Choose the right apples

The first and most important tip for making the perfect apple pie filling is to choose the right apples. Apples are the main ingredient in apple pie, so it's important to select the right type of apple for your recipe. Some apples are better suited for baking than others, so it's important to choose apples that hold their shape and don't turn to mush when baked.
Best apples for baking
Some of the best apples for baking include Honeycrisp, Granny Smith, Braeburn, Rome, and Jonathan apples. These apples have a natural sweetness that complements the tartness of the pie filling. If you prefer a sweeter apple pie, you can use Golden Delicious, Fuji, or Gala apples.
Avoid soft or mealy apples
It's important to avoid soft or mealy apples when making apple pie filling. These apples don't hold their shape when baked and will turn to mush, resulting in a runny filling. When selecting apples for your apple pie filling, look for firm apples with a good balance of sweet and tart flavors.

Cut apples evenly

Another important tip for making the perfect apple pie filling is to cut the apples evenly. Unevenly cut apples will result in an uneven pie filling texture and inconsistent cooking times. To ensure your apple pie filling cooks evenly, make sure to cut your apples into equal-sized slices or chunks. Using an apple slicer or mandolin can help you achieve this.

Prevent apples from browning

Apples have a tendency to turn brown when exposed to air, but there are ways to prevent this from happening. Browning apples can affect the overall appearance of your finished pie, so it's important to take steps to prevent it.
Add lemon juice
One way to prevent apples from browning is to add lemon juice to your apple pie filling. The acid in the lemon juice prevents the apples from oxidizing and turning brown. To add lemon juice to your apple pie filling, squeeze 1-2 lemons over sliced apples and toss gently.
Keep sliced apples in water
Another way to prevent apples from browning is to keep them in water. Place sliced apples in a bowl of cold water with a tablespoon of lemon juice or vinegar to prevent browning. This also helps to soften the apples and make them more pliable for layering in your pie crust.

Use the right spices

Apple pie filling recipes call for a variety of different spices, and choosing the right spices is important for achieving a delicious apple pie filling. Some of the most common spices used in apple pie filling recipes include cinnamon, nutmeg, cloves, and allspice.
Cinnamon
Cinnamon is the most commonly used spice in apple pie filling recipes. It adds a warm, spicy flavor that complements the sweetness of the apples. Use cinnamon in your apple pie filling recipe to enhance the natural flavor of the apples.
Nutmeg
Nutmeg is often used in conjunction with cinnamon to add depth to the flavor of apple pie filling. It has a warm, nutty flavor that pairs well with cinnamon and complements the sweetness of the apples.
Cloves
Cloves have a strong, pungent flavor that can overpower other flavors in apple pie filling. Use cloves sparingly to add a hint of spiciness to your apple pie filling recipe.
Allspice
Allspice is a blend of spices that includes cinnamon, nutmeg, and cloves. It adds a warm, spicy flavor to apple pie filling and complements the sweetness of the apples.

Add the right amount of sugar

Adding the right amount of sugar to your apple pie filling is crucial for achieving the perfect balance of sweetness and tartness. Too much sugar can overpower the natural flavor of the apples, while too little sugar can result in a tart and unpleasant filling.
Amount of sugar to add
The amount of sugar to add to your apple pie filling will depend on the sweetness of the apples you're using. As a general guideline, add 1/4 to 1/2 cup of sugar for every 3-4 cups of sliced apples. Taste the apple pie filling as you add sugar to ensure that it's sweet enough.

Thicken the filling

Thickening the apple pie filling is important for achieving the right consistency and preventing the filling from being runny. There are various thickeners you can use to achieve this, including flour, cornstarch, tapioca, and instant clearjel.
Flour
Flour is the most commonly used thickener in apple pie filling recipes. It creates a thick, creamy texture and doesn't require any special preparation. Mix 1-2 tablespoons of flour with the sugar and spices before adding it to the sliced apples.
Cornstarch
Cornstarch is another popular thickener used in apple pie filling recipes. It creates a clear, glossy texture and is a good option for people who are gluten-free. Mix 1-2 tablespoons of cornstarch with the sugar and spices before adding it to the sliced apples.
Tapioca
Tapioca is a natural thickener that creates a clear, glossy texture. It's a good option for people who are gluten-free and adds a slight crunch to the filling. Use 2-3 tablespoons of tapioca pearls or 1 tablespoon of tapioca starch to thicken your apple pie filling.
Instant Clearjel
Instant Clearjel is a modified cornstarch that creates a thick, creamy texture. It's a good option for people who want a gluten-free thickener and doesn't require any special preparation. Mix 2-3 tablespoons of Instant Clearjel with the sugar and spices before adding it to the sliced apples.

Conclusion

Making the perfect apple pie filling requires attention to detail and the right ingredients. Choosing the right apples, cutting them evenly, preventing them from browning, using the right spices, adding the right amount of sugar, and thickening the filling are all important factors that contribute to a perfect apple pie filling. By following these tips, you can create a delicious apple pie that's sure to impress your family and friends.
