CAKE
1 pkg white cake mix (15.25 oz)
1 tsp ground cinnamon
1 c sour cream
3 eggs
1/4 c water
*1 can(s) apple pie filling (21 oz)
GLAZE
1 c confectioners' sugar
1 - 1 1/2 Tbsp milk

Steps:

  • 1. Heat oven to 350º F.
  • 2. Beat the first 5 ingredients with a mixer until well blended.
  • 3. Pour into a greased and floured (or spray with Pam) 13×9-inch pan. Top with spoonfuls of pie filling. The cake will bake up over the filling.
  • 4. Bake 35 min or until a toothpick inserted in the center comes out clean.
  • 5. Cool 10 min.
  • 6. For the glaze, mix powdered sugar and milk. If the glaze is too thick to drizzle, add milk, by teaspoonfuls, until desired consistency.
  • 7. Drizzle over cake. Cool completely before slicing.
  • 8. *Substitute: Change the flavor of the coffee cake by preparing with your favorite pie filling, such as blueberry, apple or strawberry.

1/2 stick of butter
1 1/2 c sugar
3 eggs
1 1/2 tsp cinnamon
1 tsp vanilla extract
2 1/4 c all purpose flour
2 tsp baking powder
1 tsp salt
1 lemon zest, grated
1/3 c milk
1/2 c brown sugar ( for topping)
1 can of apple pie filling.

Steps:

  • 1. Beat butter until soft, add sugar beat until light and fluffy. Then beat one egg at a time until combined.Add vanilla extract, lemon zest.
  • 2. Add all your dry ingredients together in one third intervals adding your milk at the same time. Bake in a 9x13 pan grease and flour your pan. Pour your cake batter into pan. Add apple pie filling on top of cake batter and swirl it through.
  • 3. Sprinkle brown sugar on top of the cake and bake. It gives a nice color! Bake in a preheated oven of 350 degrees for 50 minutes.

1 (18 1/4 ounce) box butter pecan cake mix
1 cup butter, cubed

  • Preheat oven to 350 degrees.
  • Lightly grease a 13x9x2-inch baking dish.

PAN PREP
non stick spray or solid shortening/butter
1/4 c sugar (preferably turbinado)
1-2 tsp cinnamon
CAKE
3 c flour
2 1/2 tsp baking powder
2 c sugar
1 c vegetable oil
4 large eggs
1/3 c buttermilk
1 Tbsp vanilla extract
21 oz can(s) apple pie filling(more fruit type)
FROSTING
1 Tbsp butter
1 Tbsp cream cheese
2 c powdered sugar
1/4-1/3 c milk

Steps:

  • 1. Grease a bundt pan thoroughly. Mix cinnamon and sugar well. Sprinkle all over the bundt pan. Set aside. Preheat oven to 350.
  • 2. In a large bowl combine with a whisk: Flour,Sugar,Salt,Baking Powder,Baking Soda.
  • 3. Place in a medium bowl: Eggs, Oil, Buttermilk, Vanilla, and Pie filling. Beat gently with a spoon until smooth and completely incorporated.
  • 4. Pour the wet ingredients into the dry, stirring with a spoon until just incorporated.
  • 5. Spoon into prepared bundt pan and bake for 70 minutes, turning the heat down to 325 after 30 minutes.
  • 6. Remove from oven and cool for 15 minutes. Invert onto a plate, remove pan and allow to cool to room temperature.
  • 7. When cake is cool, drizzle with glaze/frostin or just sprinkle with powdered sugar. Frosting drizzle: Beat softened butter and softened cream cheese in a medium bowl with an electric whisk or mixer until smooth. Add powdered sugar and mix till incorporated and smooth. Thin with milk to a drizzling consistancy. I use a piping bag and snip a small opening in the tip. Drizzle frosting back and forth from center to outside until cake is well coated. Allow frosting to set up before serving. In this picture I used powdered sugar, AND I forgot to take a picture of the whole finished cake! I sliced it up to bring to work.
