Number Of Ingredients 15

2 1/4 cups all purpose flour
1 Tbsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cardamom
1/4 cup granulated sugar
1/4 cup light brown sugar
1/2 cup (1 stick) unsalted butter, cold and cut into pieces
1/2 cup milk or half and half
1 cup finely chopped apple, peeled
1 1/2 cups powdered sugar
1/4 cup milk, half and half, or cream
1/2 tsp vanilla extract
ground nutmeg for sprinkling on top, optional

Steps:

  • Preheat oven to 375F and line a baking sheet with parchment paper
  • Add the flour, baking powder, salt, spices, sugars, and butter to the bowl of a food processor and pulse together until the butter is broken up and only small pieces remain. The mixture will look crumbly.
  • Slowly add in the milk, continuing to pulse until the dough comes together.
  • Remove the dough from the food processor and fold in the apples by hand.
  • Gently roll out the dough on a lightly floured surface until it is about 1 inch thick. Cut out 6 scones with a 3 inch biscuit cutter.
  • Place the scones on the prepared baking sheet and bake for about 20 minutes until risen and starting to turn slightly golden on top.
  • Remove from the oven and allow the scones to cool before glazing.
  • To make the glaze, whisk the powdered sugar, milk, and vanilla extract together until smooth. Gently dip the scones into the glaze, and turn them over onto a rack and let the glaze harden.
  • Sprinkle a little nutmeg on top of the glazed scones, if you like (I like.)

APPLE CINNAMON SCONES

Apple Cinnamon Scones image

I landed my first job in a bakery when I was sixteen. I would come in after school and make huge batches of scone mix to help the morning baker. After I graduated from high school, I became the principal baker --and spent the summer waking up at 2 a.m. Even though I had to go to bed at 7 p.m., I felt like the coolest kid in town. The bakery offered a bunch of different flavors of scones, and I could never decide on a favorite.

Time 45m

Yield About 18 scones

Number Of Ingredients 10

361 grams (3 cups) all-purpose flour
132 grams (2/3 cup) granulated sugar
12 grams (1 tablespoon) baking powder
2 grams (1 teaspoon) ground cinnamon
1 gram (1/4 teaspoon) fine sea salt
142 grams (5 ounces) (10 tablespoons) cold unsalted butter, cut into 1/2-inch cubes
340 to 425 grams (2 to 2 1/2 cups) chopped apples, peeled if desired
242 grams (1 cup) heavy cream
Egg wash: 57 grams (1 large) egg, beaten with 15 grams (1 tablespoon) water and a small pinch of fine sea salt
Turbinado or coarse sugar, for sprinkling

Steps:

  • Preheat the oven to 400 degrees F (204 degrees C), with racks in the upper and lower thirds. Line two baking sheets with parchment paper.
  • In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon and salt. Add the butter and toss to coat the cubes with flour. Cut the butter into the flour by rubbing it between your forefingers and thumbs until the butter pieces are between the size of peas and walnut halves. Add the chopped apples and toss gently to combine.
  • Make a well in the center of the dry ingredients and pour in the cream. Toss the mixture with your fingers to combine, then knead gently to ensure everything is evenly moistened.
  • Scoop 1/4-cup mounds of the dough onto the prepared baking sheets (I do this by hand because I like them to look craggy, but you can use a No. 16 (1/4-cup scoop)), leaving at least 1 1/2 inches between them. Brush the tops of the scones with the egg wash and sprinkle generously with turbinado sugar.
  • Bake the scones, switching the sheets from front to back and top to bottom at the halfway mark, for 20 to 22 minutes, until the tops and edges are golden brown. The scones can be served warm or at room temperature.

Valuable Tips When Making Apple Pie Cones Recipes

Making apple pie cones recipes is the perfect way to enjoy the taste of apple pie in a new form. Apple pie cones are a delicious and unique dessert that can be enjoyed by everyone. If you are planning to make apple pie cones recipes, there are certain tips that can help you create the perfect dessert every time. Here are some valuable tips that will help you make the best apple pie cones recipe:

1. Choose the Right Apples

The first and most important tip for making apple pie cones recipe is to choose the right kind of apples. Not all apples are created equal, and some apples are better suited for baking than others. For baking apple pie cones, you need to choose an apple variety that is firm and holds its shape when cooked. The best apples for baking are Granny Smith, Honeycrisp, and Braeburn. These apples do not turn mushy when cooked and they hold their shape well.

2. Use Quality Ingredients

The quality of the ingredients you use in your apple pie cones recipe can greatly affect the outcome of your dessert. For the crust, use fresh flour, butter, and sugar. Avoid using margarine or other substitutes as they can affect the texture and flavor of the crust. For the filling, use fresh apples, cinnamon, sugar, and butter. Avoid using canned apples or pre-made fillings as they often contain preservatives and artificial flavors.

3. Make a Flaky Crust

The crust of your apple pie cones recipe is one of the most important components of the dessert. To create a flaky crust, use cold butter and water. The butter must be cold to prevent the crust from becoming too greasy. Cold water helps to reduce gluten formation in the flour, creating a flakier crust. Once the crust is made, allow it to rest before rolling it out. This will help to relax the gluten in the flour and prevent the crust from shrinking during baking.

4. Precook the Filling

Precooking the filling for your apple pie cones recipe is another valuable tip that will give you a perfect result. Simmer the peeled, cored, and chopped apples with sugar, cinnamon, and butter in a pan until they are tender, but not mushy. This will keep the apples firm and prevent them from turning into applesauce while baking in the cones. Let the filling cool down before adding it to the cones.

5. Watch the Baking Time and Temperature

The baking time and temperature of your apple pie cones recipe are important factors to consider. Baking the cones at a temperature that is too high can cause the crust to burn, while baking at a low temperature can result in a soggy crust. The baking time must be watched carefully so that the crust turns golden brown, but not burnt. Also, if the apples are precooked, the baking time will be shorter than if using raw apples.

6. Use Cones that are Suitable for Baking

When making apple pie cones, using cones that are suitable for baking is crucial. Not all cones are made for baking, and some cones can melt or become too soft in the oven. Use cones that are made for baking, such as sugar cones or waffle cones. These cones can hold up to the heat of the oven and will not turn soggy or melt during baking. You can also use homemade cone molds if you have them.

7. Add Toppings and Enhancements

Adding toppings and enhancements to your apple pie cones recipe can greatly enhance the flavor and presentation of the dessert. You can sprinkle cinnamon or powdered sugar over the cones before serving. For an extra-special touch, you can top the apple pie cones with whipped cream, caramel sauce, or ice cream. Adding toppings and enhancements is a great way to make the dessert even more delicious and visually appealing.

In conclusion, making apple pie cones recipe can be a fun and delicious way to enjoy apple pie in a new form. By following these tips, you can create the perfect apple pie cones recipe every time. Remember to choose the right apples, use quality ingredients, make a flaky crust, precook the filling, watch the baking time and temperature, use cones that are suitable for baking, and add toppings and enhancements. With these tips, your apple pie cones will be a hit with everyone who tastes them.
