APPLE-PIE CAKE

Apple-Pie Cake image

A cross between pie and a fruit crisp, this dramatic dessert is made with just six common ingredients.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 2h

Number Of Ingredients 6

2 cups flour
1 cup packed light-brown sugar
2 teaspoons cinnamon
1/2 pound (2 sticks) cold unsalted butter, cut into 8 pieces
5 pounds (about 12) tart apples, such as Granny Smith
2 tablespoons fresh lemon juice

Steps:

  • In a large bowl, combine flour, brown sugar, and 1 teaspoon cinnamon. Using an electric mixer or a pastry cutter, cut in butter until the mixture forms pea-size pieces. Press 2/3 of the mixture onto bottom and 1 inch up the side of a 9-inch springform pan.
  • Preheat oven to 350 degrees. Peel apples, cut into thin slices, and place in a bowl. Pour off any accumulated liquid. Toss apple slices with remaining teaspoon cinnamon and lemon juice, and put them in the prepared pan, pressing down gently as you pack them in (they will mound above the edge of the pan). Sprinkle remaining crumb mixture on top.
  • Put the pan on an aluminum foil-lined baking sheet, and bake for 1 hour and 15 minutes, or until golden brown on top. Run a knife around the edge of the pan, and let the cake cool in the pan to set. Serve at room temperature.

APPLE PIE COFFEE CAKE

Apple Pie Coffee Cake image

Provided by Food Network

Categories     dessert

Yield Makes 1 10-inch coffee cake

Number Of Ingredients 11

2 large eggs
1 tablespoon vegetable oil
1/4 teaspoon pure vanilla extract
3/4 cup sugar
1 cup unbleached all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice or nutmeg
1/4 teaspoon salt
2 cups peeled, cored, and thinly sliced firm tart apples (about 1 1/2 pounds)
1 tablespoon turbinado (raw) sugar, for sprinkling on top

Steps:

  • Preheat the oven to 375 degrees F (350 degrees if using a Pyrex or dark-finish pie plate). Grease a 10-inch pie plate.
  • In a medium bowl, combine the eggs, oil, vanilla, and sugar, beating with a wooden spoon until thick, about 1 minute. Add the flour, baking powder, cinnamon, allspice, and nutmeg, and salt. Beat vigorously until the batter has a crumbly consistency, about 1 minute. Fold in the apples and mix until the apples are evenly coated and the batter becomes moist and smooth. There will be lots of apples, held together by a relatively stiff batter.
  • Scrape the batter into the prepared pan and smooth into an even layer with a metal spatula. Sprinkle the top evenly with the sugar. Bake on the center rack of the oven 30 to 35 minutes, until the center is firm when gently pressed. A cake tester inserted into the center should come out clean, the top and bottom of the cake should be deep brown, and the apples should be tender when pierced with a knife. Remove from the oven and cool at least 1 hour in the pan on a folded tea towel. Serve warm or room temperature, cut in wedges from the pie pan.

1 box chocolate cake mix, plus additional ingredients for making the cake
1 store-bought 8-inch apple pie
8 ounces bittersweet chocolate chips
1 cup heavy cream
1 tablespoon dark rum
Kosher salt
1 cup chopped pecans

Sift together flour, baking soda, baking powder, remaining 3/4 teaspoon salt, and the ground cinnamon into a bowl.
  • With mixer on medium-high speed, beat remaining 3/4 cup (1 1/2 sticks) butter and the granulated sugar in a clean bowl until pale and fluffy, 2 to 3 minutes. Beat in eggs, 1 at a time, and vanilla. Reduce speed to low. Add flour mixture in 2 batches, alternating with the sour cream and beginning and ending with the flour; beat until just combined. Spread batter evenly over apples.
  • Bake until cake is golden brown and a cake tester comes out clean, about 45 minutes. Transfer to a wire rack to cool 15 minutes, then carefully invert onto a serving plate.

The succulent apples combine with a buttery crust to create a delicious and satisfying dessert that is enjoyed by many. Whether you're making it for a special occasion or simply want to indulge in something sweet, a well-made apple pie cake is sure to satisfy your cravings. In this article, we'll provide you with some valuable tips to keep in mind when making apple pie cake recipes that will help you to achieve the perfect texture, flavor, and overall presentation.

Choosing the Apples

The first step in making an apple pie cake is choosing the right apples. Not all apples are created equal, and choosing the wrong one can affect the overall taste and texture of the cake. Some apples are too tart, while others can be overly sweet. Here are some tips to keep in mind when selecting the perfect apples for your apple pie cake:
Choose the Right Type of Apple
The best apples for apple pie cake are those that are firm, crisp, and not too sweet. Some of the best varieties for baking include Granny Smith, Honeycrisp, and Braeburn apples. These apples are tart, slightly sweet, and become tender when baked, making them the perfect choice for an apple pie cake.
Consider the Texture of Apples
When making apple pie cake, it's important to consider the texture of the apples you're using. Apples that are too soft or mushy can turn your cake into a soggy mess, while apples that are too firm can make your cake dry and tasteless. Always select apples that are firm to the touch and have a pleasant crispness to them.
Cut Apples Evenly
When preparing apples for your apple pie cake, it's important to cut them into even slices or cubes. This ensures that they will cook evenly and result in a well-balanced texture. Use a sharp knife or a mandolin slicer to cut the apples into thin slices or small cubes.

The Pie Crust

Making a pie crust can be intimidating, but with the right techniques, it can be done easily and quickly. Here are some tips to keep in mind when making the perfect pie crust for your apple pie cake:
Use Ice-Cold Water
When making the pie crust, it's important to use ice-cold water. This will help to prevent the dough from becoming too elastic and will also help to keep the butter or shortening from melting too quickly. Using cold water will result in a flaky and buttery crust.
Handle Dough Gently
When making your pie crust, handle the dough gently. Overworking the dough can cause it to become tough and chewy, which will detract from the overall taste and texture of your apple pie cake.
Chill the Dough Properly
After making your pie dough, it's important to chill it properly. This will help to firm up the butter or shortening and make the dough easier to work with. To chill the dough, wrap it tightly in plastic wrap and refrigerate for at least 30 minutes or up to 24 hours.
Experiment with Different Crusts
There are several different types of crusts you can use for your apple pie cake, including traditional shortcrust, puff pastry, and graham cracker crusts. Experiment with different crusts to find the one that best suits your tastes and preferences.

The Filling

The filling of your apple pie cake is what gives it its distinct and delicious apple flavor. Here are some tips to keep in mind when making the perfect apple pie cake filling:
Coat Apples in Lemon Juice
After cutting the apples, toss them in a mixture of lemon juice and sugar. The lemon juice will help to prevent the apples from turning brown and will add a tangy flavor to the filling.
Add Spices for Flavor
To enhance the flavor of your apple pie cake filling, include a blend of spices such as cinnamon, nutmeg, and allspice. These spices add warmth and depth of flavor to the filling, making it even more delicious.
Use the Right Amount of Sweetener
When making apple pie cake filling, it's important to use the right amount of sweetener. Too much sugar can make the filling overly sweet, while too little can make it too tart. Follow the recipe carefully to ensure the perfect balance of sweetness.

Baking and Serving

Once you've made your pie crust and filling, it's time to bake and serve your apple pie cake. Here are some tips to keep in mind:
Preheat the Oven
Always preheat your oven before baking your apple pie cake. This will help to ensure that the cake cooks evenly and thoroughly.
Bake at the Right Temperature
The temperature at which you bake your apple pie cake is crucial to the texture and flavor of the finished product. Bake the cake at 375°F for 45-50 minutes or until the crust is golden brown and the filling is bubbling.
Serve with Whipped Cream or Ice Cream
Apple pie cake is best served warm or at room temperature. To take your cake to the next level, serve it with freshly whipped cream or a scoop of vanilla ice cream.
Store Properly
If you have leftovers, store them properly to maintain their quality. Wrap the cake tightly in plastic wrap and refrigerate for up to three days or freeze for up to three months.

Conclusion

Making apple pie cake is a delicious and rewarding endeavor. By keeping these tips in mind, you can create a scrumptious dessert that will impress your guests and satisfy your senses. From choosing the right apples to selecting the perfect crust, filling, and baking and serving, these tips will help you to achieve the perfect apple pie cake every time. Happy baking!
