APPLE PECAN SALAD

Apple Pecan Salad image

I remember being excited right before Thanksgiving and Christmas, because that's when my family made this salad. There were five children and only the oldest helped peel the apples. It was fun when one of our boyfriends would come for the holiday for the first time. My dad would give him a huge bowl of grapes, hand him a sharp paring knife and tell him to start peeling. We all kept a straight face until he had the first grape peeled. -Debra Slone, Crossville, Tennessee

Time 2h5m

Yield 6 serving(s)

Number Of Ingredients 27

4 tablespoons unsalted butter
1/3 cup pecans
1 1/4 cups all-purpose flour
1/2 cup pecans
2 teaspoons double-acting baking powder
1 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 1/3 cups milk
2 large eggs
2 tablespoons chopped fresh parsley
2 tablespoons snipped fresh chives
2 tablespoons Dijon mustard
1/4 cup white wine vinegar
1 teaspoon salt (or to taste)
1/2 teaspoon fresh ground black pepper (to taste)
2 teaspoons honey
2/3 cup extra-virgin olive oil
1/4 cup buttermilk
2 (12 1/4 ounce) cans white meat tuna (in water or oil)
2 Red Delicious apples, cored and cut into small dice (do not peel)
2 celery ribs, cut into small dice
1 large red bell pepper, seeded, deveined, and cut into small dice
6 scallions, finely sliced (white part only)
1/2 cup plump moist currants
1/3 cup coarsely chopped pecans
2 tablespoons chopped fresh parsley
2 tablespoons snipped fresh chives

Steps:

  • Make the salad: In a bowl, whisk the mustard, vinegar, salt, pepper, and honey together; slowly add the olive oil, whisking all the while, until the dressing is well blended and does not separate.
  • Whisk in the buttermilk.
  • Drain the tuna and empty it into the bowl, pulling it out of the cans with the tines of a fork--a method that produces large chunks.
  • Add the rest of the ingredients and toss to mix; taste and add more salt/pepper, if needed.
  • Make the waffles: preheat your waffle iron; if you want to hold the finished waffles until serving time, preheat your oven to 200°.
  • Melt the butter; reserve.
  • Put the 1/3 cup pecans into the workbowl of a food processor fitted with a metal blade; pulse several times to finely chop.
  • Turn the chopped nuts out onto a piece of waxed paper and reserve.
  • Add the flour and 1/2 cup pecans into the workbowl and pulse several times to mix, then process until the nuts are pulverized.
  • Add in the baking powder, salt, and pepper; pulse once or twice to mix.
  • In a bowl, whisk together the milk and eggs; with the motor running, add the egg mixture to the food processor, processing until just blended.
  • Add the melted butter and pulse 3 times.
  • Add the parsley, chives, and reserved chopped pecans; pulse to mix.
  • You can either pour the batter onto the iron directly from the workbowl or transfer the batter to a wide-mouthed pitcher or bowl.
  • Lightly spray or butter the grids or your iron; brush or spray the grids again only if subsequent waffles stick.
  • Spoon out 1/2 cup of batter (or the amount recommended by your waffles manufacturer) onto the iron and spread it gently across the grids with a metal spatula or wooden spoon.
  • Close the lid and bake until very lightly browned and nicely crisped.
  • Serve immediately or keep finished waffles, in a single layer, on a rack in the preheated oven while you make the rest of the batch.
  • You can enjoy these waffles when they're just slightly warm or even at room temperature, but their flavor is nuttier when they are hot.
  • Serve--toss the salad once before serving; place a waffle in the center of a plate and top with a generous helping of Tuna-Apple Salad.

Tuna salad is a refreshing and delicious dish. The combination of tuna, apples, and pecans creates a perfect blend of flavors and textures. Whether you're using it for a lunchtime meal or a healthy snack, there are a few things to keep in mind when making an apple pecan tuna salad recipe. In this article, we'll share some valuable tips that can help elevate your apple pecan tuna salad recipe and make it taste even more delicious. Tip 1: Choose Your Tuna Carefully The first thing to consider when making an apple pecan tuna salad recipe is the kind of tuna that you want to use. You can choose between canned, fresh, or frozen tuna. Each type has its advantages and disadvantages. Canned tuna is a convenient option and can be easily found in any supermarket. You can buy it in water, oil, or flavored varieties. However, it can be high in sodium and may contain preservatives. Fresh tuna is a delicious option that is packed with nutrients. It is typically available at seafood counters and needs to be cooked before adding it to the salad. However, it can be expensive and may be difficult to find depending on where you live. Frozen tuna is a convenient option that can be stored for longer periods. It is an excellent option if you can't find fresh tuna in your area. However, it can be dry and may not have the same flavor as fresh tuna. Tip 2: Add the Right Amount of Apples and Pecans The next thing to consider when making an apple pecan tuna salad recipe is the amount of apples and pecans that you want to add. These ingredients add sweetness and crunch to the salad. When adding apples, it's important to choose a variety that is crisp and slightly tart. Granny Smith apples are an excellent option because they hold their shape even after being mixed with the other ingredients. When adding pecans, make sure to toast them before adding them to the salad. This will bring out their natural oils and give them a richer flavor. You can also substitute pecans for other types of nuts, such as walnuts or almonds. Tip 3: Use the Right Dressing The dressing is an essential element in any salad, and the apple pecan tuna salad is no exception. The dressing can be a simple vinaigrette, or you can add mayonnaise or sour cream for a creamier texture. A simple vinaigrette can be made by mixing olive oil, vinegar, Dijon mustard, honey, and salt and pepper. This dressing is perfect for those who prefer a lighter option. If you prefer a creamier dressing, you can mix mayonnaise, sour cream, lemon juice, honey, and salt and pepper. This dressing is perfect for those who prefer a richer and more indulgent flavor. Tip 4: Incorporate Other Ingredients In addition to tuna, apples, and pecans, you can also add other ingredients to your apple pecan tuna salad recipe. Here are some suggestions: 1. Vegetables – You can add a variety of vegetables to the salad, such as celery, carrots, cucumbers, and lettuce. These will add an extra crunch and texture to the salad. 2. Cheese – Adding cheese to the salad can help balance out the sweetness of the apples and pecans. You can use crumbled feta or goat cheese for a tangy flavor, or shredded cheddar or Swiss cheese for a milder flavor. 3. Herbs – Adding fresh herbs to the salad can give it an extra punch of flavor. You can use parsley, cilantro, or dill for a fresh and herbaceous flavor. Conclusion: Making an apple pecan tuna salad recipe is a great way to enjoy a healthy and delicious meal. Whether you're using canned, fresh, or frozen tuna, it's important to choose the right dressing and add the right amount of apples and pecans. You can also incorporate other ingredients, such as vegetables, cheese, and herbs to add extra flavor and texture to the salad. By following these tips, you'll be able to create a delicious and satisfying apple pecan tuna salad that you and your family will love.
