DAZZLING WINTER SLAW - RED CABBAGE, APPLE AND PECAN SALAD
A dazzling coleslaw salad for your winter festive table. Red cabbage is mixed with apples, carrots, pecans and onions which is then dressed with a tangy mustard and nut vinaigrette - fabulous! Plus, the colours as well as the taste, is amazing! This goes so well with cold cuts, pies, tarts, quiches, buffets as well as being a wonderful supper or light lunch accompaniment. I do all the shredding and grating in my food processor, it is so easy and cuts down on time. You can of course grate and shred by hand - it will just take a little longer! I sometimes add semi-dried cranberries and grated beetroot - these are listed as optional exras. The pie shown in the photograph, is my Recipe #268117, which I often serve with this winter slaw salad - they make a wonderful combination. (This recipe was posted to our personal preferences - with a light dressing and not a creamy or heavy dressing; if you like your salads with more dressing - please adjust the dressing quantities up!)

What is Apple Pecan Slaw?
At its core, apple pecan slaw is a salad made with shredded cabbage, grated apples, and chopped pecans, all mixed together and dressed with a tangy vinaigrette. The combination of textures and flavors is what makes this dish so delicious: the crispness of the cabbage and apples contrasts with the soft, buttery pecans, while the vinaigrette adds a zesty kick that ties everything together.
How to Make Apple Pecan Slaw
To make apple pecan slaw, you'll need the following ingredients:
- 1 small head of cabbage, finely shredded (or 1 bag of pre-shredded cabbage)
- 2 medium apples, grated (use a firm, tart variety like Granny Smith or Honeycrisp)
- 1/2 cup chopped pecans
- 1/4 cup olive oil
- 3 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
To prepare your apple pecan slaw:
- In a large bowl, combine the shredded cabbage, grated apples, and chopped pecans.
- In a separate bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper to make the dressing.
- Pour the dressing over the cabbage mixture and toss well to combine.
- Cover and refrigerate for at least 30 minutes (or up to 4 hours) to allow the flavors to meld together.
- When ready to serve, give the salad a quick toss and adjust the seasoning if needed (you may want to add a bit more salt or vinegar to brighten the flavors).
That's it! Your delicious and healthy apple pecan slaw is ready to serve.
Variations on Apple Pecan Slaw
While the classic apple pecan slaw recipe is delicious on its own, there are plenty of other ways to customize this salad to your liking. Here are a few ideas to get you started:
- Swap out the apples for pears, which will give your slaw an even juicier, sweeter flavor
- Add some dried cranberries or raisins for a pop of chewy sweetness
- Play around with the nuts - try using walnuts, almonds, or even hazelnuts instead of pecans
- Try adding some shredded carrots or julienned red peppers for extra color and crunch
- Experiment with different dressings - a creamy buttermilk dressing or a spicy chili lime vinaigrette would both be delicious with this salad
