Number Of Ingredients 19

1 cup chopped pecans
1/2 cup dark rum, such as Mount Gay
1 cup golden raisins
1 cup granulated sugar
1 cup dark brown sugar, lightly packed
3 extra-large eggs, at room temperature
3/4 cup vegetable oil
2 teaspoons pure vanilla extract
2 teaspoons grated orange zest (2 oranges)
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/8 teaspoon ground cloves
1 1/2 pounds Granny Smith apples, peeled, cored, and 1/4-inch-diced (3 to 4 apples)
Vanilla ice cream, such as Haagen-Dazs
Caramel sauce, such as Fran's, heated

Steps:

  • Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
  • Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.

Time 2h25m

Yield 8 servings

Number Of Ingredients 11

2 cups all-purpose flour, plus additional for rolling dough
2 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3/4 cup cold unsalted butter, cut into small pieces
1/4 cup ice water, as needed
1/2 cup raisins
1/2 cup rum
1 (21-ounce) can prepared apple pie filling
1 (3-ounce) package strawberry flavored gelatin (1/2 cup)
2 tablespoons prepared vanilla icing, optional

Steps:

  • Preheat the oven to 425 degrees F.

Roll out the remaining dough, fit it over the top of the pie, pinching the edges together to seal. Trim and crimp the edges. Pierce the top of the pie in a few places with a fork to make steam vents.
  • Bake for 10 minutes and then reduce oven to 325 degrees F. and bake until crust is browned, about 45 minutes. Place on a rack to cool. If using icing, heat it in the microwave just until melted, then drizzle over the pie. Cut into wedges and serve.

Apple pecan and raisin pie is a classic American dessert that has been enjoyed for generations. The combination of sweet apples, crunchy pecans, and juicy raisins baked in a buttery crust is simply irresistible. However, making the perfect apple pecan and raisin pie can be a challenge. You need to balance the sweetness of the filling with the right amount of spices and ensure that the crust is flaky and tender. In this article, we will provide you with valuable tips to help you make the perfect apple pecan and raisin pie.

Choose the Right Apples

One of the most important ingredients in an apple pecan and raisin pie is the apples. It is crucial to select the right type of apples that can hold up in the pie and not turn into mush. The best apples for pies are those that are firm and tart, such as Granny Smith, Honeycrisp, or Braeburn. Avoid using apples that are soft or overly sweet because they will not hold up during baking and will make the filling too mushy.

Pre-Cook the Apples

To prevent the apples from becoming too mushy during baking, you can pre-cook them before adding them to the pie crust. You can do this by sautéing them in a pan with some butter and sugar until they are slightly softened. This will help to remove some of the moisture from the apples and create a more flavorful filling.

Use the Right Spices

The combination of spices used in the filling can make or break the flavor of the pie. The most common spices used in apple pies are cinnamon, nutmeg, and allspice. However, you can experiment with other spices such as ginger or cardamom to add a unique flavor to your pie. Be careful not to overdo it with the spices since they can overpower the flavor of the apples and other ingredients.

Add Some Crunch with Pecans

Pecans are a delicious addition to apple pecan and raisin pie. They add a crunchy texture and nutty flavor that complements the sweetness of the apples and raisins. It is best to chop the pecans into small pieces so that they are evenly distributed throughout the filling. You can also toast the pecans before adding them to the pie to enhance their flavor.

Soak the Raisins

Raisins are another key ingredient in apple pecan and raisin pie. To make them juicier and plumper, you can soak them in warm water or rum for 10-15 minutes before adding them to the filling. This will prevent them from becoming dry during baking and add a burst of flavor to the pie.

Don't Forget the Lemon Juice

Adding a splash of lemon juice to the filling can help to balance the sweetness of the apples and raisins. It also helps to prevent the apples from turning brown and adds a tangy flavor to the pie. You can add the juice of half a lemon to the filling before baking.

Use a Butter Pie Crust

A buttery pie crust is essential to making a delicious apple pecan and raisin pie. You can either make your own pie crust from scratch or use a store-bought one. It is important to chill the dough for at least 30 minutes before rolling it out to prevent it from becoming too soft. Brushing the top of the crust with an egg wash before baking will give it a beautiful golden color.

Bake at the Right Temperature

Baking the pie at the right temperature is crucial to ensure that it cooks evenly and the crust is crisp and flaky. Preheat the oven to 375°F and bake the pie for 45-50 minutes or until the filling is bubbly and the crust is golden brown. It is best to cover the edges of the pie with foil during the first 30 minutes of baking to prevent them from burning.

Let it Cool Before Serving

After taking the pie out of the oven, it is important to let it cool for at least 30 minutes before serving. This will allow the filling to set and prevent it from spilling out when you cut into the pie. You can serve the pie warm with a scoop of vanilla ice cream or whipped cream.
Conclusion
Making a delicious apple pecan and raisin pie requires some effort and attention to detail, but the end result is worth it. By following these valuable tips, you can create a pie that is bursting with flavor and has a perfect balance of sweetness, tartness, and crunchiness. Whether it's for a special occasion or just a treat for yourself, a homemade apple pecan and raisin pie is sure to impress.
