THE ORIGINAL PANCAKE HOUSE APPLE PANCAKE

The Original Pancake House Apple Pancake image

Found this online while searching for TOPH recipes. Fabulous recipe from The Original Pancake House! The Apple Pancake contains eggs, flour, milk, sugar, cinnamon, vanilla, butter and lots of apples. It takes about 30 minutes to bake in an iron skillet and is served all puffed up and steaming hot. The Apple Pancake really isn't much like a pancake at all. It's more a like a soufflé or really, really moist bread pudding. The only way to truly appreciate it is to try one yourself.

PANNEKOEKEN (APPLE PIE PANCAKE/GERMAN)

Pannekoeken (Apple Pie Pancake/German) image

I was watching Diners, Drive-ins and Dives and this was made and looked too good. Luckily it was submitted for publishing on the site and wasn't on food.com. This is a recipe courtesy of Maria Bayer, Magnolia Pancake Haus. People eat it for breakfast at the restaurant but could also be served as a dessert.

Provided by diner524

Categories     Breakfast

Time 35m

Yield 2-4 serving(s)

Number Of Ingredients 13

1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 granny smith apple, peeled, cored and thinly sliced
1/2 cup whole milk
1 tablespoon vanilla extract
3 eggs
1/2 cup all-purpose flour
1 teaspoon granulated sugar
1/2 teaspoon salt
1/2 cup brown sugar
4 tablespoons cold butter
powdered sugar, for serving
whipped cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the cinnamon, nutmeg and apples to a pan. Saute the apples over medium-low heat until slightly soft, 3 to 5 minutes.
  • Meanwhile, prepare the batter. Mix the milk, vanilla and eggs in a bowl. Add the flour, granulated sugar and salt and whisk lightly (some lumps are ok but not too many).
  • Increase the heat under the apples to medium and add the brown sugar and butter. Cook until a syrup forms, about 3 minutes, then add the batter all at once to the center of the pan. Swirl the apple syrup mix through the batter, using a heatproof spatula, to form ribbons (you do not want to fully combine the apple-sugar syrup into the batter). Cook until small bubbles form around the edge.
  • Finish cooking the pannekoeken in the oven, 12 minutes. To serve, invert a 12-inch plate over the pan and flip the pan to turn out the pannekoeken. Sprinkle with powdered sugar, top with whipped cream and enjoy!

The result is a delicious, fluffy pancake with a hint of sweetness from the apples. Apple pancake recipes can be made using a variety of flours, such as whole wheat, white, or gluten-free, and can be adapted to suit individual tastes.

Types of Apple Pancake Recipes

Classic Apple Pancakes
Classic apple pancakes are made by mixing together flour, eggs, milk, sugar, baking powder, cinnamon, and salt. The apples are peeled and sliced into thin pieces, and then cooked in butter and brown sugar until tender. The cooked apples are then added to the pancake batter and the mixture is cooked on a griddle until golden brown.
German Apple Pancakes
German apple pancakes, also known as Dutch baby pancakes, are larger and thicker than traditional pancakes. The batter is made from flour, eggs, milk, sugar, vanilla extract, and salt. Apples are sliced and arranged in a buttered and sugared skillet before the batter is poured over them. The skillet is then placed in the oven to bake until the edges rise and turn golden brown.

The apples are cooked in a mixture of butter, brown sugar, and cinnamon before being added to the pancake batter. The resulting pancakes have a warm, cozy flavor that is perfect for fall mornings.

Valuable Tips for Making Apple Pancake Recipes

1. Choosing the Right Apples

When making apple pancakes, it is essential to choose the right type of apple. Some apples are better suited for cooking and baking than others. Choose apples that are firm and slightly tart, such as Granny Smith, Honeycrisp, or Pink Lady apples.

2. Preparing the Apples

Before adding the apples to your pancake batter, it is important to prepare them properly. Peel, core, and chop the apples into small pieces, so they will cook evenly. If you prefer a chunkier texture, you can cut the apples into larger pieces.

3. Sauté the Apples

To enhance the flavor of the apples, sauté them with butter, cinnamon, and a pinch of salt. This will release the natural sweetness of the apples and create a delicious topping for your pancakes.

4. Use a Good Pancake Mix

While you can make your pancake batter from scratch, using a good pancake mix can save you time and effort. Look for a mix that is easy to prepare and produces pancakes that are light and fluffy.

5. Add Flavorful Ingredients

To make your apple pancakes even more delicious, add some flavorful ingredients to the batter. Cinnamon, nutmeg, vanilla extract, and brown sugar are all great options that pair well with apples.

6. Don't Overmix the Batter

When preparing the batter, be careful not to overmix it. Overmixing can cause the gluten in the flour to develop too much, leading to tough and rubbery pancakes. Mix the batter until just combined, leaving some lumps.

7. Cook on Medium Heat

To ensure that your pancakes cook evenly and don't burn, cook them on medium heat. If the heat is too high, the pancakes will cook too quickly on the outside, while the inside remains raw.

8. Don't Flip Too Early

When cooking pancakes, wait until you see bubbles forming on the surface before flipping them over. This indicates that the pancake is cooked halfway through.

9. Keep Warm in Oven

To keep your pancakes warm while you finish cooking the rest, place them in a preheated oven set to 200°F. This will prevent them from cooling off or getting soggy.

10. Serve with Toppings

Apple pancakes are delicious on their own, but adding toppings can take them to the next level. Maple syrup, whipped cream, chopped nuts, and caramel sauce are all great options to enhance the flavor of your pancakes.
