Sunday at Bickford's in the Boston area was a regular to enjoy their Baked Apple Pancake. Now a resident of Miami Beach, I couldn't find anything like it, therefore, I created this one. For success you must use a 7"-10" cast iron skillet..

Steps:
- Preheat oven to 425 degrees. Beat eggs until light and fluffy in a medium size bowl.
- Add milk, vanilla and a few dashes of cinnamon.
- Add flour and beat for 30 seconds into a light batter.
- Set aside.
- Mix together the sugar and cinnamon.
- Melt butter in skillet then add sugar mixture.
- Immediately add sliced apples stirring to coat evenly.
- Cook apples 3 minutes on medium heat, stirring to coat.
- Remove from heat and pour in egg batter, arranging the apples evenly on top.
- Sprinkle with a little more cinnamon.
- Bake in a 425 degree oven for 13-15 minutes (it will puff up).
- Remove from oven and sprinkle with powdered sugar.
- Cut into 4 wedges and serve hot with lemon wedges and butter, or with maple syrup (or both).

- Preheat oven to 425. Melt 2 extra tbsp. butter in a 9" pie plate. Mix apples, brown sugar, cinnamon, melted butter in a bowl. In a 2nd bowl, combine flour, milk, eggs, salt. Put in pie plate. Place the apple mix in the center. Bake 15 min.

Posted with my dear pancake loving friend Baby Kato in mind. This is an easy recipe for two that can be enjoyed at any time of the day or evening. Special equipment: a well-seasoned 10- to 11-inch heavy cast-iron skillet or other ovenproof skillet

Steps:
- You will need a high temp oven proof shillet for this.
- Put oven rack in middle position and preheat oven to 450°F
- Melt butter in skillet over moderate heat, then transfer 2 tablespoons to a blender. Add apple wedges to skillet and cook, turning over once, until beginning to soften, 3 to 5 minutes.
- While apple is cooking, add milk, flour, eggs, granulated sugar, vanilla, and salt to butter in blender and blend until smooth.
- Pour batter over apple and transfer skillet to oven. Bake until pancake is puffed and golden, about 15 minutes. Dust with confectioners sugar and serve immediately.
