I use my cast-iron skillet when I make this recipe, but an ovenproof, non-stick skillet would work just as well. This is a brunch favorite.

3 large eggs
3/4 cup milk
3/4 cup all-purpose flour
1/2 teaspoon salt
2 granny smith apples, peeled, cored, and cut into 1/4-inch slices
3 tablespoons sugar
2 tablespoons lemon juice
1/4 teaspoon cinnamon
6 tablespoons unsalted butter
1/2 a lemon, juice of
3 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 450 degrees Fahrenheit.
  • In a medium bowl, beat the 3 eggs and milk until well blended. Add the flour and salt; stir until batter is barely blended (the batter should be slightly lumpy).
  • In another bowl, toss apple slices with sugar, 2 tablespoons of lemon juice, and cinnamon.
  • Melt unsalted butter in a heavy, ovenproof 12-inch cast-iron or non-stick skillet over medium-high heat. Add apple mixture and saute 4 minutes, or until slightly softened. Spread out apples into an even layer; pour batter over apples.
  • Bake in preheated oven for 20 minutes, or until pancake is golden brown and puffed.
  • Sprinkle with the juice of half a lemon and dust with confectioner's sugar. Serve immediately.

4 medium cooking apples, peeled, thinly sliced (about 6 cups)
1/4 cup packed brown sugar

1 1/2 cups Original Bisquick™ mix
1/4 cup granulated sugar
1 cup buttermilk
1 tablespoon fresh lemon juice
1 teaspoon vanilla
2 eggs
1 tablespoon cinnamon-sugar
Maple-flavored syrup, if desired

Steps:

  • Heat oven to 450°F. In oven, melt butter in 10-inch ovenproof or cast-iron skillet, about 2 minutes. Add apples, brown sugar and cinnamon; toss to coat apples. (Pan will be very hot.) Bake 2 minutes longer; stir. Bake 3 minutes longer; stir again. Reduce oven temperature to 400°F.
  • In large bowl, beat Bisquick mix, granulated sugar, buttermilk, lemon juice, vanilla and eggs with whisk or fork until blended. Pour over apples.
  • Bake 25 to 30 minutes or until golden brown. Sprinkle with cinnamon-sugar. Cut into wedges. Drizzle with syrup. Serve immediately.

3/4 c aunt jemima buttermilk complete pancake & waffle mix
1/2 c water
3 eggs
1/3 c sugar
2 large tart cooking apples, pared and thinly sliced (about 3 cups slices)
1/4 c butter or margarin, melted
1/4 c chopped pecans
1 tsp cinnamon

Steps:

  • 1. Heat oven to 450. Combine pancake mix, water, eggs and 1 teaspoon sugar in a bowl; mix well. In 9 or 10 inch oven-proof skillet, saute apples in melted butter over medium-high heat until tinder.
  • 2. Remove skillet from heat; sprinkle apples with nuts. Pour batter evenly over apples and nuts. Combine remaining sugar and cinnamon; sprinkle over batter.
  • 3. Cover skillet with lid or foil; bake at 450 for 12 to 14 minutes or until pancake is puffed and sugar is melted. Loosen side of pancake from skillet; cool slightly. Cut into wedges.
  • 4. Note: If oven-proof skillet is not available, saute apples in standard skillet; transfer to 9 or 10 inch pie plate. Proceed as recipe directs.

This is a caramelized apple mixture that is prepared then baked in the pancake, and then baked in the oven in a 9-inch cake pan, then puffs up like a souffle. You can even pre-cook the apple mixture to use later, just store it in the fridge, although I have never tried this, I do think that you could likely make the apple mixture, then freeze it in small containers, to have handy when you make this pancake but I have only refrigerated the apple mixture... It is the perfect brunch, I have even served this for dinner too, this is one of my DH's favorites pancakes, he can eat a whole one all by himself LOL! I usually make two (prepare in two separate bowls) and use two cake pans. This is the most fantastic pancake you will ever try! MacIntosh apples are really the best for this.

4 apples, peeled, cored and sliced into small wedges
1/2 lemon, juice of

Steps:

  • Set oven to 400°F.

  • TO make the apple filling: this step can be made well in advance and refrigerated.
  • Sauté the apples in butter in a non-stick skillet over low heat.
  • Add in lemon juice, brown sugar, vanilla and apple cider (or juice if using); cook about 7-8 minutes until soft.
  • Cool for about 10-15 minutes, or refrigerate for later use.
  • To make batter: Process ALL ingredients on a processor until smooth (can use a wire whisk also for this).
  • Place the prepared slightly cooled apple mixture into the bottom of the prepared cake pan.

  • In a small cup or bowl mix the 3 tablespoons sugar with cinnamon.
  • Sprinkle the apple slices over the bottom of the baking dish (they do nt have to be in a single layer) then sprinkle with 2 tablespoon white or brown sugar.
  • In a mixing bowl whisk the flour with milk, eggs, melted butter, salt and 1 tablespoon sugar (if using) until well blended and smooth; pour into the baking dish.
  • Pour the mixture over the apples in the baking dish.
  • Sprinkle with cinnamon/sugar mixture on top.
  • Bake for 10 minutes at 400 degrees bottom oven rack (your oven must preheated and hot before baking the pancake).
  • Reduce the heat to 325 and continue baking for another 5 minutes.
  • Slice into squares and drizzle with syrup.

2/3C whole milk
2/3C all-purpose flour
1 tsp. vanilla extract
1/8 tsp. salt
1 1/2 tsp. cinnamon, divided
4 T packed light brown sugar, divided
3 T butter, divided
4 large apples, peeled, cored, and cut into 3/8 inch slices
Powdered sugar, for dusting

Steps:

  • Heat the oven to 425 degrees. Place a large cast-iron skillet or a 10 or 11 inch round souffle or casserole dish in the oven to heat. In a blender, combine the eggs, pumpkin, milk,flour, vanilla, salt, 1 teaspoon of the cinnamon and 2 tablespoons of the brown sugar. Blend for a few seconds to just mix the ingredients. Scrape the sides and blend again to incorporate. Set aside. In a large skillet over medium-high heat, melt 2 tablespoons of the butter. Add the apples and saute until just tender, about 5 to 7 minutes. Sprinkle with the remaining 2 tablespoons of brown sugar and 1/2 teaspoon of the cinnamon. Stir to coat the apples, then remove the skillet from the heat. Remove the cast-iron skillet from the ovenand add the remaining 1 tablespoon of butter, tilting to coat the bottom. Spoon the sauteed apples over the bottom of the cast-iron skillet. Pour the batter over the hot apples, then bake until puffed and golden brown, about 20 to 25 minutes. Dust with powdered sugar and serve immediately.
