Steps:
- In large bowl, combine flour, sugar, oat bran, baking powder and soda, salt and cinnamon.
- Combine buttermilk, egg, orange rind and juice in a separate bowl.
- Stir wet ingredients into dry ingredients, mixing just until moistened.
- Stir in apples and raisins.
- Spoon into greased muffin tins.
- Sprinkle with wheat germ.
- Bake at 400 for 18-20 minutes.

- In large bowl, combine bran, flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Combine buttermilk, egg, orange rind and juice. Stir into dry ingredients just until moistened. Stir in apple and raisins. Spoon into greased or paper-lined muffin cups. Sprinkle with wheat germ. Bake at 375°F (for dark pan) for 15-16 minutes or until golden brown. Cool a few minutes and then remove from pan.

Whisk the wet ingredients in a medium bowl. 4. Pour the wet ingredients into the dry mixture. Stir just until mixed. Do not overstir. 5. Spoon the batter into a greased or papered muffin tin.
