Provided by Alton Brown

Categories     dessert

Time 1h30m

Yield About 3 dozen cookies

Number Of Ingredients 10

1 pound old-fashioned rolled oats (about 5 2/3 cups)
1 teaspoon baking powder
1 teaspoon ground cinnamon
Pinch kosher salt
10 ounces unsalted butter, at room temperature
6 ounces dark brown sugar, packed (about 3/4 cup)
3 1/2 ounces granulated sugar (about 1/2 cup)
1 teaspoon vanilla extract
1 large egg
4 ounces raisins, optional, soaked overnight in rum and drained, optional (about 2/3 cup)

Steps:

  • Preheat the oven to 375 degrees F. Spread the oats into a single layer on a baking sheet. Bake until lightly toasted, about 20 minutes. Cool the oats for 2 to 3 minutes on the sheet. Grind 8 ounces of the toasted oats in a food processor until they have the consistency of whole-wheat flour, about 3 minutes. Add the baking powder, cinnamon and salt to the food processor and pulse 2 to 3 times to combine. Set aside.
  • Line baking sheets with parchment paper. Combine the butter and sugars in the bowl of a stand mixer and mix on medium speed using the paddle attachment until light in color, about 3 minutes. Stop once to scrape down the sides of the bowl. Reduce the mixer speed to the lowest speed and add the vanilla extract and egg. Mix to combine. Slowly add the flour mixture until just combined. Stop once to scrape down the sides of the bowl. Add the remaining toasted oats and the raisins, if using, and mix to combine.
  • Scoop the dough with a 1 1/2-tablespoon disher onto the baking sheets, leaving 2 inches between each mound. Bake until the cookies begin to brown around the edges, 12 to 14 minutes, rotating the baking sheets halfway through. Cool on the sheets for 2 minutes, and then move to a cooling rack to cool completely.

Apple oaties cookies are delicious and nutritious treats that can be enjoyed at any time of the day. These cookies are made with oats, apples, dry fruits, and nuts, making them a healthy and tasty snack. In this article, we will share some valuable tips to ensure that your apple oaties cookies are flavorful, chewy, and a hit with everyone.

Tip 1: Use Rolled Oats

When making apple oaties cookies, it is important to use rolled oats instead of instant or quick oats. Rolled oats are thicker and coarser than instant oats, which will give your cookies a chewy and hearty texture. Instant oats are thinner and finer, making them unsuitable for this recipe.

Tip 2: Add Applesauce

To enhance the apple flavor in your cookies, you can add applesauce to your recipe. Applesauce will not only add sweetness but also make your cookies moist and chewy. You can use unsweetened applesauce or sweetened applesauce, depending on your preference.

Tip 3: Use a Variety of Dry Fruits and Nuts

To add more flavor and texture to your apple oaties cookies, you can add different types of dry fruits and nuts. Some options include raisins, cranberries, chopped almonds, walnuts, or pecans. These ingredients will add a delightful crunch to your cookies and make them more nutritious.

Tip 4: Add Cinnamon

Cinnamon is a spice that pairs well with apples and oats. Adding cinnamon to your apple oaties cookies will enhance their flavor and aroma. You can use ground cinnamon in your recipe, or you can add a cinnamon stick to the cookie dough for a more intense cinnamon flavor.

Tip 5: Chill the Dough

Chilling the cookie dough before baking is important because it will prevent the cookies from spreading too much during the baking process. When the dough is chilled, it will hold its shape better, resulting in thicker and chewier cookies. It is recommended to chill the dough for at least 30 minutes before baking.

Tip 6: Use a Cookie Scoop

Using a cookie scoop will help you make uniformly sized cookies. This tool ensures that each cookie is the same size, which will help them bake evenly. A cookie scoop will also make your cookie dough easier to handle, which means less mess and less time spent forming dough balls by hand.

Tip 7: Store the Cookies Properly

Once you have baked your apple oaties cookies, it is important to store them properly to keep them fresh. You can store them in an airtight container at room temperature for up to 3 days. Alternatively, you can freeze them for up to 3 months. When you are ready to eat them, place them in the oven for a few minutes to warm them up.
Conclusion
Apple oaties cookies are a flavorful, chewy, and healthy snack that can be enjoyed by everyone. By following the above tips, you can ensure that your cookies are delicious, easy to make, and perfect every time. Remember to use rolled oats, add applesauce, use a variety of dry fruits and nuts, add cinnamon, chill the dough, use a cookie scoop, and store the cookies properly.
