APPLE CRISP WITH OAT TOPPING

Apple Crisp with Oat Topping image

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

Time 3h30m

Yield Makes: 16 squares

Number Of Ingredients 11

10 tablespoons unsalted butter, melted and cooled, plus more for greasing
1 cup white whole-wheat flour
1 cup rolled oats
2/3 cup firmly packed dark brown sugar
1/4 cup confectioners' sugar
1/4 teaspoon baking soda
Pinch fine sea salt
1/2 cup apple butter
4 ounces dried apples
4 ounces dried cherries, golden raisins or other dried fruit
1/4 teaspoon ground cinnamon

Steps:

  • For the base and streusel topping: Preheat the oven to 350 degrees F. Butter the bottom of an 8-inch-square baking pan.
  • Put the flour, oats, sugars, baking soda and salt in the bowl of a food processor fitted with a metal blade. Pulse 6 times, about 3 seconds per pulse, until some of the oatmeal is finely chopped and some still large or whole. Drizzle in the melted butter, toss with a fork and then pulse until the mixture comes together, about 8 times.
  • Press two-thirds of the oat mixture into the prepared pan. Squeeze spoonfuls of the remaining mixture in your palm to make chunks - some larger, some smaller - and place in a small bowl.
  • Cover with plastic wrap. Refrigerate both the base and the chunks for 30 minutes.
  • For the filling: Put the apple butter, dried fruit, cinnamon and 2 tablespoons water in the cleaned bowl of the food processor and pulse to a chunky paste. Spread the filling over the chilled base. Scatter the streusel topping over the filling, leaving some of the filling showing through. Bake until the streusel is toasty and crisp, about 30 minutes. Cool completely on a rack, about 2 hours, before slicing into 16 squares.

Valuable Tips for Making Apple Oat Crumb Bars Recipes

Tip 1: Choosing the Right Apples

The key to making delicious apple oat crumb bars is choosing the right apples. You want to use apples that are firm and slightly tart, as they will hold up well during baking and balance out the sweetness of the crumb topping.

Some apple varieties that work well in this recipe include Granny Smith, Honeycrisp, Braeburn, and Jonathan. Avoid using apples that are overly sweet or soft, such as Red Delicious, as they can result in a mushy texture.

Tip 2: Properly Measuring Ingredients

When baking, it's important to measure your ingredients accurately to ensure consistent results. Use measuring cups and spoons, and level off each ingredient with a knife or spatula to ensure precision.

For the oat crumb topping, be sure to measure the oatmeal by volume and not weight, as the weight can vary depending on how tightly it is packed. You can also use quick oats instead of traditional rolled oats, as they will give the crumb topping a finer texture.

Tip 3: Preparing the Apples

Before adding the apples to the crumb bars, it's important to prepare them properly. Peel and core the apples, and slice them into small, even pieces. This will ensure that the apples cook evenly and don't create pockets of moisture that can make the bars soggy.

You can also add additional flavor to the apples by tossing them with a sprinkle of cinnamon or nutmeg before layering them onto the crust.

Tip 4: Preparing the Crust

The crust is the foundation of the apple oat crumb bars, so it's important to prepare it properly. Be sure to use cold butter, as it will create a flakier crust that holds together when sliced.

You can use a food processor or pastry cutter to mix the butter into the flour and oats, or use your hands to crumble the ingredients together. Be sure not to overwork the dough, as this can result in a tough crust.

Press the crust mixture evenly into the bottom of a greased baking dish or pan, and bake it until it is lightly browned. This will create a sturdy base that can hold the apples and crumb topping without falling apart.

Tip 5: Making the Crumb Topping

The crumb topping is what gives the apple oat crumb bars their signature texture and flavor. Mix together flour, sugar, and baking powder in a bowl, and then cut in cold butter until the mixture is crumbly. Fold in rolled oats and any additional seasonings, such as cinnamon or nutmeg, to create a flavorful topping.

Sprinkle the crumb topping evenly over the apples, pressing it down lightly so that it adheres to the fruit. This will help create a crunchy texture and prevent the topping from falling off when the bars are cut.

Tip 6: Baking and Cooling the Bars

When baking the apple oat crumb bars, be sure to set the oven to the correct temperature and bake them until they are golden brown and the apples are tender. Set the bars aside to cool for at least 15 minutes before slicing them, as this will help them set and hold their shape.

You can also refrigerate the bars for an hour or two before serving to help them set up even more. This will create a firmer texture and make them easier to cut and serve.

Tip 7: Experimenting with Flavors and Toppings

One of the best things about apple oat crumb bars is their versatility. You can experiment with different apple varieties and seasonings to create new flavor combinations, such as adding dried cranberries or chopped pecans to the crumb topping for a touch of sweetness and crunch.

You can also drizzle the bars with a simple glaze made from powdered sugar and milk, or serve them with a dollop of whipped cream or vanilla ice cream for a decadent dessert.

Conclusion

Whether you're making apple oat crumb bars for a family gathering or a weekend brunch, these valuable tips will help ensure that they turn out perfectly every time. Remember to choose the right apples, measure your ingredients accurately, prepare the crust and topping properly, and experiment with different flavors and toppings to create your own unique twist on this classic recipe.
