Sweet apple and noodle dish of east European origin. Kugels can be made in many flavors, both sweet and savory. Serve either warm or cold, as a side dish or a dessert. Like lasagna, kugel tastes better the day after it is made. Jonagold and Rome Beauty are two apple varieites ideal for this dish.

NOODLE AND APPLE KUGEL

Noodle and Apple Kugel image

This comforting kugel tastes much richer than it is, and it is certainly lighter than a traditional kugel (though it is not a low-calorie dessert). I've made this with Golden Delicious apples and with tarter varieties like Pink Lady; I liked it both ways.

Provided by Martha Rose Shulman

Categories     breakfast, dessert

Time 1h15m

Yield 6 servings.

Number Of Ingredients 11

2 tablespoons unsalted butter
4 apples, cored and cut in small (1/4- to 1/2-inch) dice
6 ounces flat egg noodles, preferably whole-grain
Salt to taste
1/4 cup raisins, plumped for 5 minutes in warm water and drained (optional)
4 eggs
1/4 cup raw brown sugar or dark brown sugar
1 cup drained yogurt
1 teaspoon vanilla extract
2 tablespoons rum
1/2 teaspoon freshly grated nutmeg

Steps:

  • Preheat the oven to 350 degrees. Butter a 2-quart baking dish. Begin heating a large pot of water.
  • Melt 1 tablespoon of the butter over medium-high heat in a large, heavy skillet and add the apples. Cook, stirring or tossing in the pan, until they begin to color and are slightly tender, about 5 minutes. Remove from the heat.
  • When the water comes to a boil, add salt to taste and the noodles. Cook al dente, a little firmer than you would want them if you were eating them right away. Drain through a colander and add to the pan with the apples (if using long flat noodles, cut them first with a scissors into shorter lengths). Add the remaining tablespoon of butter and toss together until the butter melts. Stir in the optional raisins. Set aside.
  • Beat the eggs in a large bowl. Add the sugar and beat together until the mixture is thick. Beat in the yogurt, vanilla, rum, nutmeg and about 1/4 teaspoon salt, or to taste. Add the noodles and apples and fold everything together. Scrape into the prepared baking dish. Push the pasta down into the egg and yogurt mixture (it will not be completely submerged, but try to cover as much as you can). Place in the oven and bake 40 to 45 minutes, until the kugel is set and the sides are browned. There will always be some noodles on top that brown and become quite hard. You can remove these from the baked dish if you wish. Allow to sit for at least 10 minutes before serving. Serve hot, warm or at room temperature.

A Brief History

The word kugel means "sphere" or "ball" in German. It was originally a savory dish made with eggs and potatoes that was popular among German Jews in the Middle Ages. As Jewish communities spread throughout Eastern Europe, the recipe evolved to include other ingredients like noodles, cheese, and fruits. Today, kugel is popular in Jewish households all over the world, and each family has its own unique recipe.

Ingredients

The basic ingredients of apple noodle kugel include egg noodles, apples, cinnamon, sugar, and often, sour cream or cream cheese. Some variations may include raisins or other dried fruits, nuts, or even caramel or maple syrup for added sweetness.

Preparation

To prepare apple noodle kugel, the first step is to cook the egg noodles according to the package instructions. Once cooked, the noodles are drained and set aside. Apples are then peeled, cored, and sliced thinly. A mixture of cinnamon and sugar is then sprinkled over the apples. In a separate bowl, eggs are beaten until frothy, and sour cream or cream cheese is added along with more sugar. The drained noodles are then added to the mixture and stirred until combined. Finally, the apple slices are gently folded into the noodle mixture, and the entire mixture is poured into a greased baking dish.

Baking and Serving

Apple noodle kugel is typically baked in the oven for about an hour, or until the top is golden brown and the inside is set. It can be served warm or cold, and some even enjoy it with whipped cream or ice cream.

Health Benefits

While apple noodle kugel is a delicious treat, it is important to note that it is high in calories and sugar. However, it can be a good source of vitamins and minerals, especially if it includes fresh apples. The dish also provides a good source of carbohydrates and protein from the egg noodles and eggs.

Variations

There are many variations of apple noodle kugel, depending on personal preferences and cultural traditions. Some add different varieties of apples or other fruits, such as pears or cranberries. Others may use different types of noodles, such as gluten-free or whole wheat. Some even experiment with savory flavors, incorporating ingredients such as onions, cheese, or mushrooms.

Apple noodle kugel is a traditional Jewish dish that is believed to have originated in Eastern Europe. It is a sweet, baked noodle pudding that is typically served as a side dish, dessert or breakfast. This dish is a favorite among Jewish families around the world, especially during holidays such as Shabbat, Rosh Hashanah and Yom Kippur. If you're interested in making this delicious dish, here are some valuable tips to help you make the perfect apple noodle kugel recipe.

Tip 1: Choose the Right Noodles

One of the most important ingredients in apple noodle kugel is the noodles. It is essential to choose the right type of noodles to make the perfect dish. Traditionally, egg noodles are used in apple noodle kugel, but you can also use other types of noodles, such as spaghetti, fettuccine or even lasagna noodles. It is essential to cook the noodles al dente, or firm to the bite, to prevent them from becoming mushy and losing their texture during baking.

Tip 2: Add Apples to Your Recipe

Apples are another essential ingredient in apple noodle kugel recipes. They add a sweet and fruity flavor, as well as a lovely texture to the dish. You can choose any type of apple you prefer, such as Granny Smith, Gala, Honeycrisp or Fuji. It is essential to peel and slice the apples thinly, so they cook evenly and blend well with the other ingredients. You can also add other fruits, such as raisins, cranberries or apricots, to your recipe for added sweetness and texture.

Tip 3: Use the Right Spices

Spices are the key to adding flavor and depth to your apple noodle kugel recipe. Cinnamon, nutmeg, and vanilla extract are the most commonly used spices in this dish. They add warmth and richness to the flavors, making it a perfect comfort food. You can also experiment with other spices, such as ginger, allspice or cardamom, to give your recipe a unique flavor profile.

Tip 4: Add Creaminess with Dairy Products

Dairy products are used to add creaminess and richness to apple noodle kugel recipes. Cream cheese, sour cream, and cottage cheese are the most commonly used dairy products in this dish. They add a tanginess and nuttiness to the flavor profile, making it more interesting and enjoyable. You can also use non-dairy options, such as almond milk or coconut cream, to make a vegan or dairy-free version of the dish.

Tip 5: Use the Right Baking Dish

The baking dish you use can affect the texture and consistency of your apple noodle kugel recipe. It is important to choose a dish that is the correct size and shape for your recipe, as well as one that can withstand high temperatures. A deep, rectangular baking dish is the most commonly used for this dish, but you can also use a round, oval or square dish. It is important to grease the baking dish before adding the mixture to prevent sticking and ensure a smooth release.

Tip 6: Don't Overbake the Kugel

Overbaking can ruin your apple noodle kugel recipe, resulting in a dry and tough dish. It is important to follow the recipe and bake the kugel for the recommended time and temperature. It is also essential to check the kugel after a certain amount of time to see if it is done. A toothpick inserted in the center of the kugel should come out clean when it is fully cooked. If it is still wet or undercooked, you can bake it for an additional 5-10 minutes, checking it frequently.

Tip 7: Let it Cool Before Serving

Letting your apple noodle kugel cool for a few minutes before serving can make a big difference in the taste and texture of the dish. It is important to allow it to cool in the baking dish for at least 10-15 minutes before cutting or scooping. This helps the flavors meld and the texture to set, resulting in a smooth and creamy dessert. You can also serve it at room temperature or chilled, depending on your preference.

Conclusion

Apple noodle kugel is a delicious and comforting dish that is perfect for any occasion. Whether you're making it for a holiday or a casual dinner, these valuable tips can help ensure that your recipe turns out perfect every time. From choosing the right noodles to letting it cool before serving, these tips can make a big difference in the taste and texture of your dish. With a little practice and experimentation, you can create a unique and delicious apple noodle kugel recipe that your family and friends will love.
