Steps:
- Make the meatballs: Pulse the bread in a food processor to make fine crumbs. Add the milk and Worcestershire sauce and pulse to make a paste; set aside.
- Heat the butter and vegetable oil in a large nonstick skillet over medium heat; add the shallots and cook, stirring, until golden brown, about 8 minutes. Add the apple, garlic, cinnamon, 1 teaspoon salt and a few grinds of pepper and cook until the apple is tender, about 3 minutes. Stir in the breadcrumb mixture and cook, stirring, until thickened, about 4 minutes. Transfer to a large bowl and let cool completely.
- Add the turkey and egg to the bowl and beat with a mixer on lowspeed until well combined, about 4 minutes. Cover and refrigerate at least 30 minutes.
- Preheat the oven to 425 degrees F and coat a baking sheet with cooking spray. Dampen your hands and form the meat mixture into 36 balls (about1 inch each). Arrange on the prepared baking sheet and bake until lightly browned, 15 to 20 minutes.
- Meanwhile, make the gravy: Melt the butter in a medium saucepan over medium heat. Add the flour and whisk to make a smooth paste, about 3 minutes. Gradually whisk in the chicken broth, then add the Worcestershire sauce. Cook, whisking, until slightly thickened, about 5 minutes. Add the meatballs and simmer until firm and cooked through, about 10 minutes. Serve over mashed potatoes and top with parsley and/or chives.

- Preheat an oven to 350 degrees F (175 degrees C). Prepare a 2-quart baking dish with cooking spray.
- Place the dried mushrooms in a bowl. Pour 1/4 cup of warm water over the mushrooms; allow to soak until the mushrooms have rehydrated, about 30 minutes. Drain, reserving the water, and set both the mushrooms and water aside.

- 1. Preheat oven to 350. Dice onion and apple.
- 2. Sauté onion in a small amount of oil till semi-transparent.
- 3. In a large bowl, mix the onions and diced apple with the remaining meatball ingredients.
- 4. Form into meatballs using an ice cream scoop with swing lever (makes the perfect size). Place meatballs about 1 inch apart on a large oiled baking pan or cookie sheet.
- 5. Cook in a 350 F oven for 20-30 min, checking often not to overcook as these will go into the skillet with the sauce for about 5-8 more minutes of cooking.
- 6. Combine sauce ingredients in a small saucepan. Bring to a boil; reduce heat.
- 7. Simmer, uncovered for 10 minutes, stirring occasionally. Look out! the vinegar is pungent!
- 8. Place meatballs into large skillet.
- 9. Add sauce.
- 10. Cook over low heat for 5-8 min. Stir only enough to coat the meatballs or they will want to fall apart. Can just skip this step and use it as a dipping sauce... but they are so good like this!

- To make the meatballs, tip the pork into a bowl and add the grated courgette and onion, half the dill, half the garlic and plenty of black pepper. Break in the egg and mix well with your hands. When everything is well combined, break off walnut-size pieces and roll into balls - you should end up with about 28. The mixture will be very soft.
- Heat the oil in a large non-stick frying pan then gently fry the meatballs in two batches until firm and pale golden, turning them every now and then so they brown evenly. Each batch should take 6-8 mins.
- Wipe out the pan to remove excess fat and add the remaining garlic and thyme, then pour in the bouillon and bring to the boil. Turn off the heat, stir in the crème fraîche and remaining dill, then return the meatballs to the pan and turn them in the mixture until coated.
- For the salad, mix the apple, onion, parsley and capers with the lemon, then stir through the beetroot. Serve the salad alongside the meatballs. If you're cooking for two people, eat half the meatballs and salad now, and chill the rest for another day - it will keep in the fridge for up to three days. Reheat the meatballs in the microwave until piping hot.

- Add the ground beef, breadcrumbs, sage, egg and plenty of seasoning. Use clean hands to mix the mixture together.

BAKED PORK AND APPLE MEATBALLS (GARY RHODES)
A super Gary Rhodes recipe! Oh so GOOD and a bit different for that weekday meal. I like to serve this with mashed potatoes and a green veggie. I always double this because it is delicious dish that is also great for OAMC. I have modified this to omit the prunes as hubby wasn't fond of them the first time I prepared this. I also omitted the suet because I feel it just adds more fat to the recipe. If you want to make this exactly like Gary's recipe, add 6 chopped ready to eat prunes and 4 oz. shredded suet when adding the apples and egg to the minced pork.

- Preheat the oven to 350°F.
- Cut apples into 1/2" pieces and set aside.
- Melt butter in frying pan and cook onions gently for a few minutes until transparent.
- Add nutmeg and cinnamon to the onions and cook for a minute or so.
- Remove from heat and add sage; set aside to cool.
- Add the apple pieces, egg and ground pork to the onion mixture once it has cooled; season with salt and pepper and mix well.
- Roll mixture into 12 meatballs.
- In a clean frying pan, brown the meatballs in 1 tablespoon of butter making sure to turn carefully so they do not break apart.
- Put the browned meatballs into an ovenproof casserole dish.
- Pour the white wine into a saucepan and boil until it reduces down to about 1/2.
- Stir in the chicken stock; pour liquid over meatballs.
- Place in the oven uncovered for 45 minutes.
- Remove meatballs carefully from casserole dish and keep warm.
- Skim any fat off of the juices left in the pan.
- Optional: Use the cornflour (cornstarch) mixed with a bit of cold water and whisk into the juices for a thicker sauce.
- Serve meatballs with the sauce drizzled over top.

- In large bowl, whisk together egg and milk. Tear bread slices into bite sized pieces and add to bowl. Stir to coat and let sit 10 minutes. Add ground chuck, garlic, pepper, salt, and cayenne. Make meatballs (I came out with 28).
- Place on a cookie sheet sprayed with cooking spray. Cook at 325 F for about 10 minutes. Turn once. Cook an additional 10 minutes. Drain.
- Combine every other ingredient except green onions. Add to a pan and cook until thickened stirring constantly. Pour over meatballs. Add chopped green onions.
- The original recipe called for frying the meatballs, but I like baking them instead and draining off the grease. Use whichever method you prefer.

- 1. Preheat oven to 425. Peel and dice the apples. Dice one small for the meat mixture and one medium for the sauce.
- 2. In a medium bowl mix together the ground chicken, small apples, egg, onion, and all the spices.
- 3. Slowly add in the flour. I did mine in 3 parts to be sure it all got incorporated. Set aside.
- 4. In a small bowl whisk together the can of soup, yogurt, applesauce, 1/2 soup can of water, cinnamon, and seasoning salt.
- 5. Fold in the remaining diced apples.
- 6. Using an 9x9 pan, pour enough of the sauce mixture to cover the bottom of the pan.
- 7. Roll the meat mixture into 12 balls and roll them in the breadcrumbs. Place them in the pan (it's a tight fit!)
- 8. Bake uncovered for 10 minutes. This helps the meatballs get a crisp outer layer and not be soggy.
- 9. Lower oven temp to 400. Pour remaining sauce on top of meatballs and spread evenly.
- 10. Bake uncovered at 400 for about 15 minutes or until a meat thermometer inserted in the center of a meatball reads 165.
