Ingredients

  • 1 whole chicken, about 3-4 lbs
  • 1 cup apple juice
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 apples, cored and sliced into rings
  • 1 tbsp brown sugar
  • 1 tbsp butter

Marinade

To make the marinade, mix together apple juice, olive oil, honey, Dijon mustard, chopped rosemary, chopped thyme, salt, and black pepper in a bowl. Make sure the mixture is well combined. Place the whole chicken in a ziplock bag and pour the marinade over it. Seal the bag and make sure the marinade is well distributed all over the chicken. Place the bag in the fridge and marinate for at least 3 hours or overnight.

Cooking the Chicken

Preheat your oven to 375°F (190°C). Remove the chicken from the ziplock bag and place it in a roasting pan. Discard the marinade. Roast the chicken for about 1 hour and 30 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) when measured with a meat thermometer.

Grilled Apple Rings

While the chicken is roasting, you can prepare the grilled apple rings. Heat a grill pan over medium-high heat. Melt butter in a small pan, and brush the apple rings with melted butter. Sprinkle apple rings with brown sugar. Grill apple rings for about 2-3 minutes on each side, or until they are browned and slightly caramelized.

Serving

Once the chicken is done, remove it from the oven and let it rest for 10-15 minutes. This will allow the juices to redistribute and the chicken to be more tender. After resting, carve the chicken into pieces and serve it with the grilled apple rings on top.
In conclusion

Roast chicken is a classic dish for any dinner table, but adding a unique touch of apple marination can enhance the flavor and make it even more mouth-watering. Apple marinated roast chicken with grilled apple rings is a delicious and hearty meal that can be served with a variety of sides, from roasted vegetables to mashed potatoes. In this article, we will provide valuable tips on how to make the perfect apple marinated roast chicken with grilled apple rings recipe.

Choosing the Right Chicken

One of the most important steps in making apple marinated roast chicken is choosing the right chicken. It's important to select a fresh, high-quality chicken that is hormone and antibiotic-free, if possible. The size of the chicken should also be taken into consideration. For this recipe, a medium-sized chicken is preferred as it is easier to handle and cooks more evenly.

Preparing the Marinade

The apple marinade is the key ingredient that gives the chicken its unique flavor. You can create your own marinade by mixing apple cider vinegar, honey, olive oil, garlic, salt, pepper, and apple juice concentrate. Another option is to use store-bought apple marinade, which can save time and effort. Whichever option you choose, it's important to marinade the chicken for at least 2 hours or overnight to allow the flavors to seep into the meat.

Prepping the Chicken

Before roasting the chicken, it's important to prepare it properly. Take the chicken out of the marinade and pat it dry with paper towels. This will help the skin to crisp up during cooking. Spread softened butter underneath the skin and sprinkle salt, pepper, and dried herbs on top. This will not only add flavor, but also help to keep the meat moist during cooking.

Grilling the Apple Slices

Grilled apple rings are a delicious and healthy addition to this recipe. To make them, slice apples into 1/2 inch thickness and remove the core. Brush the apple slices with olive oil and grill them on a preheated grill pan or outdoor grill for 2-3 minutes on each side until lightly browned with grill marks. Make sure not to overcook the apple rings as they can become mushy.

The Roasting Process

Roasting the chicken is the final and most important step in making apple marinated roast chicken with grilled apple rings. Preheat the oven to 375°F and place the chicken on a roasting pan. Roast the chicken for 1 hour and 10 minutes or until the internal temperature reaches 165°F. Baste the chicken with the remaining marinade every 20 minutes to keep it moist and enhance the flavor. Let the chicken rest for 10 minutes before carving and serving.

Serving Suggestions

Apple marinated roast chicken with grilled apple rings can be served with a variety of sides. Some great options include roasted vegetables, mashed potatoes, or a side salad with a vinaigrette dressing. To bring out the sweetness of the apple marinade, consider serving a glass of apple cider alongside the meal.

Clean Up Tips

Cleaning up after cooking can be a tedious task, but there are some tips that can make it easier. First, line the roasting pan with aluminum foil to make cleaning up easier. Once the chicken is removed from the roasting pan, let the pan cool down and then pour a mixture of warm water and dish soap into the pan. Let the mixture sit for a few minutes and then scrub gently with a brush. For tough stains, add a sprinkle of baking soda and scrub until the stain is removed.

Conclusion

Apple marinated roast chicken with grilled apple rings is a dish that is sure to impress everyone at the dinner table. By following these valuable tips, you can make a delicious and hearty meal that is perfect for any occasion. Remember to choose a high-quality chicken, prepare the marinade properly, grill the apple slices to perfection, roast the chicken for the right amount of time, and select appropriate side dishes. With these tips, your apple marinated roast chicken with grilled apple rings recipe is sure to be a crowd-pleaser.
