Apple Kuchen With Honey and Ginger image

More coffeecake than dessert, this moist apple cake is pure comfort, with candied ginger, a touch of honey in the batter and a honey glaze. Time 1h30m

Yield 8 to 10 servings

Number Of Ingredients 14

1/2 cup/127 grams unsalted butter (1 stick), plus butter for greasing pan
1 1/2 cups/200 grams all-purpose flour, plus flour for dusting pan
1/2 cup/100 grams sugar, plus 1 tablespoon for sprinkling apples
1/4 cup/85 grams raw honey
3 eggs
1 tablespoon grated ginger
2 ounces/56 grams candied ginger, diced
1/2 teaspoon grated lemon zest
1/2 teaspoon salt
2 teaspoons baking powder
3 medium apples, peeled and quartered
1/4 cup/50 grams sugar
1/4 cup/85 grams honey
3 tablespoons lemon juice

Steps:

  • Make the cake: Heat oven to 325 degrees and position a rack in the middle of the oven. Butter and flour a 9-inch cake pan, preferably a springform pan.
  • With an electric mixer, cream the butter and sugar, then add honey and whip for 1 minute, until fluffy. Beat in eggs one at a time, until well incorporated, then whip for 2 minutes. Stir in grated ginger, candied ginger and lemon zest.
  • Whisk together flour, salt and baking powder and add to bowl, mixing briefly to make a stiff batter. Pour batter into prepared pan.
  • With a paring knife, cut slits in each of the apple quarters on the rounded, outer part of the wedge, slicing partway through at 1/8-inch intervals. Arrange apple quarters slit-side-up over the batter. Sprinkle surface with 1 tablespoon sugar.
  • Place cake pan on a baking sheet and put on middle rack of oven. Bake for about 45 minutes, or until an inserted skewer emerges dry. If cake is browning too rapidly, tent with foil until done. Cool on a rack, then carefully unmold.
  • Make the glaze: Put sugar, honey and lemon juice in a small saucepan over medium heat, stirring until sugar is dissolved and mixture bubbles, about 2 minutes. Paint surface of cake and apples with warm glaze. Cake will keep for several days, tightly wrapped, at room temperature.

When it comes to baking, nothing beats the classic apple kuchen or old fashioned apple cake recipe. The delicious and moist texture of this cake, complete with a sweet cinnamon and apple filling, makes it a favourite among dessert lovers. This sweet treat is perfect for chilly autumn afternoons when the versatility of apples is at its peak.

Origin

Kuchen, a German word for cake, was introduced to America by German immigrants in the 1800s. The cake became a staple in the Midwest, where many German families resided. The Old Fashioned Apple Cake recipe has been passed down through generations and perfected over time to become a classic American dessert.

Ingredients

The ingredients for an apple kuchen are simple and readily available at any grocery store. One requires all-purpose flour, baking powder, salt, eggs, sugar, milk, butter and apples. The recipe may call for additional spices such as cinnamon, depending on the desired flavour.
Flour
All-purpose flour is a common ingredient in cake recipes. It is a versatile kind of flour that works well with other ingredients, making it a go-to flour for bakers.
Apples
When selecting apples for kuchen, it is best to choose apples that are firm, crisp and tart. Granny Smith apples are an excellent choice because they maintain their shape when baked and add a tangy flavour to the cake.
Sugar
Granulated sugar is a common ingredient in cakes, and it gives the cake its sweetness. Use white granulated sugar or alternatively, use brown sugar, which creates a deeper flavour profile in the cake.
Butter
Butter is an essential ingredient in baking a cake. It adds a rich, creamy flavour and lifts the texture of the cake. It also adds moisture to the cake, giving it a tender crumb.

Method

The method for creating a traditional apple kuchen recipe is easy to follow and immensely gratifying.
Preparing the Apples
Firstly, peel and core the apples, then slice them thinly. Arrange them in a single layer on top of the cake batter.
Making the Batter
To prepare the batter, cream butter and sugar until light and fluff. Then, add eggs, one at a time, and mix well after each addition. In another bowl, sift flour, baking powder and salt, then add them to the butter mixture. Mix everything together, then add milk and mix again until thoroughly combined.
Assembling the Cake
To assemble the cake, pour the batter into a cake pan, then lay the prepared apples on top. Sprinkle an even layer of cinnamon and sugar over the apples. Place the cake in the preheated oven and bake until golden brown.

Variations

There are variations of this dessert that reflect regional differences and individual tastes. Some people add nuts, dried fruits or cream cheese to the cake batter. Others may substitute apples with other seasonal fruits such as berries or pears.
Cream Cheese Apple Kuchen
The cream cheese apple kuchen is a popular variation of this cake recipe. To make this variation, follow the recipe for the traditional apple kuchen, but add cream cheese to the batter. The cream cheese adds richness and creaminess, making the cake denser and moist.
Dutch Apple Kuchen
The Dutch apple kuchen is another variation of the traditional apple cake recipe. To make this variation, create a crumb topping by mixing flour, sugar and butter until crumbly. The crumb topping is then sprinkled over the apples and cake batter before baking. This gives the cake a crunchy texture that contrasts with the tender apple filling in the cake.

Conclusion

In conclusion, the apple kuchen, also known as an old fashioned apple cake, is a classic American dessert that is popular among bakers and dessert lovers alike. It’s easy to prepare, and the variations to the recipe are practically endless. Apples being in season during the fall, this dessert is the perfect addition to your autumn dinner party or afternoon tea. It is so delicious that you may find yourself making it more than once.
Apple kuchen, an old-fashioned apple cake recipe, is a classic and versatile dessert that is perfect for any occasion. Whether you are hosting a formal dinner party, a potluck with friends, or even just looking to indulge in a sweet treat on a lazy afternoon, apple kuchen is the perfect choice. But how do you ensure that your apple kuchen is not just delicious, but also memorable? Here are some valuable tips to consider when making apple kuchen: 1. Choosing the Right Apples The first step in making great apple kuchen is picking the right apples. Apples that are too tart or too sweet can ruin the balance of flavors in your cake. When selecting apples, choose ones that are firm and crisp. Some of the best apples for baking include Granny Smith, Honeycrisp, Braeburn, and Jonagold. Granny Smith apples are tart and tangy, which makes them perfect for use in baking. Honeycrisp apples are sweet and juicy, making them perfect for pairing with cinnamon and other spices. Braeburn apples have a slightly tart flavor, and are firm enough to hold their shape when baked. Jonagold apples are a cross between Golden Delicious and Jonathan apples, which makes them a great all-purpose apple for use in pies, cakes, and other baked goods. 2. Preparing the Apples Once you have chosen the right apples for your apple kuchen, the next step is to properly prepare them. When preparing apples, it is important to peel, core, and slice them uniformly. This ensures that the apples will cook evenly and that your cake will have a consistent texture. To peel apples, use a paring knife or an apple peeler. To core and slice apples, use an apple corer or a sharp knife. Once the apples are sliced, toss them in a mixture of sugar and spices, such as cinnamon or nutmeg. This will help to bring out the natural sweetness of the apples and add flavor to the cake. 3. Mixing the Batter The batter is the heart of any cake, and the same is true for apple kuchen. When mixing the batter, it is important to follow the recipe closely and not overmix the ingredients. Overmixing can cause the cake to become dense and tough. To ensure that your batter is light and fluffy, cream the butter and sugar together until they are well combined. Next, add the eggs one at a time, beating well after each addition. Finally, alternate adding the flour mixture and the milk, mixing until just combined. 4. Adding the Apples Once the batter is mixed, the next step is to add the apples. It is important to gently fold in the apples, being careful not to break them up or overmix the batter. Overmixing can cause the apples to break down and release moisture, which can make the cake soggy. To fold in the apples, use a spatula to gently scoop the apples into the batter, then fold the batter over the apples. Repeat this process until all of the apples are evenly distributed throughout the batter. 5. Baking the Cake When baking apple kuchen, it is important to pay close attention to the baking time and temperature. Overbaking can cause the cake to dry out, while underbaking can cause it to be raw in the center. To ensure that your cake is evenly baked, preheat the oven to the correct temperature specified in the recipe. Then, pour the batter into a greased and floured cake pan, smoothing it out with a spatula. Bake the cake until a toothpick inserted into the center comes out clean, which is typically about 45 to 60 minutes. 6. Serving the Cake Once your apple kuchen is baked, it is important to let it cool before serving. This allows the flavors to meld together and the cake to set. To serve the cake, cut it into wedges using a sharp knife. Serve it with a dollop of whipped cream or a scoop of vanilla ice cream, if desired. For an extra touch of sweetness, you can also sprinkle a dusting of powdered sugar over the top of the cake. Conclusion: Whether you are an experienced baker or just starting out, making apple kuchen is a fun and delicious way to showcase your skills in the kitchen. By following these valuable tips, you can ensure that your apple kuchen turns out perfectly every time, leaving your guests impressed and satisfied.
