1 medium onions, chopped
1 tart green apple, cored, pealed and chopped into cubes
1 package sauerkraut
1 tablespoon caraway seeds
1 cup chicken stock

Steps:

  • Preheat oven to 425 degrees. In a large oven-proof skillet over medium heat, saute kielbasa until browned, about 4 minutes on each side. Remove kielbasa to a plate and keep warm. In the same pan, saute the onion and the apple for 1 minute. Drain and rinse the sauerkraut and add it to the apples and onion in the skillet. Add the chicken stock and caraway seeds to the pan and stir. Return the kielbasa to the skillet and cover. Put covered skillet in hot oven and cook for 15 to 20 minutes.

1 large Granny Smith apple
1 3/4 cups reduced-sodium chicken broth (14 fluid ounces)

Steps:

  • Lightly score each piece of sausage in several places with a sharp paring knife. Heat 1 tablespoon oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then brown half of sausage, turning occasionally, until golden, about 4 minutes. Transfer to a bowl and cover to keep warm. Pour off fat from skillet and wipe skillet clean. Add remaining tablespoon oil to skillet and brown remaining sausage in same manner, transferring to bowl as cooked.

This is a super simple recipe I copied from the Whole Foods Market website. The grilled kielbasa have such a wonderful flavor. You can even use turkey kielbasa to save on calories and fat. I use more apple just because my kids like the way they taste off the grill. It's okay to let the ingredients sit in the lemon juice mixture for a few minutes. I was concerned about that at first, but it does not overpower or alter the flavor of the dish. I also don't use the skewers. I use a grilling basket - it's much faster!! I serve with couscous.

1 lb kielbasa
1 large onion
1 red apples, such as Braeburn or 1 gala apples, cored

Steps:

  • If using bamboo skewers, soak them in water for 30 minutes before grilling.

3 medium fuji or jonathan apples, cored and cut into 1/2-inch cubes (you want a fine-grained apple in order to avoid the apples getting too mushy when cooked)
8 ounces cooked kielbasa, halved lengthwise and sliced 1/4-inch thick
1 medium green onion, thinly sliced

Steps:

  • Preheat oven to 350 degrees F. Coat a 2-quart baking dish or casserole with nonstick cooking spray; set aside.
  • Cook pasta according to package directions in a large saucepan. Drain and return to saucepan; set aside.

1 link of polksa kielbasa, sliced into 1 inch round pieces (or you can use Beef Kielbasa)
5 slices fully cooked bacon
1/2 teaspoon brown sugar
1/4 cup water
1 cup maple syrup
2 1/2 cups apple cider or 2 1/2 cups juice
1 -2 tablespoon olive oil or 1 -2 tablespoon vegetable oil

Steps:

  • Heat saucepan on stove on medium heat. In a bowl, combine in this order: syrup, brown sugar, apple cider, and water. Whisk until smooth consistency and pour into saucepan for 5-7 minutes, stirring often. (Be sure not to bring mixture to a boil). In a medium skillet, bring to medium-high heat and add oil. Next, add slices of kielbasa and fry until just golden brown and hot. Drain any excess oil. Remove saucepan with syrup mixture and gradually pour over kielbasa in skillet being careful not to splatter. Simmer for about 8 minutes or until syrup adds a nice "glaze." Cooking too long can burn the syrup and cause a poor glaze. Toss in crumbled pieces of bacon and remove from heat. Let sit for 1-2 minutes before serving. Serve with your favorite rice or sweet potatoes and a vegetable.
