4 tablespoons light mayonnaise
2 tablespoons mustard (we used dejong)
2 tablespoons liquid honey
8 slices multi-grain bread (we used 100% whole wheat)
1 cup cheddar cheese, shredded (about 4 ounces)
8 slices ham or 8 slices turkey
1 large apple, cored and thinly sliced

Steps:

  • In a small bowl, combine mayonnaise, mustard and honey; spread on one side of each slice of bread. Layer cheese on 4 bread slices; top each with 2 slices of ham, apple slices and remaining bread.
  • Cut sandwiches in half. Use any apple slices left to garnish.
  • (If to be used in a lunch box, add apple slices to mayonnaise mixture and coat so that they won't turn brown. If needed use a little butter or margarine on bread slices.).

8 slices whole grain bread
1/4 cup honey mustard
2 crisp apples, thinly sliced (I like Braeburn or Fuji or Gala)
8 ounces mild cheddar cheese, thinly sliced
cooking spray

Steps:

  • Preheat panini press on medium heat(or use 2 heavy skillets-one to put on top of the panini while cooking to press it).
  • Lightly spread honey mustard evenly over each slice of bread.
  • Layer apple slices and cheese over 4 slices of bread, using about ½ apple and 2 ounces of cheese for each sandwich. Top each with remaining bread slices. Lightly coat panini press with cooking spray(or coat skillet.
  • Grill each sandwich for 3 to 5 minutes or until cheese has melted and bread has toasted.
  • Remove from pan and allow to cool slightly before serving. Enjoy!

This was adapted from a recipe card picked up in a grocery store. Delicious - great for a cold day, with some soup! Feel free to change up the bread to what you prefer - the original called for marble rye, but I put in what we usually use. You can use other types of ham and regular cheddar, but the flavor of the smoked versions really contrast wonderfully with the sweetness of the onions and apple, so I would recommend trying them, if possible. I'm also putting a range on the meat, because we prefer smaller meat portions (the 1/4 lb), but I know a lot of people who like more meat, so you could easily use up to 1/2 lb, if desired. The original directions called for using a panini grill, but I don't have one, so I'm enclosing both methods.

1/4 large sweet onion, cut into thin slices
2 teaspoons maple syrup
4 slices whole wheat bread
1 tablespoon mayonnaise
1/2 large gala apples, cut into 4 slices
