Bourbon Apple Cider and Honey Glazed Pork Chops image

I put this glaze on pork chops and stuff them with an apple cranberry stuffing. You can double it and make it a ham glaze also.

2 cups apple cider
½ cup honey
¼ cup apple cider vinegar
2 tablespoons brown sugar
⅓ cup whiskey (such as Jack Daniel's®)
3 tablespoons whiskey (such as Jack Daniel's®)
4 thick center-cut pork chops

Steps:

  • Stir apple cider, honey, cider vinegar, and brown sugar in a saucepan over medium heat. Bring to a simmer and reduce heat to low, stirring often, until the mixture reduces to 2/3 cup, about 20 minutes.
  • Simmer 1/3 cup whiskey in a separate small saucepan over medium-low heat until steam no longer smells of alcohol, about 10 minutes; stir into the apple cider mixture. Reduce this mixture to 1/2 cup, forming an apple cider glaze and cool.
  • Stir 3 tablespoons whiskey into apple cider glaze.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place pork chops into a baking dish; brush with the apple cider glaze.
  • Bake chops in the preheated oven, basting them often with glaze, until tender, about 1 hour. If desired, bring any remaining glaze to a boil in a saucepan and drizzle over chops to serve.

2 tablespoons canola oil
1 cup apple cider or apple juice
2 tablespoons brown sugar, divided
1 teaspoon salt
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon dried thyme
1 tablespoon cornstarch
1 tablespoon cold water
2 large tart apples, sliced
1/2 cup sliced onion
2 tablespoons butter

Steps:

  • In a large skillet, brown pork chops in oil. Add the cider, 1 tablespoon brown sugar, salt, rosemary and thyme. Cover and cook for 7-8 minutes or until a thermometer reads 160°:. Combine the cornstarch and water until smooth; add to the skillet. 8 cups chicken stock
6 ounces frozen concentrated Granny Smith apple juice
1/4 cup tightly packed dark brown sugar
8 whole black peppercorns
Salt
1 1/2 cups maple syrup
1/4 cup prepared horseradish, drained
2 tablespoons ancho chile powder
1/2 cup ancho chile powder
1/2 cup pasilla chile powder
1/2 cup chopped garlic
1 center cut pork loin (9 bones)
2 tablespoons unsalted butter
1/2 cup coarsely chopped red onion
1 tablespoon minced jalapeno
2 tablespoons finely diced ginger
2 medium oranges, zest removed and finely sliced, flesh cut into segments
2 cups fresh orange juice
1/2 cup red wine vinegar
1/2 cup light brown sugar
2 tablespoons honey
6 medium Granny Smith apples, peeled, cored, halved and thinly sliced
2 tablespoons chopped cilantro
2 tablespoons finely diced red pepper
Salt and freshly ground pepper

Steps:

  • Combine the stock, apple juice, sugar and peppercorns in a medium saucepan over high heat and reduce to 3 cups. Season to taste with salt and strain through a fine strainer.Mix all ingredients until well combined.
  • Preheat oven to 400 degrees F. In a small bowl, combine the chile powders and garlic.
  • Season the pork loin to taste with salt and pepper and rub all surfaces with the chile mixture. In a large roasting pan, roast the loin until medium rare, about 40 minutes.
  • When cool enough to handle, cut between the bones into 8 chops. In a heavy ridged grill pan, sear the chops 3 minutes on each side until grill marked. Place on a serving platter and brush with maple glaze. Serve with sauce and chutney on the side.
  • In a large saucepan over medium heat, melt the butter and saute the onion and jalapeno until the onion is translucent.
  • Add the ginger, orange zest, orange juice, vinegar, brown sugar and honey and cook until the sauce is reduced by half and has a glazed appearance. Reduce the heat to low, add two thirds of the apple slices, and cook until the fruit is just tender.
  • Turn off the heat and gently fold in the remaining apples and the orange segments. Pour the chutney into a bowl and allow to cool to room temperature.
  • Mix in the cilantro, red bell pepper and salt and pepper to taste.

1 medium Granny Smith apple, peeled and diced
1 celery rib, diced
1/3 cup raisins
2-1/2 cups apple juice, divided

1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper

  • Preheat oven to 350°. Place first four ingredients in a large bowl. Add 3/4 cup juice and melted butter; toss until combined., Cut a pocket in each pork chop by slicing horizontally to the bone. This is one of my favorite recipes to show off to friends. Stuffed with leeks and bacon with an apple Dijon mustard glaze. It is a very moist and tasty pork chop. I like to serve it with Roasted Red Potatoes with fresh rosemary and sea salt, and sauteed fresh green beans.

6 slices bacon, chopped
1 cup sliced leek
1/4 cup dry white wine
1/2 teaspoon thyme
1 dash salt
1 dash pepper

  • For stuffing, in a large skillet, cook bacon over medium high heat until crisp. Remove with a slotted spoon and rain on paper towels. Reserve 2 teaspoons drippings in skillet. Cook leeks in reserved drippings for 3 to 4 minutes or until almost tender. Add the wine, thyme, salt, and pepper. Cook and stir until liquid is evaporated. Remove from heat. Stir in cooked bacon.
  • For glaze, stir together the apple jelly and mustard; set aside. Trim fat from chops. Make a pocket in each chop by cutting from fat side almost to, but not through, the opposite side. Spoon stuffing into pockets with chops. If necessary, secure with wooden toothpicks. Sprinkle with additional salt and pepper.

3 tablespoons bread crumbs
1 (4 ounce) link Italian sausage, sliced
salt and pepper to taste
1 pinch steak seasoning
1 tablespoon vegetable oil
½ onion, sliced
8 ounces sliced fresh mushrooms
2 cups white grape juice
1 apple, cored and sliced

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Slice a pocket into the side of each pork chop. Stuff 1 tablespoon of bread crumbs into each pocket. Stuff a few slices of Italian sausage into each pocket. Season the outside of the chops with salt, pepper and steak seasoning.
  • Heat the oil in an oven-proof skillet over medium-high heat. Fry the pork chops in the pan until light brown. Remove chops from the pan and keep warm on a plate. This is a delicious, very easy way to bake pork chops. I've found that some people like to also eat the apples that are cooked along with it, some prefer the pork chops and sauce without the apples. But don't leave them out because they are part of what create the resulting sauce, which is absolutely fantastic!!! The recipe is an old one from French's Worcestershire Sauce

4 pork chops, boneless and 1 1/2 inches in thickness
olive oil flavored cooking spray
garlic salt
course grind black pepper
ground allspice
ground cinnamon
1/2 cup honey
1 cup apple juice
2 teaspoons Worcestershire sauce
water
cornstarch
2 granny smith apples, thinly sliced

Steps:

  • Spray skillet with olive oil cooking spray.
  • Over medium-high heat, saute garlic salt for 2 minutes
  • Add pork chops. Brown on each side.
  • Sprinkle pepper, allspice and cinnamon evenly over chops. *Use as much, or little as your little heart desires.
  • Add honey, apple juice and Worcestershire sauce. reduce heat and simmer 30-45 minutes until chops are tender and brown. Save drippings.
  • Transfer chops to serving platter and keep warm.
  • In small mixing bowl, combine cornstarch and water. Whisk into skillet over med-high heat until drippings thicken into a glaze.

For the pork chops:
1 tsp of Olive Oil
1 Clove of Minced Garlic
2 Bay Leaves
Leaves from 3 Springs of Thyme
3 tbsp of Balsamic Vinegar
1 Cup of Coke
4 Pork Chops (about 150g each)
For apple & potato mash:
500 g of Potato (scrubbed and washed)
2 Granny Smith Apples (peeled & cores removed)
1/4 Cup of Milk
1/4 Cup of Thickened Cream
50 g of Softened Butter
3 Garlic Cloves
1 tbsp of Cider Vinegar
Olive Oil
Salt & Black Pepper

Steps:

  • 1. Preheat oven to 180C. Place garlic cloves on a piece of aluminium foil. Season with salt, pepper and a drizzle of olive oil. 2. Fold the foil into a parcel and roast the garlic for about 30 minutes. When the garlic is cooked, allow it to cool and remove the skin. 3. In the meantime, peel and core the apples. Put potatoes and apples in a large pot. Cover them with cold water and add a generous pinch of salt. Bring the water to a boil and cook until potatoes are tender and easily pierced with a skewer. This takes about 20 minutes or more depending on the size of the potatoes. Try choosing potatoes that are roughly the same size. This allows them to cook evenly. The apples may cook faster than the potatoes. Just keep an eye and transfer them to a bowl with a slotted spoon when they are soft. 4. When potatoes are ready, drain and return them to the pot under low heat. Cook while gently shaking the pot for about 5 minutes to dry out as much water from the potatoes as possible. Mash potatoes and apples through a ricer. 5. Combine milk and thickened cream in a bowl. Warm them up in the microwave and add into the mash, followed by butter, roasted garlic, cider vinegar, salt and pepper to taste. Mix well and leave aside. You can heat it up again for later use. 6. For pork chops, heat oil in a saucepan and lightly sauté thyme, garlic and bay leaves for 1 minute till aromatic. Pour in balsamic vinegar, coke and bring it to a boil. Lower the heat to allow it to simmer for about another 10 minutes until the sauce is reduced. 7. Season pork chops with salt and pepper on both sides, brushing them with coke glaze. Add a little oil and heat the grill pan over medium heat. Cook pork chops until it registers 145F on a food thermometer, about 3 to 5 minutes per side depending on the thickness of the chops. Allow the meat to rest for 3 minutes. 8. Brush remaining glaze onto the pork chops and serve immediately with the mash!

4 loin pork chops - 1 inch thick
2 slices raisin bread - 1 cup - cut into cubes
1/2 cup chopped apple
1/2 cup chopped pecans
1/4 teaspoon grated orange peel
1/2 teaspoon salt
1/8 teaspoon cinnamon
Dash pepper
1/4 cup orange juice
2 tablespoons sugar
1 tablespoon cornstarch
1 cup apple juice
1 tablespoons margarine or butter

Steps:

  • Preheat oven to 350°F. Cut deep horizontal pocket in each pork chop.
  • In medium bowl - combine next 8 ingredients. Mix well. Stuff each chop with about 1/4 of the stuffing mixture. Place chops in ungreased 13x9 inch pan.
  • Bake for 30 minutes.
  • Meanwhile - in small saucepan combine sugar and cornstarch - stir in apple juice. Cook over medium-low heat till mixture boils and thickens - stirring frequently. Remove from heat - stir in margarine. Pour evenly over chops -Bake an additional 30 to 35 minutes or till pork in tender and no longer pink.

6 Thick Cut, Bone-In Pork chops
BRINE
1 tablespoon crushed hot red pepper flakes
2 tablespoons boiling water
2 cups Apple-Moonshine, or substitute apple cider
2 cups water
1⁄2 cup kosher salt
1⁄2 cup honey
6 garlic cloves, minced
SEASONING
2 tablespoons chili powder
1 tablespoon paprika
1 tablespoon firmly packed dark brown sugar
3⁄4 teaspoon ground mustard
1⁄2 teaspoon garlic salt
1⁄2 teaspoon black pepper
1⁄2 teaspoon sea salt
1⁄4 teaspoon Old Bay Seasoning
1⁄4 cup vegetable oil, for rubbing.
GLAZE
1⁄2 cup apple jelly
1 tablespoon fresh lemon juice
1 small Granny Smith apple, peeled, cored and grated
GARNISH
1⁄4 cup finely chopped chives

Steps:

  • Place the pepper flakes in a small bowl and pour boiling water over them, letting them sit and re-hydrate. Combine the pepper flake with all the remaining brine ingredients. Blend using an immersion/stick blender, or blend in a regular blender.
  • Place the chops in an extra- large re-seal able plastic bag (I used a 2 gallon size). Add brine to bag and squeeze out any excess air. and zip closed. Roll the bag to evenly coat all of the meat in the brine. Place bag in the refrigerator 3 or 4 hours. I flipped the bag over a couple of times when I thought about it.
  • Combine all of the seasoning ingredients (EXCEPT the oil) in a jar with a lid and shake to combine. Set seasoning aside until ready to grill.
  • Combine ingredients for glaze in a jar with a lid, set aside.
  • TO GRILL
  • Preheat one grate of a well- oiled charcoal or gas grill to high and another to low.
  • Remove the chops from the brine, letting any excess brine remain in the bag.
  • Sprinkle the seasoning blend evenly on all sides of the chops. Coat your hands with oil and rub the seasoning over all sides of the chops.
  • It is preferable that the chops be moved to a clean area of the grate when flipped during the initial charring. Depending on the grill size, they may need to be cooked in batches to ensure there is a clean portion of the grill to flip to. Place the chops on the high grate, and keeping the lid open, do not move the chops until they are well marked and lightly charred, about 3 minutes. Flip, still over high, with the lid open, and repeat on the second side, grilling for about 3 minutes. Move the chops to the low grate, and close the lid. Open the lid every few minutes, flipping, jockeying, and stacking throughout the remaining cooking time. Cook about 8 minutes for medium, about 10 minutes for medium-well, and about 12 minutes for well-done. The chops will continue to cook as they are glazed. Give the glaze a quick shake to reincorporate any ingredients that may have settled. Brush with the glaze on the first side, flip, and brush on the second side. Remove the chops from the heat and let rest for about 5 minutes.
