salt and ground black pepper to taste
1 tablespoon extra-virgin olive oil
½ onion, sliced into rings
1 ⅓ cups apple cider
1 tablespoon sambal oelek
1 teaspoon chopped fresh chives

Steps:

  • Pat chicken thighs dry with a paper towel and season with salt and pepper.

2 tablespoons grated fresh ginger
1 large egg, lightly whisked
1/4 cup dry breadcrumbs, finely ground
1 teaspoon dried sage
1/2 teaspoon fresh rosemary, finely chopped
1 teaspoon kosher or sea salt
1 teaspoon freshly ground black pepper
Vegetable oil, for frying
2 tablespoons olive oil, plus more as needed
8 boneless, skinless chicken thighs (about 2 pounds)
Kosher salt or sea salt and freshly ground black pepper
1 yellow onion, thinly sliced
4 sprigs fresh thyme
1 cup apple cider
1 tablespoon apple cider vinegar
