Time 35m

Yield 30 fritters

Number Of Ingredients 13

Vegetable oil, for deep-frying
2 cups all-purpose flour
1/2 cup plus 3 tablespoons granulated sugar
2 1/4 teaspoons baking powder
2 teaspoons ground cinnamon
1 1/4 teaspoons salt
2 large eggs
3/4 cup whole milk
2 tablespoons melted butter
2 teaspoons vanilla extract
2 Granny Smith apples, cored and cut into small dice
Powdered sugar, for dusting, optional

Steps:

  • Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
  • In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla. Gently fold the dry and wet ingredients together until just combined (do not over-mix). Fold in the apples, adding enough to make a very chunky batter.
  • Drop heaping tablespoons of batter into the hot oil, 6 to 8 at a time. Fry until golden brown, 4 to 6 minutes. Remove and drain on paper towels. Dust generously with powdered sugar and serve warm with sausage and bacon!

CHEF JOHN'S APPLE FRITTERS

Chef John's Apple Fritters image

I didn't think I liked apple fritters, but turns out I just don't like chunks of almost raw apple, surrounded by a doughnut. Maybe I've just been going to the wrong shops, but I've never enjoyed the texture, and always wanted to try them with cooked apples.

Categories     Bread     Quick Bread Recipes

Time 35m

Yield 8

Number Of Ingredients 16

1 tablespoon butter
2 large Granny Smith apples - peeled, cored and cut into 1/4-inch dice
1 tablespoon white sugar
1 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon kosher salt
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
⅛ teaspoon ground nutmeg
1 large egg
¼ cup white sugar
1 tablespoon melted butter
½ cup sparkling apple cider
2 cups vegetable oil for frying
½ cup confectioners' sugar, or more as needed
1 tablespoon sparkling apple cider, or as needed to make glaze

Steps:

  • Melt butter over medium-high heat and cook until it turns golden brown, 2 to 3 minutes. Add apples and cook over medium-high heat until apples just begin to soften around the edges, 3 to 4 minutes. Sprinkle in 1 tablespoon sugar and continue cooking another 2 minutes. Remove from heat. Drain in a strainer; let cool to room temperature.
  • Whisk flour, baking powder, salt, cinnamon, ginger, and nutmeg together in a mixing bowl until well combined.
  • Whisk egg, 1/4 cup sugar, and melted butter together in a separate mixing bowl. Add cooled apple pieces and sparkling apple cider; add the flour mixture. Stir just until flour is incorporated.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Spoon about 2 tablespoons batter per fritter, into hot oil, slightly flattening them out. Cook in batches. Fry on one side until small bubbles appear on the surface, about 2 minutes. Carefully flip fritters over and fry the other side until richly browned, about 2 more minutes.
  • Transfer with a slotted spoon to a paper-towel-lined plate to drain grease. Cool slightly before glazing.
  • Whisk powdered sugar and cinnamon in a mixing bowl. Add enough apple cider, 1 teaspoon at a time, to form a smooth glaze that is just runny enough to drizzle over fritters.

GLAZED APPLE FRITTERS

Glazed Apple Fritters image

Thanks to a yeasted dough and a blend of flours, these glazed apple fritters strike the perfect balance between crisp and doughy, and are a decadent way to start the day or end a meal. Giving diced Granny Smith apples a quick sauté in butter before incorporating into the dough benefits the recipe in two ways: it avoids extra moisture from seeping into the dough when frying (which causes gumminess), and it ensures a fritter with a concentrated apple flavor in every bite.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 4h15m

Yield Makes about 20

Number Of Ingredients 20

1 packet active dry yeast or 0.6 ounces cake yeast
2/3 cup whole milk
2 1/4 cups pastry flour, plus more for dusting
4 extra-large egg yolks
1/2 cup sugar
1/3 cup sparkling cider
4 tablespoons unsalted butter, melted
1 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1 tablespoon pure vanilla extract
1 cup plus 2 tablespoons bread flour
2 quarts canola oil, plus more for bowl
White Glaze
1 vanilla bean, split lengthwise
4 tablespoons unsalted butter
6 Granny Smith apples, peeled, cored, and cut into 1/2-inch cubes, yielding 7 cups
1/2 teaspoon ground cinnamon
1/4 cup sugar
1/4 cup apple-cider vinegar
1 cup sparkling apple cider

Steps:

  • Filling: Using a paring knife, scrape out the vanilla seeds. Place half of the pod, half of the seeds, and 2 tablespoons butter in a 12-inch skillet; set over medium-high heat. Cook until butter is bubbling. Add half of the apples; toss to coat. Add 1/4 teaspoon cinnamon and 2 tablespoons sugar; saute, stirring occasionally, until apples begin to soften, about 5 minutes. Add 2 tablespoons vinegar and 1/2 cup cider; increase heat to high. Cook until liquid has been absorbed and apples start to brown, about 8 minutes. Remove from heat. Remove and discard pod. Transfer apples to a baking sheet. Wash skillet, and repeat with the remaining ingredients.
  • Dough: Place yeast in the bowl of an electric mixer. Heat milk in a pan over medium heat until warm to the touch. Pour milk over yeast; sprinkle 2 cups pastry flour on top. Set aside until flour begins to crack, 15 to 20 minutes.
  • Place the egg yolks and sugar in a medium bowl; whisk to combine. Add the cider, butter, salt, cinnamon, vanilla extract, the remaining 1/4 cup pastry flour, and 1 cup bread flour; whisk to combine.
  • Add flour mixture to the yeast mixture. Using the dough-hook attachment, mix on low speed 30 seconds. (The dough should look very soft but still have structure; if it appears liquidy, add remaining 2 tablespoons bread flour.) Increase speed to medium and mix dough 3 to 4 minutes.
  • Lightly oil a large bowl. Sift an even layer of pastry flour onto a clean work surface, and lightly flour your hands. Turn out dough, and gather into a ball. Transfer dough to oiled bowl, and cover with plastic wrap. Set aside in a warm place to rise until doubled in size, about 1 1/2 hours.
  • Lightly dust a baking pan with flour, and line a second one with paper towels. Set both pans aside.
  • Turn out dough onto a lightly floured work surface. Using your hands, stretch the dough into a 10-by-15-inch rectangle, about 1/2 inch thick. Spread half of the reserved apple mixture over dough, and fold dough, like a letter, into thirds. Pat down with your hand, forming another 10-by-15-inch rectangle. Spread the remaining apples over the dough, and fold into thirds again; the apples will be evenly distributed throughout the dough. Gather the dough into a ball, and return dough to oiled bowl. Re-cover, and set aside in a warm place until doubled in size again, about 30 minutes.
  • Turn out dough onto a lightly floured work surface; pat into a 10-by-15-inch rectangle, about 1 inch thick. Using a 2 1/2-inch round cutter, cut out fritters as close together as possible, dipping cutter in flour before each cut. Transfer fritters to floured baking pan. Set aside to rest 10 minutes, but not longer.
  • While dough rests, heat oil in a low-sided six-quart saucepan over medium-high heat until a deep-frying thermometer registers 375°F.
  • Flour your hands. Lift a fritter, pulling the ends to make a 4-inch oval; carefully drop into oil. Repeat with two more pieces of dough. Cook until fritters begin to brown, about 2 minutes. Using a slotted spoon, turn fritters over; cook until evenly browned, 2 minutes more. Transfer fritters to lined pan. Repeat with remaining dough.
  • Coat fritters with white glaze. Transfer to a wire rack, and let glaze set. Serve warm or at room temperature.

APPLE & PEAR FRITTERS

Whisked egg whites in the batter give a light, golden coating to the fruit - delicious with vanilla ice cream

Provided by Barney Desmazery

Categories     Brunch, Dessert, Dinner

Time 40m

Number Of Ingredients 8

1 quantity of batter ingredients (see 'Goes well with', below)
2 pears
1 English apple
1 tsp lemon juice
1 tsp cinnamon
100g golden caster sugar
oil , for deep-frying
vanilla ice cream, to serve

Steps:

  • Make the batter (see 'Goes well with', right) but first separate 2 of the eggs and set aside the 2 egg whites. When the batter is mixed, whisk the egg whites in a clean bowl until they just start to hold their shape, then fold into the batter. Peel, core and cut the pears into wedges. Peel, core and cut the apple into rings and toss both in a little lemon juice to stop them going brown. Mix the cinnamon and sugar and set aside.
  • Heat the oil in a deep fryer to 180C or in a wok until a drop of batter sizzles and turns golden within 20 secs. In batches, dip the fruit in the batter, then carefully fry in the oil until golden and crisp. Use a slotted spoon to drain onto kitchen paper, then toss in the sugar. Serve with vanilla ice cream.

APPLE CIDER-GLAZED CHICKEN THIGHS WITH BUTTERNUT SQUASH FRITTERS

Apple Cider-Glazed Chicken Thighs with Butternut Squash Fritters image

Well, if this dish doesn't scream FALL, then I don't know what does! These crispy fritters are similar to potato latkes, with a sweet and spicy flavor that perfectly complements the rich apple cider glaze on the chicken thighs. It's my idea of a truly comforting meal for a cozy evening at home!

Provided by Carla Hall

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 19

2 cups grated butternut squash, squeezed dry, liquid reserved
1 cup grated apple (preferably tart, like a Granny Smith), squeezed dry, liquid reserved
2 tablespoons grated fresh ginger
1 large egg, lightly whisked
1/4 cup dry breadcrumbs, finely ground
1 teaspoon dried sage
1/2 teaspoon fresh rosemary, finely chopped
1 teaspoon kosher or sea salt
1 teaspoon freshly ground black pepper
Vegetable oil, for frying
2 tablespoons olive oil, plus more as needed
8 boneless, skinless chicken thighs (about 2 pounds)
Kosher salt or sea salt and freshly ground black pepper
1 yellow onion, thinly sliced
4 sprigs fresh thyme
1 cup apple cider
1 tablespoon apple cider vinegar
1/4 cup fresh flat-leaf parsley leaves
2 tablespoons unsalted butter, softened

Steps:

  • For the butternut squash fritters: Place the squash, apple, ginger, egg, breadcrumbs, sage, rosemary, salt and pepper into a large bowl and stir together to combine.
  • Heat a large nonstick skillet over medium-high heat and coat the bottom with about 1/4 inch of oil. When the oil shimmers, scoop heaping tablespoons of the squash mixture and drop gently into the oil, pressing with the back of the spoon to slightly flatten. Fry in batches until brown and crisp, about 3 to 4 minutes per side. Drain on a plate lined with lightly crumpled paper towels. Sprinkle lightly with more salt before serving. Makes about 2 dozen fritters.
  • For the apple cider-glazed chicken thighs: Heat the oil in a large skillet over medium-high heat. Season the chicken thighs on each side with 1 teaspoon salt and 1 teaspoon pepper, then cook in batches on each side until golden brown, about 5 minutes per side. Remove and set aside.
  • Lower the heat to medium and add the onions and 2 sprigs of thyme to the pan. Season with salt, add a little water, and scrape up the browned bits from the bottom of the skillet until the onions are golden and softened, about 5 minutes. Stir in the apple cider, vinegar and the reserved liquid from squeezing out the squash and apple. Simmer until reduced, 5 minutes.
  • Remove the thyme leaves from the remaining 2 sprigs of thyme, then finely chop the thyme, parsley, and tarragon. Set aside.
  • Whisk the butter into the reduced sauce, then add the chicken thighs back to the pan to warm through for 2 or 3 minutes, coating with the glaze and sprinkling with the fresh herbs. Check that the thighs have reached an internal temperature of 165 degrees F, then serve with the Butternut Squash Fritters.

APPLE FRITTERS

Apple Fritters image

Best served warm, these fragrant, golden Apple Fritters are by turns tender, crisp, and fruity. A simpler (no-yeast) alternative to sufganiyot-the traditional jam-filled Jewish doughnut served during Hanukkah-the fritters are studded with diced sweet apples and generously dusted with confectioners' sugar. Be forewarned: They can be addictively delicious. Martha made this recipe on Martha Bakes episode 602.

  • Meanwhile, heat 2 inches of oil in a medium heavy-bottomed pot over medium-high heat until a thermometer registers 350 degrees. Set a wire rack in a rimmed baking sheet.
  • Working in batches, drop heaping tablespoons of dough into oil. (A small ice cream scoop works especially well for creating uniform-size fritters.) Cook, turning once, until puffed and golden, 3 to 4 minutes. Transfer to rack with a slotted spoon. Let cool slightly, dust with confectioners' sugar, and serve.

PAN-ROASTED PORK CHOPS WITH APPLE FRITTERS

Pan-Roasted Pork Chops With Apple Fritters image

The recipe takes a little planning. You want to brine the pork chops for a day or two before you set out to cook. This gives them a juiciness and depth of flavor you are otherwise unlikely to get from a commercially raised hog. (If you have access to a pig raised on acorns and herbs, feel free to cut corners.) Chef Josh Cohen toasts the spices he uses in his brining liquid before incorporating them. This is very much to the good of the chops and is worth the few extra moments it requires.

Yield Serves 4

Number Of Ingredients 28

1 cup apple cider
6 tablespoons sugar
4 tablespoons kosher salt, plus more for seasoning
3 bay leaves
2 dried chiles de árbol
5 juniper berries
1 teaspoon caraway seeds
1 teaspoon mustard seeds
1 teaspoon coriander seeds
4 pork chops on the bone, approximately 1 ½ inches thick
Freshly ground black pepper
2 tablespoons neutral oil, like canola
1 tablespoon unsalted butter
2 shallots peeled and finely diced
1 teaspoon thyme leaves, chopped
2 tablespoons brandy
1 cup heavy cream
½ cup pork or chicken stock
2 teaspoons whole grain mustard
1 teaspoon horseradish, ideally freshly grated
2 cups apple cider
1 cinnamon stick
4 Granny Smith apples, peeled, cored and cut into ½-inch rounds
1 whole egg
½ cup very cold seltzer water
½ cup rice flour
½ cup all-purpose flour
1 cup neutral oil, like canola

Steps:

  • In a large bowl, mix the apple cider with 4 cups of water, the sugar and the salt. Toast the bay leaves, chilies, juniper berries, caraway seeds, mustard seeds and coriander seeds in a small pan set over medium heat until you can smell them, then add to the brine, and stir to combine. Add the pork chops, cover and place in the refrigerator to brine overnight or for up to 48 hours.
  • To pan-roast the pork chops, preheat oven to 375. Remove chops from brine, and pat dry with paper towel. Season the meat aggressively with freshly ground black pepper and a little salt. Set a large sauté pan that will fit in the oven over medium-high heat. Add the oil, and when it is shimmering, place the chops in the pan. Cook until well seared on one side, approximately 4 minutes, then turn the chops over, and place pan in the oven to finish, approximately 6 to 8 minutes. (The internal temperature of the pork, measured at the center of the chop, should be between 140 and 145 for medium rare.) Remove the meat from the pan, and allow to rest for 5 minutes or so while you make the sauce.
  • Return the pan to the stovetop, over medium heat, and add the butter, stirring and scraping to incorporate meat drippings, then add the shallots and the thyme. Cook for approximately 3 minutes, then add the brandy. Allow the mixture to reduce by half, then add the cream and the stock and reduce again, until the sauce coats the back of a spoon. Remove the sauce from the heat, and whisk in the mustard and the horseradish.
  • For the apple fritters, heat the apple cider and the cinnamon stick with a couple of inches of water in a large pot set over high heat. Add the apple rounds, and blanch for 1 minute, then remove to a towel to dry. Whisk together the egg and the seltzer until frothy, then gently mix in the flours. Put the oil in a large pan set over medium-high heat. When the oil is shimmering, dip the apple rings into the batter, and fry in the oil until golden brown.
  • Serve the pork chops with a few apple fritters and a heavy drizzle of sauce across the top. The usual accompaniment is potato-and-horseradish pierogies sautéed in brown butter, though roasted new potatoes with a topping of butter and freshly grated horseradish will answer almost as well.

Apple fritters are a popular deep-fried dessert made with apples and a batter that is crispy on the outside, soft and chewy on the inside. These sweet treats are perfect for fall, when apples are in season, but can be enjoyed all year round. Whether you prefer classic cinnamon sugar or a modern twist with caramel and nuts, there is an apple fritter recipe for everyone.

History

The origin of apple fritters is uncertain, but they are believed to have been invented in Europe in the Middle Ages. Fritters were a popular dish in medieval cuisine, and the addition of apples was a natural extension. The recipe likely made its way to America with European immigrants, and has since become a beloved staple of American comfort food.

Ingredients

Most apple fritter recipes include the following ingredients:

  • Apples: Granny Smith, Honeycrisp, and Rome apples are popular choices for apple fritters. They should be peeled and sliced thinly.
  • Flour: All-purpose flour is a must for the batter.
  • Sugar: Granulated sugar is used for the batter and powdered sugar for the topping.
  • Eggs: Eggs are used to bind the batter together.
  • Baking powder: Baking powder provides the rise that makes the fritters fluffy and light.
  • Milk: Whole milk or buttermilk is used to give the batter a creamy texture.
  • Cinnamon: Cinnamon is optional but adds a warm, comforting flavor.

Method

The basic method for making apple fritters involves combining the dry ingredients in one bowl, the wet ingredients in another bowl, and then folding the two together. The apple slices are then coated in the batter and fried in hot oil until golden brown. The fritters are then dusted with powdered sugar and served hot.

Variations

There are many variations on the classic apple fritter recipe, including:

  • Caramel apple fritters: Apples are coated in caramel sauce before being fried, then drizzled with more caramel and chopped nuts.
  • Pumpkin apple fritters: Apples and pumpkin puree are folded into the batter, with pumpkin pie spice adding warmth and depth.
  • Brie and apple fritters: Thin slices of brie cheese are sandwiched between apple slices and coated in batter, resulting in a rich and savory twist on the classic fritter.
  • Apple fritter donuts: A hybrid of a donut and fritter, these treats are fried in the shape of a donut, then tossed in cinnamon-sugar.

Serving Suggestions

Apple fritters are best served freshly fried, straight out of the fryer. They can be eaten plain or dusted with powdered sugar. Some folks like to dip them in caramel sauce or sweetened whipped cream. They can be paired with a hot cup of coffee for a cozy morning treat, or enjoyed as a dessert after dinner.

Conclusion

Apple fritters are a delicious and irresistible dessert that have been enjoyed for centuries. They are easy to make and can be customized to suit any taste preference. Whether enjoyed plain or with a creative twist, they are sure to please any sweet tooth.

Apple fritters are a popular snack that is enjoyed by people across the globe. Made using simple ingredients such as flour, sugar, eggs, and grated apples, apple fritters are easy to make and can be served as a dessert or a snack. In this article, we will discuss some valuable tips that will help you make the perfect apple fritters recipe. Tip 1: Choose the Right Apples The first and most crucial step in making apple fritters is selecting the right type of apple. The ideal apple should be firm and not too soft. A firm apple will hold its shape when grated and will not become too mushy once fried. The best apples for making fritters are ones with a sweet-tart flavor and a crunchy texture such as Honeycrisp, Granny Smith, or Gala apples. Tip 2: Grate the Apples Correctly Grating the apples for apple fritters is a crucial step as it determines the texture and taste of the fritters. To grate the apples correctly, use a box grater or a food processor with a grating attachment. Make sure to peel and core the apples before grating them. Tip 3: Use the Right Flour Using the right flour in your apple fritters recipe can make a massive difference in the end product. We recommend using all-purpose flour or cake flour for making apple fritters. All-purpose flour will give you a firmer texture while cake flour will create a softer and more delicate texture, which is perfect for fritters. Tip 4: Don't Overmix the Batter Overmixing the batter can result in tough and chewy fritters. Mix the flour, sugar, salt, baking powder, and spices together in a bowl before adding it to the wet ingredients. Mix the batter gently using a rubber spatula until just combined, making sure not to overmix it. Tip 5: Fry at the Right Temperature Frying apple fritters at the right temperature is crucial to get the perfect texture and crispiness. Set the oil temperature at 350°F/175°C and use a thermometer to monitor the temperature. If the oil is too hot, the fritters will burn, and if it's not hot enough, they will get greasy and soggy. Tip 6: Drain the Fritters on Paper Towels Once the fritters are fried, remove them from the oil using a slotted spoon and drain them on a paper towel-lined plate. This will help to absorb any excess oil and keep the fritters crispy. Tip 7: Add Cinnamon Sugar Topping Adding a cinnamon sugar topping to your apple fritters is the perfect way to make them sweeter and more delicious. Mix cinnamon and sugar together in a bowl and sprinkle it generously over the fritters while they are still warm. You can also add a drizzle of honey or maple syrup for an extra flavor boost. Conclusion: Making apple fritters is an easy and fun process that can be enjoyed by people of all ages. With the tips mentioned above, you can make delicious and crispy apple fritters that are perfect for any occasion. Remember to choose the right apples, grate them correctly, use the right flour, fry at the right temperature, and drain the fritters on paper towels. Lastly, add a cinnamon sugar topping to make the fritters irresistibly sweet and delicious. Happy baking!
