Time 3h5m

Number Of Ingredients 19

2 1/4 teaspoons (1 packet) active dry yeast
1/4 cup lukewarm water
1 1/2 cups whole milk (warm)
1/2 cup granulated sugar
3 large eggs (room temperature)
5 to 5 1/2 cups all-purpose flour
1 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened
6 large apples (peeled, cored and chopped into small pieces)
2-3 tablespoons lemon juice
4 tablespoons butter
1 cup firmly packed brown sugar
1 cup cold water
2 tablespoons cornstarch
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
3 cups powdered sugar
1 teaspoon pure vanilla extract
3-5 tablespoons whole milk

Steps:

  • In a large mixing bowl of a stand mixer dissolve the yeast in the warm water. Add the warm milk, sugar, and eggs.
  • Add the dough hook attachment, and stir in the flour and salt. Scrape the bottom and sides of the bowl occasionally with a rubber spatula. Cut the butter into small pieces and incorporate into the dough. Scrape the bowl a few times. Beat the dough until it becomes smooth, about 5-7 minutes.
  • Turn the dough out onto a floured work surface and knead for 5-6 minutes, making a smooth dough. This dough is going to be sticky when you turn it out.
  • After kneading, shape into a round ball and place back into the greased mixing bowl. Cover loosely with plastic wrap and drape with a clean kitchen towel. Place in a warm area and let rise until doubled in size, about 1 hour.
  • Turn the dough out onto a lightly floured work surface and knead the dough for a few minutes. Turn back into the greased bowl (spray with cooking spray again if needed) and let rise until doubled, about 1 hour.
  • While the dough is rising, make your apple filling. Place the butter and lemon juice in a 10-12-inch cast iron pan over medium heat. Place the chopped apple pieces and the brown sugar into the pan.
  • Cook the apples over medium-high heat for about 10-15 minutes, until slightly soft. Dissolve the cornstarch in cold water and pour over the apple mixture. Let bubble and thicken. Stirring occasionally with a wooden spoon so it does not burn.
  • Remove from the heat once it's thickened and add the cinnamon and nutmeg. The apple mixture will thicken as it cools. Let cool completely.
  • Turn the dough out onto a lightly floured work surface and roll out with a rolling pin. Making it into a rectangle shape, about 1/2-3/4-inch thick. Spread the apple filling evenly over the dough. Sprinkle generously with all-purpose flour. (about 1/2 cup or so). This will help absorb some of the moisture from the filling. Sprinkle generously with ground cinnamon.
  • Roll up, starting at the long end, like you would cinnamon rolls. Cut the dough on a diagonal, then back the other way. You want to end up with pieces about the size of a quarter. Gently push the pieces back into small patties (about 3-4 inches in diameter). You'll want to sprinkle the pieces with flour as you go. This will be a sticky mess. But well worth the time, effort and mess involved.
  • Place the apple fritter patties on lined half sheet pans. (you should get about 3 rows of 3 on each sheet pan) Cover loosely with plastic wrap and refrigerate for 1 hour, or overnight.
  • While they are in the fridge, whisk together your icing. Cover with plastic wrap and set aside. You want it to be fairly thin.
  • Heat canola oil in a large cast iron skillet to 375 degrees F. Use a digital thermometer to monitor the temperature of your oil.
  • Fry for about 2-3 minutes per side. Flip carefully. Once fried, place them on a sheet pan lined with plenty of paper towels to absorb some of the excess oil.
  • Let cool slightly before dipping only the tops in the icing. Let drip dry on a cooling rack, placed on a parchment lined half sheet pan. Once the icing is set, enjoy!

CHEF JOHN'S APPLE FRITTERS

Chef John's Apple Fritters image

I didn't think I liked apple fritters, but turns out I just don't like chunks of almost raw apple, surrounded by a doughnut. Maybe I've just been going to the wrong shops, but I've never enjoyed the texture, and always wanted to try them with cooked apples.

Time 35m

Yield 8

Number Of Ingredients 16

1 tablespoon butter
2 large Granny Smith apples - peeled, cored and cut into 1/4-inch dice
1 tablespoon white sugar
1 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon kosher salt
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
⅛ teaspoon ground nutmeg
1 large egg
¼ cup white sugar
1 tablespoon melted butter
½ cup sparkling apple cider
2 cups vegetable oil for frying
½ cup confectioners' sugar, or more as needed
1 tablespoon sparkling apple cider, or as needed to make glaze

Steps:

  • Melt butter over medium-high heat and cook until it turns golden brown, 2 to 3 minutes. Add apples and cook over medium-high heat until apples just begin to soften around the edges, 3 to 4 minutes. Sprinkle in 1 tablespoon sugar and continue cooking another 2 minutes. Remove from heat. Drain in a strainer; let cool to room temperature.
  • Whisk flour, baking powder, salt, cinnamon, ginger, and nutmeg together in a mixing bowl until well combined.
  • Whisk egg, 1/4 cup sugar, and melted butter together in a separate mixing bowl. Add cooled apple pieces and sparkling apple cider; add the flour mixture. Stir just until flour is incorporated.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Spoon about 2 tablespoons batter per fritter, into hot oil, slightly flattening them out. Cook in batches. Fry on one side until small bubbles appear on the surface, about 2 minutes. Carefully flip fritters over and fry the other side until richly browned, about 2 more minutes.
  • Transfer with a slotted spoon to a paper-towel-lined plate to drain grease. Cool slightly before glazing.
  • Whisk powdered sugar and cinnamon in a mixing bowl. Add enough apple cider, 1 teaspoon at a time, to form a smooth glaze that is just runny enough to drizzle over fritters.

Apple fritters are a beloved dessert that has been around for centuries. This delicious pastry is essentially a deep-fried batter filled with chunks of apples and topped with sugar glaze. It's a perfect dessert after a hearty meal, a snack or a breakfast treat. In this article, we'll explore the history of apple fritters, how to make them, and what makes the Cook's Country recipe stand out.

The History of Apple Fritters

Apple fritters date back hundreds if not thousands of years. It's said that the ancient Romans enjoyed something similar to apple fritters called "scriblita" made from fried dough and apples. In medieval Europe, apple fritters were a common dessert served during festivals and inns. In America, apple fritters were popularized by the Dutch who had a similar dish called "appelkoeken." The dish quickly spread in popularity, and today, it's a staple dessert across the country.

Making Apple Fritters From Scratch

Making apple fritters from scratch is relatively easy, and it's a great way to impress your guests. The basic ingredients include flour, sugar, baking powder, salt, eggs, milk, and of course, apples. To start, whisk together the flour, sugar, baking powder, and salt in a bowl, then add in the eggs and milk. Mix well, then fold in the diced apples until well combined. Heat up vegetable oil in a frying pan, then carefully drop in spoonfuls of the batter into the oil. Fry until golden brown, then remove from the oil and let the fritters rest on a paper towel to absorb any excess oil.

What Makes the Cook's Country Recipe Stand Out

Cook's Country is a popular cooking show and website that specializes in classic American recipes. Their recipe for apple fritters stands out for a few key reasons. First is the addition of apple cider syrup. It's a simple yet genius idea that takes the fritters to the next level. The syrup is made from a mixture of apple cider, sugar, and cinnamon. Simply simmer the ingredients together until it reduces down to a syrupy consistency. Drizzle over the fritters before serving, and you'll have a dessert that's packed with flavor. Second is the use of both all-purpose and cake flour. The combination of flours creates a crispy exterior while keeping the inside of the fritters soft and chewy. This is the perfect texture for apple fritters. Finally, Cook's Country suggests cutting the apples into small, bite-sized pieces. This not only makes the fritters easier to eat, but it also ensures that each fritter has apples evenly distributed throughout the batter.

Conclusion

Apple fritters are a classic dessert that's stood the test of time. While there are countless recipes out there for the perfect apple fritters, we believe that the Cook's Country version is among the best. The addition of apple cider syrup, the use of both all-purpose and cake flour, and the small bite-sized pieces of apples all come together to create a truly delicious dessert that everyone will love. So the next time you're in the mood for something sweet, why not try making apple fritters from scratch in your own kitchen?
Apple fritters are a delicious dessert that can be easily made at home. The combination of crispy apple pieces and a sweet, doughy batter is irresistible. However, making perfect apple fritters can be tricky. In this article, we will provide valuable tips on how to make the best apple fritters using Cooks Country recipes.

Tip #1: Use the Right Apples

The type of apple you use can make or break your apple fritter recipe. It is important to select a variety of apple that is both sweet and crispy. Some great options include Honeycrisp, Granny Smith, and Pink Lady apples. These types of apples hold up well when fried and provide the perfect balance of sweetness and tartness.

Tip #2: Get the Oil Temperature Right

The temperature of the oil is crucial when making apple fritters. If the oil is too hot, the fritters can burn on the outside and remain uncooked on the inside. If the oil is too cold, the fritters can become greasy and heavy. To ensure that your apple fritters turn out perfectly, heat the oil to between 360°F and 375°F. Use a thermometer to monitor the temperature throughout the cooking process.

Tip #3: Mix the Batter Gently

Overmixing the batter is a common mistake when making apple fritters. This can lead to tough, chewy fritters that are not enjoyable to eat. To avoid this, mix the batter gently with a wooden spoon or spatula. Only stir until the batter is just combined - it is okay if there are a few lumps.

Tip #4: Drain Excess Oil

After frying the apple fritters, it is important to remove any excess oil. This will prevent the fritters from becoming too greasy and heavy. Use a slotted spoon or tongs to carefully remove the fritters from the oil. Place them on a wire rack or paper towel-lined plate to drain any excess oil.

Tip #5: Add Spices for Extra Flavor

While apple fritters are delicious on their own, adding a few spices can take them to the next level. Consider adding cinnamon, nutmeg, or allspice to the batter for extra flavor. You can also sprinkle a little cinnamon sugar on top of the fritters after they have cooled for added sweetness.

Tip #6: Serve Warm

Apple fritters are best served warm, straight out of the fryer. If you are not serving them immediately, you can reheat them in the oven or microwave. However, be aware that reheated fritters may not be as crispy and delicious as freshly made ones.

Conclusion

Making apple fritters at home can be a fun and rewarding experience. By following these valuable tips, you can ensure that your fritters turn out perfectly every time. Remember to use the right apples, get the oil temperature right, mix the batter gently, drain excess oil, add spices for extra flavor, and serve warm for the best results.
