Yield 4 servings

Number Of Ingredients 10

2 tablespoons sugar
1 cup flour
1 teaspoon baking powder
Salt
1 1/4 cups milk
2 eggs
1/2 teaspoon vanilla
4 tablespoons butter
2 pounds or 4 Golden Delicious or Granny Smith apples, peeled, cored, quartered and cut into 1/8-inch slices
1 tablespoon sugar mixed with 1/2 teaspoon ground cinnamon

Steps:

  • You must have a non-stick skillet or this won't work. Whisk sugar, flour, baking powder and 1/4 teaspoon salt together. Beat milk with eggs and vanilla and whisk this into batter; let stand while you cook the apples.
  • Melt the butter in a large skillet. When foaming subsides, add the apples, cover and cook gently for 5 minutes or until soft. Uncover, raise the heat and evaporate the moisture. When the moisture has almost completely evaporated, add the sugar and finish boiling the juices away.
  • Preheat the broiler with rack set 6 to 7 inches away from heat source.
  • Oil the bottom and sides of a 10-inch non-stick pan with butter or non-stick vegetable cooking spray and heat for a minute. Add 1/3 cup of batter to the pan and tilt so it is well coated. Set skillet on very low heat and cook for 30 seconds. Gently arrange about 1/4 of the apple mixture on the first pancake. Pour in 1/3 cup more batter over the apples to cover them as best as possible. Cook pancake for a minute over medium heat, lower the heat and cook 2 minutes longer. Broil for about 3 minutes or until pancake is cooked through and golden. With a spatula loosen pancake around the edges and transfer to a platter (cover loosely with foil until all 4 pancakes are done or serve immediately). Repeat procedure with other 3 pancakes; serve dusted with confectioner's sugar.

Apple filled pancakes are a delicious breakfast treat that is perfect for any time of the year. Not only are they easy to make, but they are also versatile and can be made in many different ways. To help you create the perfect apple filled pancakes, here are some valuable tips that you can use to make your recipe stand out. Tip #1: Choose the right type of apples To make the perfect apple filled pancakes, it is essential to choose the right type of apples. Different apples have different textures, flavors, and sweetness levels, which can affect the overall taste and texture of your pancakes. Granny Smith apples are a popular choice for baking due to their tartness, while sweeter apples like Gala, Honeycrisp, or Fuji are better for a sweeter taste. You can also combine different types of apples to create unique and complex flavors in your pancakes. Tip #2: Core and slice the apples thinly To ensure that the apples cook evenly and quickly, it is recommended to core and slice them thinly. This will also help the apples to be easily spreadable onto the pancake batter, creating a consistent filling in each bite. You can use a mandolin or a sharp knife to slice the apples thinly, making sure to remove any seeds or stems. Tip #3: Precook the apples before filling the pancakes To avoid undercooked apples, it is a good idea to precook them before filling into the pancakes. This will also help to bring out the apples' natural sweetness and aroma, making them more enjoyable to eat. You can precook the apples by sautéing them in butter or oil until they are soft and fragrant. Add some cinnamon or sugar to enhance their flavor. Tip #4: Use a non-stick pan or griddle When making apple filled pancakes, it is important to use a non-stick pan or griddle. This will prevent the pancakes from sticking and tearing apart when you try to flip them. A non-stick pan will also allow you to cook the pancakes evenly without burning them, ensuring that they are perfectly golden and crispy on the outside and fluffy on the inside. Tip #5: Use a piping bag to fill the pancakes To get a uniform and consistent filling in each pancake, using a piping bag to fill the pancakes is a great technique. This will allow you to control the amount of filling you use and ensure that it is evenly distributed. Make a small hole in the center of the pancake batter and pipe the filling into the hole. Then, cover the filling with more batter and cook as usual. Tip #6: Don't overfill the pancakes When making apple filled pancakes, it is important not to overfill them. If you add too much filling, it can cause the pancakes to tear apart when cooking, making them difficult to flip. A general rule of thumb is to use about 1-2 tablespoons of filling per pancake, depending on their size. Use your judgement to determine the amount of filling needed for each pancake. Tip #7: Cook the pancakes at the right temperature To ensure that the pancakes cook perfectly, it is important to cook them at the right temperature. If the temperature is too high, the pancakes will burn, and if it is too low, they will take longer to cook and may be underdone. Heat the pan or griddle over medium heat until it is hot, then reduce the heat to medium-low before adding the pancake batter. Tip #8: Serve with your favorite toppings Once your apple filled pancakes are cooked and ready to be served, it's time to add your favorite toppings. Maple syrup, whipped cream, honey, powdered sugar, or extra apple slices are all great options to complement the flavors of the pancakes. You can get creative with your toppings and experiment with different combinations to find your favorite one. Conclusion: Apple filled pancakes are a delicious and nutritious breakfast option that is easy to make and enjoyable to eat. The above tips will help you make the perfect apple filled pancakes every time, with a crispy and golden outside and a warm and fluffy inside. Remember to choose the right type of apples, core and slice them thinly, precook them before filling the pancakes, use a non-stick pan, and don't overfill the pancakes. With these tips, you can create a delicious breakfast treat that is sure to impress your family and friends.
