CLASSIC TURNIP AND APPLE CASSEROLE

Classic Turnip and Apple Casserole image

I first had this recipe at my husband's aunt's home back in 1979; got the recipe from her and have been making it to serve with turkey dinner ever since. I love the apples and turnip together! If you want to make it ahead of time, you can; just make it up to the layering stage then cover tightly and refrigerate. Put topping on, though, just before it goes into the oven.

Time 2h

Yield 8 serving(s)

Number Of Ingredients 9

1 large yellow turnip (known as a rutabaga, sometimes called a Swede)
1 tablespoon butter
2 tablespoons light cream (you can use milk)
2 apples (I use macintosh)
1/4 cup packed brown sugar
1 pinch ground cinnamon
1/3 cup flour
1/3 cup packed brown sugar
2 tablespoons butter

Steps:

  • Preheat oven to 350F; butter a casserole dish (or spray with Pam) and set aside.
  • Peel and dice turnip (this can be a tough job, as turnips are very dense) and place in a large pot.
  • Cover with cold, lightly salted water and bring to a boil.
  • Boil until turnip is tender (this takes longer than potatoes, usually), then drain and return to the pot.
  • Mash turnip with the 1 tbsp butter and cream; stir in 1/4 cup brown sugar and the cinnamon; set aside.
  • Peel apples, core, and slice.
  • In prepared casserole dish, layer 1/3 of the turnip, then half the sliced apples, then 1/3 of the turnip, then the remaining apples, then the remaining turnip; smooth top.
  • At this point, you could cover the dish tightly and refrigerate for several hours; don't put topping on until you're ready to pop this into the oven.
  • When ready to bake, combine topping ingredients in a small bowl until they are crumbly; sprinkle over top of turnip.
  • Bake in preheated oven for one hour; serve.

Yield Serves 6

Number Of Ingredients 8

1 sheet frozen puff pastry (half of 17 1/4-ounce package), thawed
4 Golden Delicious apples, peeled, cored, chopped
1/4 cup water
2 tablespoons plus 3/4 cup sugar
3 medium fennel bulbs (about 13 ounces each), halved lengthwise, stalks separated
4 tablespoons (1/2 stick) unsalted butter
2 teaspoons aniseed
Vanilla ice cream

Steps:

  • Preheat oven to 425°F. Roll out puff pastry sheet on lightly floured surface to 12-inch square. Transfer to 9-inch-diameter tart pan with removable bottom. Trim overhang to 1 inch. Fold in overhang to form double-thick high-standing sides. Pierce pastry all over with fork. Freeze pastry shell 15 minutes. Line shell with foil and beans or pie weights. Bake until sides are set, about 20 minutes. Remove foil and beans. Bake until bottom is golden, about 8 minutes longer. Cool pastry shell.
  • Place apples, 1/4 cup water and 2 tablespoons sugar in heavy medium saucepan. Simmer over medium heat until mixture is reduced to 1 1/4 cups, stirring and breaking up apples with back of spoon, about 5 minutes. Set aside.
  • Cook fennel in large saucepan of boiling, lightly salted water until tender, about 10 minutes. Remove from heat; drain fennel well.
  • Melt butter in heavy large skillet over medium heat. Stir in 3/4 cup sugar. Cook until sugar dissolves and mixture is dark amber, stirring frequently, about 14 minutes. Stir in drained fennel (caramel mixture will harden). Cover; cook until caramel melts, stirring occasionally, about 15 minutes. Uncover and simmer until caramel thickens, about 5 minutes longer (fennel will be very tender). (Pastry shell, apple compote and caramelized fennel can be made 1 day ahead. Cover separately. Refrigerate apple and fennel mixtures; store pastry shell airtight at room temperature.)
  • Preheat oven to 425°F. Spread apple compote evenly over bottom of pastry shell. Arrange caramelized fennel evenly over compote. Sprinkle tart with aniseed. Bake until warmed through, about 15 minutes. Serve with vanilla ice cream.

This dish is both delicious and satisfying, and it is perfect for a family dinner or potluck gathering. In this article, we will explore valuable tips for making the perfect apple fennel casserole with a coconut turmeric twist. 1. Choose the Right Apples When making apple fennel casserole, the type of apples you choose will have a significant impact on the flavor of the dish. It is essential to select apples that are firm and flavorful, such as Granny Smith or Honeycrisp apples. These types of apples have a tart and slightly sweet flavor that will complement the savory taste of the fennel. 2. Prepare Fennel Properly Fennel is a unique vegetable that has a licorice-like flavor. When making fennel casserole, it is essential to prepare it properly. Cut the fennel bulb into thin slices to ensure that it cooks evenly. It is essential not to overcook the fennel as this can cause it to become mushy and lose its distinct flavor. 3. Use Coconut Milk Coconut milk is a popular ingredient in many recipes, and it can add a unique flavor to apple fennel casserole. Using coconut milk in this dish will not only add a delicious flavor but also make it creamy and rich. It is best to use full-fat coconut milk to achieve the desired texture and flavor. 4. Add Turmeric Turmeric is a spice that is commonly used in Indian and Middle Eastern cuisine. It has a warm and slightly bitter flavor that can add depth to apple fennel casserole. Turmeric also has healing properties and is believed to have anti-inflammatory effects. Adding a teaspoon of turmeric to the dish will give it a unique twist and provide additional health benefits. 5. Use Gluten-Free Breadcrumbs When making apple fennel casserole, it is essential to use gluten-free breadcrumbs if you are following a gluten-free diet. Gluten-free breadcrumbs are available in most grocery stores and online. Alternatively, you can make your breadcrumbs by grinding gluten-free crackers or bread in a food processor. 6. Don't Overcook Overcooking apple fennel casserole can cause it to become mushy and lose its distinct flavor. Be sure to monitor the casserole carefully while it is cooking and remove it from the oven when it is golden brown and the breadcrumbs are crispy. Use a Dutch Oven or Casserole Dish A Dutch oven or casserole dish is the best type of dish to use when making apple fennel casserole. These types of dishes are durable and have a lid, which will help keep the casserole moist and flavorful. They are also oven-safe, which makes them ideal for cooking in the oven. 9. Let the Casserole Rest Allow the casserole to cool for a few minutes after removing it from the oven. This will allow the flavors to meld together and the casserole to set. Cutting into the casserole right away can cause it to fall apart and lose its shape. 10.
