Time 1h5m

Number Of Ingredients 20

1 ½ cup All-purpose flour
½ cup Unsalted butter (room temperature)
¼ tsp Salt
¼ cup Sugar
1 Egg yolk
4 tbsp Chilled water (as needed)
½ tsp Vanilla extract
6 cups Apples ((6 to 8 apples chopped))
2 tbsp Lemon juice
½ cup Sugar
1 tsp Pumpkin spice (or cinnamon)
½ tsp Nutmeg (fresh grated)
½ tsp Salt
2 tbsp All-purpose Flour
1 ½ cup All-purpose flour
½ cup Butter
¼ cup Brown sugar
¼ cup White sugar
½ tsp Pumpkin spice (or ground cinnamon)
¼ tsp Salt

Steps:

  • In a bowl of a stand mixer with the paddle attachment, cream the butter and sugar for just a minute until well combined. Add the flour and combine. Then add the vanilla extract, salt, and egg yolk. Combine well. Pro tip - Do not over cream as we do not want to add too much air into the dough.
  • Make a disc and wrap it in plastic wrap. Chill the dough in the refrigerator for at least two hours until firm to roll. I prefer to chill overnight.Pro tip - If you flatten the dough into a larger disc it will chill faster and you will have to wait for much less time.
  • Roll the chilled dough on a lightly dusted surface dusted with flour to the size of a 9-inch tart pan.Pro tip - This dough is delicate so it must be well chilled before rolling. Alternatively, it is easier to roll it between parchment papers.
  • Transfer the dough to the tart pan. Gently press the dough into the tart pan making sure to press down into the shape of the pan. Then, remove the excess dough and neaten the edges of the tart pan.Pro tip - I like to roll my rolling pin over the tart to cut off the excess around the edges. Then, neaten the edges by running your thumb along the edges.
  • Chill the crust in the fridge for 15 minutes up to 48 hours. Pro tip - If you plan on leaving the crust in the fridge for a longer time, make sure to wrap it in plastic so it does not dry out.
  • Preheat oven at 375°F/ 190°C / Gas Mark 5
  • Peel, core, and chop apples into small slices about 1/8 inchPro tip - I find an apple corer works great to core the apples. If you don't have one, its better to cut the apples in half and then trim the unwanted center
  • Add lemon juice and toss to combine well. Next, add the pumpkin spice, salt, sugar, and nutmeg, followed by the flour. Combine well. Pro tip - the lemon juice will prevent the apples from oxidizing so combine the apples well.
  • Pour the apples in the chilled pastry shell - spread them evenly.Pro tip - these will look like a lot of apples but they will shrink quite a bit when cooked so pile them up.
  • In the same food processor add the flour, salt, sugar, and chilled cubed butter. Pulse until it is large breadcrumb consistencyPro tip - I like to make the crumble at the same time I make the crust, so I can use the same food processor. This crumble will keep in the fridge for up to a 5 days
  • Spread the crumble over the apples - making sure it coats the entire tart evenly.
  • Bake the crumble tart in the preheated oven for about 45 to 50 minutes or until the crumble on top looks lightly golden.
  • If the crumble on top starts to get too brown - tent with a piece of aluminum foilPro tip - if the edges of the tart get too dark you can use a foil or pie shield to tent it.
  • When baked - cool on the wire rack for at least 15 minutes because the crumble is very hot. You can serve this warm or room temperature.

Valuable Tips for Making Apple Crumble Tarts

Apple crumble tarts are the perfect dessert for fall, with a combination of sweet and tart apples, a buttery crust, and a crunchy crumble topping. If you want to make perfect apple crumble tarts, here are some valuable tips you should know:
1. Choose the Right Apples
The success of your apple crumble tarts largely depends on the type of apples you choose. You need to use apples that are tart enough to create a balance with the sweetness of the topping, but not too tart that they become unpleasant to eat. Some suitable apples for apple crumble tarts include Granny Smith, Honeycrisp, Pink Lady, and Braeburn. Make sure they are fresh and firm.
2. Use the Best Flour for Your Crust
The crust of your apple crumble tart can make or break the dish. It is essential that you use the best quality flour for your pastry to ensure it comes out tender and flaky. Organic or all-purpose flour is ideal, and make sure it's chilled before use. Also, remember not to overwork the pastry, as this will make it tougher.
3. Keep Your Butter Cold
When making the crumble topping, it's crucial to use cold butter. This helps ensure that the topping comes out crumbly and crispy, as the butter will melt little by little during cooking, leaving a crunchy layer. It's a good idea to keep the butter cubes in the fridge until you need them.
4. Add Spice to Your Topping
To give your crumble topping an extra dimension of flavor, consider adding spices. Cinnamon, nutmeg, and ginger are excellent options to try. Not only do they enhance the flavor of the topping, but they also complement the apple filling beautifully.
5. Don't Overfill Your Tarts
When adding the apple filling to your tart, don't overfill them. Keep in mind that the apples will soften and shrink during the cooking process. Overfilling will cause the filling to spill over the sides of the tart, which could lead to a mess on the baking sheet.
6. Layer Your Apples
Arranging your apple slices in layers rather than piling them on top of each other helps create a more even filling. This also ensures that the heat can penetrate the apples more efficiently, helping them to cook evenly.
7. Preheat Your Oven
It's vital that you preheat your oven before baking your apple crumble tarts. This ensures that the pastry cooks evenly, and helps the crumble topping to become golden and crispy.
8. Use a Baking Sheet
To prevent any filling from spilling over the sides of the tart, place the filled pastry crusts on a baking sheet. This not only keeps your oven clean, but it also helps prevent the pastry from sticking to the bottom of the oven.
9. Let Your Tarts Cool
After baking, let your apple crumble tarts cool before serving. This allows the filling to set and makes it easier to slice neatly. Additionally, it helps the flavors develop and meld together, making them more delicious.
10. Serve Fresh
Apple crumble tarts are best when eaten fresh from the oven. However, you can store them in an airtight container in the fridge for a few days. When you're ready to eat, warm them up in the oven for a few minutes to make them crispy again.

The Bottom Line

In conclusion, apple crumble tarts are the perfect dessert for fall. With the right selection of apples, high-quality crust, fresh butter, and a crumble topping, you can make the perfect tart. Keep in mind these valuable tips, and you’ll be sure to impress your guests with your apple crumble tart recipe.
