CLASSIC APPLE CRUMB PIE

Provided by Food Network Kitchen

Categories     dessert

Time 3h

Yield 6 to 8 servings

Number Of Ingredients 19

1 1/4 cups all-purpose flour, plus more for dusting
2 teaspoons granulated sugar
1/2 teaspoon salt
1 stick cold unsalted butter, cut into 1/2-inch cubes
1 tablespoon apple cider vinegar
1/4 cup ice water, plus more if needed
1 cup all-purpose flour
1/3 cup packed light brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1 stick unsalted butter, cut into 1/2-inch pieces, at room temperature
3 pounds mixed apples (such as Golden Delicious, Granny Smith and Gala), peeled and sliced 1/4 inch thick
4 tablespoons unsalted butter, melted
1/3 cup granulated sugar
1/4 cup packed light brown sugar
2 tablespoons all-purpose flour
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon
1/8 teaspoon salt

Steps:

  • Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. Drizzle in the vinegar and ice water; stir gently with a fork to combine. If the dough doesn't hold together when you squeeze it, add more ice water, 1 tablespoon at a time. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly. Refrigerate until firm, at least 1 hour or overnight.
  • Roll out the dough on a lightly floured surface into a 13-inch round. Ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang, then tuck the overhanging dough under itself; crimp the edges with a fork. Refrigerate until firm, at least 1 hour or overnight.
  • Meanwhile, make the crumb topping: Mix the flour, brown sugar, cinnamon and salt in a medium bowl. Rub the butter into the mixture with your fingers until no longer floury and crumbs form. Freeze until ready to use.
  • Make the filling: Place a foil-lined baking sheet on the lowest oven rack; preheat to 400˚. Mix the apples, melted butter, both sugars, flour, lemon juice, cinnamon and salt in a large bowl. Spoon the filling into the chilled pie crust. Pat the crumb mixture on top.
  • Bake the pie on the hot baking sheet until lightly browned, about 30 minutes. Reduce the oven temperature to 350˚ and bake until the apples are completely soft when pierced with a paring knife, 60 to 80 more minutes. (If the topping is getting too dark, cover loosely with foil.) Transfer the pie to a rack to cool completely.

PENNSYLVANIA DUTCH APPLE CRUMB PIE

Pennsylvania Dutch Apple Crumb Pie image

From my falling apart cookbook entitled Best-Loved Pennsylvania Dutch Recipes. Simple ingredients, easy assembly and spectacular presentation. When pressed for time, I have been known to substitute canned apple pie filling. This also works well for Cherry Crumb Pie by using canned cherry filling plus 1/4 teaspoon almond extract. A lifetime ago, on holidays, I was not allowed to enter my ex-inlaws house unless I had a Cherry Crumb Pie in my hands! ;) NOTE: If you use canned filling, just bake for 45 minutes at 350 degrees or until topping is brown.

APPLE CRANBERRY CRUMB PIE

Apple Cranberry Crumb Pie image

I've been making this pie for over 10 years! It's like no other recipe I've found. The secret ingredient is the crushed fruit sauce, which by the way can be found near the poultry. This recipe was printed in our local newspaper which had a beautiful picture. I had to try it! Now it's become a must have at Thanksgiving. The only pie that has even come close is a Marie Calendar Pie. I thought I'd lost this recipe, but recently found it, so I wanted to get in on Zaar before I lost it again! It's one of those you go crazy trying to find. Enjoy --V

1 dash(es) salt
cold water
PIE FILLING INGREDIENTS
6 c granny smith apples sliced
3/4 c sugar
1/4 c all purpose flour
1/2 tsp nutmeg
1/2 tsp cinnamon
1 dash(es) salt
CRUMB TOPPING INGREDIENTS

  • 1. Bottom pie crust directions. I am going to make this as complete as I can for everyone that has never made their own pie crust.
  • 2. Take flour and crisco and put it in a medium bowl.
  • 3. Use a fork or a pastry cutter to incorporate the crisco into the flour. Until it looks like little balls.
  • 4. Take a tablespoon of cold water and add it to the mixture. Gently working it in.
  • 5. Continue to add water a tablespoon at a time until you form a ball of dough. It should still be a tiny bit dry. You don't want it soaked.
  • 6. Wrap it in wax paper and put it in the fridge for about an hour.
  • 7. Filling Directions
  • 8. Take all the filling ingredients and put them in a bowl and mix. Let them sit for about 15 minutes till the apples and ingredients get nice and juicy.
  • 9. At this point you want to preheat your oven to 425 degrees.
  • 10. Roll out your bottom crust and place in a 9 inch pie pan.Just a little note if you have a marble rolling pin put it in the freezer for about a half hour before you roll out the dough. It makes it much easier to roll.
  • 11. Put the apple mixture into crust and get ready to make your topping.
  • 12. Topping directions
  • 13. Take flour and brown sugar and incorporate them together using a wire whisk.
  • 14. Take your stick of cold butter and slice it into the mixture.
  • 15. With a fork or pastry cutter cut the butter into the flour mixture until it resembles little balls.
  • 16. Flute the edges of your pie crust BEFORE you put the crumb topping on.
  • 17. Spread crumb topping over the apples until it is completely covered.
  • 18. Bake at 425 degrees for 50 minutes... Cover the pie with foil the last 15 minutes of baking so your crumbs don't burn.
  • 19. The pies juices should be bubbling up through the crust. That's how you know it's done. Enjoy!

CRUNCHY CRUMB APPLE PIE

Crunchy Crumb Apple Pie image

This is a yummie alternative to an old favorite. The topping is sweet and the apples are a little tart. I posted this with a ready-to-bake pie crust, but I have found a homemade crust is always better! There are tons of apples in this pie but they cook down during baking. This is delicious topped with vanillia ice cream.

DUTCH APPLE PIE (CRUMB CRUST)

Dutch Apple Pie (crumb crust) image

I found this recipe in a Taste of Home Magazine in the '90's and I've been using it ever since. I love the cooked, creamy filling which sets it apart from many other recipes and prompts requests for the recipe. Best of all, there is no pie crust to roll out as it uses a crumb crust and topping!

Apple crumb pie is one of the most loved pies around the world. The combination of the flaky crust, the sweet and tangy filling, and the crunchy crumbly topping make this dessert a real delight. Making apple crumb pie recipes can be easy and enjoyable if you follow some useful tips. In this article, we will share with you some of the most valuable tips you need to know to make the perfect apple crumb pie every time.

Tip 1: Choose the Right Apples

The first and most important tip when making apple crumb pie recipes is to choose the right apples. Not all apples are the same, and not all apples are suitable for making pies. You need to choose apples with a firm texture that will hold their shape during baking. Recommended apple varieties for pies include Granny Smith, Honeycrisp, Pink Lady, and Braeburn. Avoid using soft and mealy apples like Red Delicious or McIntosh, as they will turn into mush when baked.

Tip 2: Precook the Filling

To ensure that your apple crumb pie has a uniform texture and is cooked evenly, it's best to precook the filling. Precooking the filling will also help reduce the amount of moisture in the pie, preventing it from becoming soggy or soupy. Cook the apples, sugar, spices, and a thickener like cornstarch or flour in a saucepan over medium heat until the mixture thickens and the apples are slightly softened. This step takes about 10-15 minutes, but it's worth the extra effort.

Tip 3: Add Flavor and Texture

Your apple crumb pie will taste better if you add some extra flavors and texture to the filling. Cinnamon, nutmeg, and allspice are classic spices that pair well with apples. You can also add a splash of lemon juice or zest to balance the sweetness of the apples. For extra texture, mix some raisins or cranberries with the apples or add chopped nuts like pecans or walnuts to the crumb topping.

Tip 4: Make the Crumb Topping First

The crumb topping is the crowning glory of the apple crumb pie, and it's essential to get it right. To make the perfect crumb topping, mix flour, sugar, and butter until the mixture resembles coarse crumbs. You can also add some oats or chopped nuts for extra crunch. It's best to make the crumb topping first and keep it chilled while you make the pie crust and filling. This way, the crumb topping will hold its shape and texture during baking.

Tip 5: Use a Double Crust

While some apple crumb pies have only a crumb topping, using a double crust can add extra texture and flavor to the pie. A double crust means that there is pastry on top and bottom of the pie, enclosing the apple filling. To make a good crust, use a combination of flour, butter, and ice-cold water. Roll out the pastry dough to line the bottom of the pie dish and fill it with the pre-cooked filling. Then, lay the top crust over the filling and crimp the edges to seal them.

Tip 6: Brush the Crust with Egg Wash

To add a golden brown color and a shiny finish to the crust, brush it with egg wash before baking. Egg wash is a mixture of beaten egg and a little bit of milk or cream. It will help the crust to brown evenly and give it a glossy sheen. You can also sprinkle some coarse sugar on top of the crust before baking for extra sparkle and crunch.

Tip 7: Bake at the Right Temperature and Time

Baking temperature and time are critical factors in making apple crumb pie recipes. Bake the pie in a preheated oven at 375°F (190°C) for 45-50 minutes or until the crust is golden brown and the filling is hot and bubbly. Keep an eye on the pie during baking and cover the edges with foil if they brown too quickly. Let the pie cool for at least an hour before serving to allow the filling to set and the flavors to meld.

Conclusion

Apple crumb pie is an all-time favorite dessert that everyone can enjoy. By following these valuable tips, you will be able to make the perfect apple crumb pie that's both delicious and visually appealing. Remember to choose the right apples, precook the filling, add flavor and texture, make the crumb topping first, use a double crust, brush the crust with egg wash, and bake at the right temperature and time. With these tips, you'll be able to create a dessert that's sure to please everyone.
