Time 1h45m

Yield 6 to 8 servings

Number Of Ingredients 9

1 round refrigerated pie dough (half of a 14-ounce package)
1/4 cup sliced blanched almonds
6 McIntosh or Braeburn apples, peeled and chopped
11 tablespoons sugar
4 tablespoons unsalted butter
2 tablespoons fresh lemon juice
2 teaspoons pure vanilla extract
3 large egg whites, at room temperature
Pinch of salt

Steps:

  • Preheat the oven to 425 degrees F. Line a 9-inch pie plate with the dough; crimp the edges. Pierce the bottom all over with a fork, then refrigerate 15 minutes. Line the crust with foil and fill with pie weights or dried beans. Place on a baking sheet and bake until set, about 7 minutes. Remove the foil and weights; continue baking until golden, about 6 more minutes. Transfer to a rack to cool.
  • Meanwhile, spread the almonds on a baking sheet and bake until golden, about 8 minutes. Combine the apples, 5 tablespoons sugar, the butter, lemon juice and vanilla in a saucepan; cover and cook over medium heat until the apples are tender, about 12 minutes. Uncover and cook, mashing and stirring with a potato masher, until saucy and starting to caramelize, about 12 more minutes; let cool 15 minutes. Transfer the apples to the pie crust and sprinkle with the toasted almonds.
  • Beat the egg whites and salt with a mixer on medium speed until foamy, about 2 minutes. Gradually add the remaining 6 tablespoons sugar and beat until stiff, 2 to 3 more minutes. Transfer the meringue to a pastry bag fitted with a 1/2-inch star tip. Pipe around the edge of the pie, then pipe in a lattice pattern. Bake until the meringue is golden, 15 to 20 minutes. Let cool completely.

APPLE MERINGUE PIE

The meringue topping on this chef-level pie requires an extra step --but you won't regret it!

Provided by Food Network Kitchen

Categories     dessert

Time 5h

Yield 8 to 10 servings

Number Of Ingredients 15

1 stick cold salted butter
1 cup all-purpose flour, plus more for dusting
1 tablespoon sugar
1/4 cup ice water
1 pound McIntosh apples, peeled and chopped
1 pound Fuji apples, peeled and chopped
1 pound Granny Smith apples, peeled and chopped
1/2 cup sugar
Grated zest and juice of 1/2 lemon
1 teaspoon apple pie spice
1/4 cup all-purpose flour, plus more for dusting
2 tablespoons salted butter, cut into small pieces
4 large egg whites, at room temperature
1/4 teaspoon cream of tartar
1/3 cup sugar

Steps:

  • Make the crust: Grate the butter on the large holes of a box grater onto a sheet of wax paper and freeze until very hard, at least 20 minutes. Stir the flour and sugar in a medium bowl, then stir in the frozen butter with a fork. Stir in the ice water, then knead the dough into a shaggy ball. Turn out onto a floured surface and flatten into a disk with a rolling pin. Fold in half left to right and then top to bottom. Roll out into a 12-inch round, dusting with flour as needed. Transfer to a 9-inch pie plate and gently press into the pan. Crimp the edges, creating a tall rim to keep in all the apple juices. Refrigerate until firm, at least 2 hours and up to 1 day.
  • Make the filling: Position racks in the middle and lower third of the oven and place a foil-lined baking sheet on the lower rack to catch any drips; preheat to 375 degrees F. Toss the apples, sugar, lemon zest and juice and pie spice in a large bowl. Sprinkle the flour on top and toss to combine. Spoon the filling into the pie shell and gently pack evenly with your hands; dot with the butter. Cover the top with a round of parchment paper and press to adhere.
  • Bake the pie on the middle oven rack until the apples are tender and bubbling and the crust is browned, about 1 1/2 hours. Let stand while you make the meringue. (You want the pie to still be hot when you add the meringue.) Leave the oven on.
  • Make the meringue: Whip the egg whites and cream of tartar with a mixer on medium speed until soft peaks are just forming, 1 to 2 minutes. Increase the speed to medium high; gradually beat in the sugar until the meringue is glossy and stiff peaks form, 4 to 5 minutes.
  • Spread the meringue over the hot pie filling all the way to the crust; make swoops with the back of a spoon. Bake until the meringue is lightly browned in spots, 5 to 7 minutes (do not overbake). Transfer to a rack to cool completely.

Apple Meringue Cupcakes image

Golden meringue crowns moist, apple-packed cupcakes for a stunning dessert.

Provided by Food Network Kitchen

Time 2h

Yield 24 cupcakes

Number Of Ingredients 15

2 1/4 cups all-purpose flour (see Cook's Note)
1 teaspoon baking soda
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon fine salt
2 sticks (16 tablespoons) unsalted butter, at room temperature
1 cup sugar
3 large eggs
1 tablespoon pure vanilla extract
1/2 cup sour cream
1 large crisp sweet apple, such as Gala, peeled, cored, and finely chopped (about 1 cup)
8 large egg whites
1 1/3 cups sugar
2 teaspoons lemon juice plus 1 teaspoon finely grated lemon zest
Pinch of cream of tartar
Pinch of fine salt

Steps:

  • Preheat the oven to 350 degrees F. Line 24 muffin cups with paper liners.
  • Whisk together the flour, baking soda, nutmeg and salt in a medium bowl. Set aside.
  • Beat the butter and sugar together, in a large bowl, using an electric mixer on medium-high speed until fluffy, about 3 minutes. Beat in the eggs, one at a time, and then the vanilla, beating until smooth.
  • Reduce the mixer speed to low and beat in half of the flour mixture until just combined. Add the sour cream, mixing to combine, and then the rest of the flour. Beat until well combined, taking care not to overmix. Stir in the chopped apples.
  • Divide the batter evenly among the prepared muffin cups, filling them almost halfway full. Bake until a toothpick inserted into the center of the cupcakes comes out clean and the tops spring back when pressed gently, about 20 minutes. Cool the cupcakes in the tin on a rack for 10 minutes then remove from the tin and cool completely. Transfer the cooled cupcakes to a baking sheet.
  • Preheat broiler on low.
  • Bring a few inches of water to a boil in a medium saucepan. Whisk together the egg whites, sugar, lemon juice and zest, cream of tartar and salt in a heat-safe bowl. Set the bowl over the saucepan, making sure the bottom of the bowl does not touch the water. Continue whisking until the mixture is hot to the touch and the sugar dissolves, about 2 minutes. Remove the bowl from the saucepan and beat, using an electric mixer at medium-high speed, until the meringue is cool and holds a stiff peak, about 7 minutes.
  • Using a spoon, offset spatula or piping bag, dollop, spread or pipe the meringue on top of each cupcake. Use the back of a spoon to create peaks and valleys in the frosting as desired.
  • Working in batches, place the cupcakes under the broiler and cook until the meringue is browned in spots, 1 to 2 minutes, watching carefully to avoid burning. Let cool.

Valuable Tips for Making Apple Cream Meringues

Apple cream meringues are a sweet and tangy dessert that is perfect for any occasion. It is a combination of a light and fluffy meringue that is filled with a rich and smooth apple cream. The dessert is delicious, but making it can be challenging. Here are some valuable tips to ensure you make the perfect apple cream meringues.
Tips for Making the Perfect Meringue
The meringue is the foundation of the apple cream meringue recipe. It is light, fluffy, and crisp, and it is essential to make it correctly. Here are some tips to ensure that you make the perfect meringue.

Use a Clean Bowl

When making meringue, ensure that you use a clean bowl. Any grease or moisture can affect the texture of the meringue, and it may not form stiff peaks. Also, ensure that the beaters or whisk are clean and dry.

Room Temperature Egg Whites

It is essential to use room temperature egg whites when making meringue. Egg whites are easier to separate when they are cold, but it is challenging to achieve stiff peaks with cold egg whites. Room temperature egg whites whip up more easily and will give the meringue a better texture.

Cream of Tartar

Cream of tartar is an acidic powder that is added to meringue to help stabilize it. It also gives the meringue a finer texture and prevents it from becoming grainy.

Add Sugar Gradually

When adding sugar to the egg whites, ensure that you add it gradually. Adding the sugar too quickly can cause the egg whites to collapse. Also, ensure that you add the sugar when the egg whites have reached the soft peak stage.

Beating Time

Beating the egg whites for the right amount of time is critical to making the perfect meringue. Beat the whites until they form stiff peaks that are glossy and smooth.

Baking Temperature

Bake the meringues at a low temperature, usually, 200°F until they are crisp and dry. High temperatures can cause the meringues to brown and crack.
Tips for Making Apple Cream
The apple cream is the filling for the meringues. It is essential to make it correctly to achieve the perfect flavor and texture for the dessert. Here are some tips to make the perfect apple cream.

Use Fresh Apples

Use fresh, ripe apples when making apple cream. Ripe apples are sweeter and have a better texture, which will make a better apple cream. If possible, use a variety of apples to give the cream a depth of flavor.

Use Cream Cheese

Adding cream cheese to the apple cream will give it a smooth and rich texture. It also complements the tangy flavor of the apple cream.

Use a Blender or Food Processor

Blending or processing the apple mixture in a blender or food processor will give the apple cream a smooth and creamy texture. Ensure that the mixture is completely smooth before adding it to the cream cheese mixture.

Add Sugar Gradually

When adding sugar to the apple cream mixture, ensure that you add it gradually. Adding too much sugar can cause the mixture to become too sweet, while not adding enough will leave the apple cream too tart.

Cool Completely

After making the apple cream, ensure that you cool it completely before adding it to the meringue. Warm apple cream can cause the meringue to become soft and deflate.
Serving Tips
Serving apple cream meringues is just as important as making them. Here are some tips to ensure that you serve them correctly.

Serve Immediately

Serve the apple cream meringues immediately after filling them to ensure that they maintain their crispness. If the meringues sit for too long, they may become soft and lose their texture.

Add Toppings

Adding toppings such as fresh fruit or whipped cream can make the dessert more visually appealing. It also adds extra flavor and texture to the dish.

Storage

Apple cream meringues can be stored in an airtight container in the refrigerator for up to two days. However, they will lose their crispness over time. Do not freeze the meringues as they will become soggy and lose their texture.
Conclusion
Making apple cream meringues is a delicate process, but it is worth the effort. The dessert is light and flavorful, and the contrasting textures of the meringue and apple cream make it a delicious dessert. The tips outlined can help you make the perfect apple cream meringues and impress your guests with your culinary skills.
