Time 1h15m

Number Of Ingredients 16

6 Tablespoons (90g) unsalted butter
1/2 cup (100g) packed dark brown sugar
1 medium apple, peeled, cored, and thinly sliced*
1 heaping cup (130g) fresh or frozen cranberries*
1/2 cup (115g) unsalted butter, softened to room temperature
1 cup (200g) packed dark brown sugar
2 large eggs, room temperature and separated
1 teaspoon pure vanilla extract
1 and 1/2 cups (188g) all-purpose flour (spoon & leveled)
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/3 cup (80ml) buttermilk*

Steps:

  • Lightly spray a 9-inch pie dish with non-stick cooking spray. Set aside. Make sure your apples are sliced and ready to go.
  • In a small saucepan, melt butter on low heat. When it begins to bubble, whisk in the brown sugar. Continue to stir until smooth. Then, leave on heat for about 2 minutes until it begins to bubble. Stir, then remove from heat and allow to briefly cool for a couple minutes. Layer the sliced apples and cranberries into the dish and pour the butter/sugar overtop. Set aside.
  • Preheat oven to 325°F (163°C).
  • In a medium bowl, toss the flour, baking powder, salt, cinnamon, nutmeg, cloves, and ginger together until combined. Set aside.
  • Using a handheld or stand mixer with a paddle attachment, beat the butter on high until creamy - about 1 minute. Add the brown sugar and beat on medium-high speed until creamed together, about 2-3 minutes. Scrape down the sides and bottom of the bowl as needed. Beat in the egg yolks and vanilla on medium speed until everything is combined, about 2 full minutes. Scrape down the sides and bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients in three additions alternating with the buttermilk, beginning and ending with the dry ingredients, and mixing each addition just until incorporated. Do not overmix. Whisk or beat the 2 egg whites until thick and foamy, about 3 minutes. Fold into cake batter. The batter will be smooth, velvety, and thick.
  • Spoon or pour batter over the apples/cranberries and bake for 40-44 minutes or until a toothpick inserted in the very middle comes out clean. Allow to cool for exactly ten minutes before inverting onto a large serving dish or cake stand. Serve warm or at room temperature. I prefer it at room temperature. Leftovers keep well covered tightly at room temperature or in the refrigerator for 2 days.

Categories     cakes, dessert

Time 1h

Yield 8 servings

Number Of Ingredients 13

4 tablespoons (1/2 stick) unsalted butter
3/4 cup brown sugar
9 ounces (2 2/3 cups) fresh cranberries
1/4 cup fresh orange juice
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
8 tablespoons (1 stick) unsalted butter, at room temperature
1 cup sugar
1 teaspoon vanilla extract
2 eggs, separated
1/2 cup whole milk
1/4 teaspoon cream of tartar

Steps:

  • Preheat oven to 350 degrees. To prepare topping: Put butter and brown sugar in a 9-inch round cake pan, and put it in the oven. As the sugar dissolves, stir to distribute the mixture evenly over the pan. When the sugar starts to caramelize, remove pan from the oven and allow to cool.
  • In a small bowl, combine cranberries and orange juice. Toss to coat berries well. Spread berries evenly in pan, and sprinkle with any juice remaining in bowl. Set pan aside, and prepare the cake batter.
  • To prepare batter: In a large mixing bowl, sift together flour, baking powder and salt. Set aside.

Spoon batter into prepared pan, and spread it evenly over cranberries. Bake until top is browned and cake pulls away slightly from edges of pan, 25 to 35 minutes. Let cake cool for 15 minutes before turning onto cake plate. Serve with slightly sweetened whipped cream, flavored, if desired, with orange liqueur.

Sweetened whipped cream is the perfect accompaniment to this slightly spicy dessert. The topping is made by simply baking cranberries placed in a layer over sugar and spices at the bottom of the pan. As the cake bakes, the sugar caramelizes, forming a rich syrup.

Valuable Tips for Making Apple Cranberry Upside-Down Cake Recipes

Upside-down cakes are moist, delicious desserts that feature a layer of fruits or nuts at the bottom of the cake. They are simple to make and can be customized with a variety of fruits and flavors. One of the most popular variations is the apple cranberry upside-down cake. Made with tart and tangy cranberries and sweet and juicy apples, this cake is a perfect balance of flavors. If you're planning to make an apple cranberry upside-down cake, here are some valuable tips to keep in mind:
Technique
1. Use the right pan: The type of pan you use can make all the difference in how your cake turns out. For an apple cranberry upside-down cake, a cast-iron skillet or a 9-inch cake pan with high sides works best. 2. Prepare the pan properly: No matter what pan you use, make sure to prepare it properly by greasing it with butter or cooking spray. This will ensure that the cake doesn't stick to the bottom of the pan and that the fruits caramelize properly. 3. Arrange the fruits carefully: While arranging the fruits on the bottom of the pan, make sure to do it carefully and evenly. This will ensure that the cake looks and tastes great when you flip it over. 4. Watch the baking time: Depending on your oven, the baking time may vary. Keep an eye on the cake while it's in the oven to ensure that it doesn't burn. The cake should be golden brown and a toothpick inserted into the center should come out clean.
Ingredients
1. Choose the right apples: For an apple cranberry upside-down cake, choose apples that are firm and crisp, such as Granny Smith or Honeycrisp. These apples provide a nice texture and balance to the tartness of the cranberries. 2. Use fresh cranberries: When using cranberries, it's best to use fresh ones instead of frozen or canned. Fresh cranberries provide a nice tartness and tanginess to the cake, and they also add a beautiful pop of color. 3. Add the right spices: Spices, such as cinnamon and nutmeg, can really enhance the flavors of the cake. Be careful not to use too much, as these spices can be overpowering. A pinch or two should be enough to give the cake a delicious aroma and taste. 4. Keep the liquid ratio in mind: When making an upside-down cake, it's important to keep the liquid ratio in mind. The fruits on the bottom of the pan will release their juices while baking, and you don't want the cake to be too soggy or dry. Make sure to adjust the amount of liquid accordingly to ensure a balanced texture.
Presentation
1. Let the cake cool: Once the cake is out of the oven, let it cool for a few minutes before flipping it over onto a serving plate. This will ensure that the cake doesn't fall apart and that the fruits stay in place. 2. Serve with whipped cream or ice cream: An apple cranberry upside-down cake is delicious on its own, but it's even better when served with a dollop of whipped cream or a scoop of vanilla ice cream. The creamy sweetness of these toppings provides a nice contrast to the tartness of the fruits. 3. Garnish with fresh herbs: To add a nice touch to the presentation, garnish the cake with fresh herbs, such as mint or rosemary. This will not only make the cake look pretty, but it will also give it a fresh and herbaceous aroma. In summary, making an apple cranberry upside-down cake is a fun and creative process. With these valuable tips in mind, you can make a delicious cake that's sure to impress. Whether you're making the cake for a special occasion or just for a sweet treat, it's a dessert that's sure to please everyone's taste buds.
