CRANBERRY, APPLE, AND FRESH GINGER CHUTNEY

Cranberry, Apple, and Fresh Ginger Chutney image

This piquant chutney is not as sweet as traditional cranberry sauce. The bite of the fresh ginger will become more pronounced as the chutney rests. If you have any left after Thanksgiving, try it in turkey sandwiches with a smear of cream cheese. Oh. My. God.

SEARED SPICED DUCK BREASTS WITH CRANBERRY-APPLE CHUTNEY RECIPE

Seared Spiced Duck Breasts With Cranberry-Apple Chutney Recipe image

Provided by á-170456

Number Of Ingredients 21

WARM CRANBERRY AND APPLE CHUTNEY:
1/2 teaspoon dried red pepper flakes
1/2 teaspoon cinnamon
1/2 teaspoon ground coriander
1/2 teaspoon salt
4 boneless skinned duck breast halves abt 1 lb total
2 teaspoons olive oil
2 teaspoons unsalted butter
1 teaspoon olive oil
1 red onion chopped
1 teaspoon minced garlic
2 tart apples unpeeled, cored, and diced
2 cups fresh or frozen cranberries
1/2 cup light brown sugar - (packed)
3 tablespoons white balsamic vinegar
1/4 teaspoon mustard seeds
1/4 teaspoon dried red pepper flakes
1/4 teaspoon ground ginger
1/8 teaspoon salt
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves

Steps:

  • For the Warm Cranberry And Apple Chutney: Heat the oil in a non-aluminum saucepan over medium-high heat. Add the onion; cook until soft, about 4 minutes. Stir in the garlic; cook 1 minute. Add the apples, cranberries, sugar, vinegar, mustard seeds, red pepper flakes, ginger, salt, allspice and cloves. Bring to a boil, reduce the heat and simmer, covered, until the fruit is tender, about 10 minutes. (This can be kept 10 days refrigerated or frozen up to 1 month. To serve warm, gently reheat, adding water if the mixture is too thick. The chutney can also be served chilled or at room temperature.) Makes 3 cups. (This chutney yields more than you'll need for this meal, so serve the rest with pork, ham, lamb or other poultry. It also makes a tasty, low-fat sandwich spread) Combine the pepper flakes, cinnamon, coriander and salt in a small dish. Sprinkle half the mix on top of the duck breasts, dividing evenly. Gently pat the seasoning in place with your hands. Heat the oil and butter in a large nonstick skillet over medium-high heat. When hot, place the breasts, seasoned-side down, in the skillet. Sprinkle the remaining seasoning over the unseasoned side of the breasts. Cook, uncovered, turning only once, until the underside is browned, about 3 minutes total for rare, about 5 minutes total for medium. (The meat becomes tough when well done.) Transfer the duck to a warm platter. Cover with foil; let rest 5 minutes. To serve, cut each breast across the grain on a slight angle. Place each on the cooked spaghetti squash, fanning out the slices. Drizzle with any pan juices. Top the duck breasts with about 2 tablespoons of Warm Cranberry Apple Chutney. Serve hot, passing any remaining warm chutney separately. This recipe yields 4 servings. Apple cranberry chutney is an all-time favorite, perfect for holiday dinners or as accompaniments with turkey, chicken, or pork. It is sweet, tart, and spicy, making it an excellent blend of flavors. Making apple cranberry chutney is not only easy, but it is also fun, and you can experiment with different flavors to make it suit your taste buds. Here are some valuable tips to remember when making apple cranberry chutney.

1. Choose the Right Apples

When making apple cranberry chutney, it is important to choose the right apples. Some apple varieties are suitable for making chutney, while others may not be the best. The best apples to use when making apple chutney are those that hold their shape when cooked. Examples of such apples include Granny Smith, Honeycrisp, and Braeburn. The texture of these apples remains firm, even after being cooked; hence they are perfect for chutney recipes.

2. Use Fresh Cranberries

Using fresh cranberries when making apple cranberry chutney is important since they are juicy and have a tart flavor that adds to the overall taste of the chutney. When buying fresh cranberries, ensure that they are firm and not bruised. Frozen cranberries can also work, but they tend to be softer and can turn the chutney into a mushy texture.

3. Spice it Up

Spices are essential when making apple cranberry chutney as they add flavor and depth. Some of the spices traditionally used in chutney recipes include cinnamon, cloves, ginger, and allspice. You can also use cumin, cardamom, and coriander to create a unique blend of flavors that suits your taste buds.

4. Add Some Heat

Adding heat to apple cranberry chutney can enhance its flavor profile. You can add heat by using chili powder, cayenne pepper, red pepper flakes, or jalapenos. However, be mindful of the heat level you add, as too much heat can overpower the other flavors in the chutney.

5. Sweeten it Up

To balance the tartness of the cranberries, it is essential to add sweetness to the chutney. Common sweeteners used in apple cranberry chutney include white sugar, brown sugar, honey, and maple syrup. You can also use other sweeteners such as agave nectar, molasses, or Stevia, depending on your preference.

6. Experiment with Different Variations

Apple cranberry chutney is versatile, and you can experiment with different variations to suit your taste buds. For instance, you can substitute apple with pear, add raisins or chopped nuts for texture, or use orange juice instead of water for a citrusy taste.

7. Make in Small Batches

It's always best to make apple cranberry chutney in small batches to prevent overcooking. Overcooking can make the chutney too thick, pasty or alter its taste. Making small batches ensures that the chutney is fresh, and you can always make more if needed.

8. Consistency is Key

The consistency of apple cranberry chutney should be neither too thick nor too watery. A perfect chutney has a slightly chunky texture and should be able to hold its shape when spooned out. To achieve a perfect consistency, cook the chutney until the liquid has reduced by half and is syrupy.

9. Store Properly

Apple cranberry chutney can be stored in an airtight container in the refrigerator for up to a month. You can also freeze it for later use. To keep the chutney fresh, always use a clean spoon each time you scoop it out of the container.

Conclusion

Making apple cranberry chutney is easy and fun, but it's essential to remember these valuable tips to ensure that your chutney turns out perfect. Choose the right apples, use fresh cranberries, and spice it up. Add some heat and sweeten it up to create a unique flavor. Experiment with different variations, make in small batches, and ensure that the consistency is just right. Store the chutney properly, and you can enjoy the taste of this delicious accompaniment for weeks to come.
