APPLE BUTTER COOKIES
My mother used to bake these mouthwatering cookies for an after-school treat. Though it's been 55 years since I first found out about them, I still savor the smell that fills the house as these cookies bake. They stay moist and fresh for a long time, or the dough can be stored in the refrigerator for several days so you can bake as you need them.-Dorothy Hawkins, Springhill, Florida

- 3/4 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
For the Apple Filling:
- 2 medium apples, peeled and finely diced
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon unsalted butter
Instructions
For the Cookies:
- Preheat the oven to 350 degrees F.
- In a large mixing bowl, cream together the butter and sugar until light and fluffy.
- Add in the egg and vanilla, and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Add the dry ingredients to the butter mixture and mix just until the dough comes together.
- Using a small cookie scoop, form the dough into 1-inch balls and place them onto a baking sheet lined with parchment paper.
- Indent the center of each cookie with your finger or thumb, creating a small well for the apple filling.
For the Apple Filling:
- In a small saucepan, combine the diced apples, brown sugar, cinnamon, nutmeg, and butter.
- Cook the mixture over medium heat until the apples are softened and the mixture has thickened, about 5-7 minutes.
- Spoon a small amount of the apple filling into each well of the cookie dough.
- Bake the cookies for 12-15 minutes, or until the edges are lightly browned.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Tips for Making Apple Cobblerstone Cookies:
- For best results, use fresh apples that are firm and juicy.
- Peel and finely dice the apples before cooking them to ensure that they are evenly distributed throughout the cookies.
- Cook the apple filling until it is thick and syrupy, but not too dry. You want it to hold together and be easy to spoon into the cookie wells.
- Use a small cookie scoop to form the cookie dough, as this will ensure that the cookies are uniform in size and bake evenly.
- Don't overbake the cookies, as they will become too dry and crumbly. Check them frequently and remove them from the oven as soon as the edges are lightly browned.
