APPLE CINNAMON FLAN

Unless fruit cake is not to your liking, I haven't served this dish yet and not had gushing compliments for it. It is a cross between a christmas cake/christmas pudding, but is served as a slice. I make mine in a 20cm ceramic fluted flan dish. If using a metal flan dish, be careful you don't burn the bottom. Served warm with whipped cream - mouthalicious!!!!

2 large firm juicy apples
1 cup caster sugar
1 1/2 cups flour
1 teaspoon baking soda (bicarbonate of soda)
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon mixed spice
1 cup dates or 1 cup raisins, are nice
1/2 cup chopped walnuts (optional)
1 large egg, beaten
125 g melted butter
1 tablespoon brown sugar, for topping
1/2 teaspoon cinnamon, extra for topping

Steps:

  • Peel and chop apples (I find that quartered and cut across the length is better than long slices).
  • Pour over sugar and leave to stand while completing rest of recipe.
  • Mix the dry ingredients together.
  • Add dried fruit and mix in well.
  • Add egg and melted butter.
  • Add apple and sugar mixture.
  • Stir all very thoroughly, until apple is distributed evenly through the mixture.
  • Do not be tempted to add extra fluids.
  • If mixture is worked together well, it should be moist enough.
  • Spread evenly into a greased 20 cm flan dish.
  • Sprinkle extra cinnamon and brown sugar over top.
  • Topping can be left off, and flan dusted with icing sugar just before serving.
  • Bake at 180 deg Celcius for 50 minutes.

Apple tart is my family's favorite dessert. I love it because it makes the house smell amazing and the tart looks so polished and beautiful (taking a few extra minutes to fan out the apples makes it look like it came from a bakery!). This is a French-style apple tart, not an apple pie, meaning a wedge of the tart is thinner and neater than a slice of all-American apple pie. Try it topped with ice cream for that delicious a la mode taste. Rolling the dough for the tart makes for a finer-textured crust, but on many occasions I have simply pressed the crust into place with great results.

1 stick unsalted butter, cut into1-inch cubes, plus 1 tablespoon, melted
11/2 cups all-purpose flour, plus extra for rolling
1/4 teaspoon kosher salt
2 tablespoons sugar
3 Granny Smith apples
1 tablespoon fresh lemon juice
1 teaspoon ground cinnamon

Steps:

  • Set the cubed butter on a plate and place it in the freezer for 15 minutes. Fill a cup with ice and water and set aside. Place 1 1/2 of the flour, 1 8 teaspoon of the salt, and 1 tablespoon of the sugar in the bowl of a food processor and pulse to combine. Take the butter out of the freezer and add it to the flour. Pulse the mixture until it looks like wet sand, about 10 seconds. Add 2 to 3 tablespoons of the ice water and pulse until the dough comes together into a ball.
  • Lightly flour your work surface and place the dough on top. Then lightly flour the top of the dough and roll to about a 10- to 11-inch circle, sprinkling more flour under and on top of the dough as necessary. Gently drape the dough over the rolling pin and transfer it to a 9- or 9 1/2-inch fluted tart pan (ideally one with a removable bottom). Fit the dough into the bottom and up the sides of the pan as evenly as possible and press off excess dough from the fluted rim. Set the tart pan on a baking sheet and place in the refrigerator for 15 minutes.
  • Preheat the oven to 350degreesF. Peel, core, and quarter the apples and then thinly slice them lengthwise. Place the apples in a large bowl and toss with the lemon juice, the cinnamon, and the remaining 1 tablespoon sugar and 1 8 teaspoon salt. Remove the baking sheet with the tart shell from the refrigerator. Arrange the apples in concentric circles so they overlap slightly. Brush the edges of the crust with the melted butter and then bake until the edges are golden and the apples have cooked down, about 1 hour. Cool for 15 minutes before slicing and serving.

1 cup sugar, divided
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
6 medium tart apples, peeled and thinly sliced

  • In a 10-in. cast-iron or other ovenproof skillet, heat 3/4 cup sugar, stirring constantly until it is liquefied and golden brown. Dot with butter. , Roll out dough to 11-in. circle; place over apples, pressing gently to completely cover. Do not flute. Bake at 400° until apples are tender and golden brown, about 50 minutes. Cool 5 minutes before inverting onto a serving plate.

1 large apple, peeled and chopped
1 teaspoon lemon juice
1 sheet refrigerated pie crust
2 tablespoons apple jelly
2 tablespoons sugar
1/4 cup cinnamon baking chips
1/3 cup sliced almonds
1 teaspoon 2% milk
ICING:
1 cup confectioners' sugar
1/4 teaspoon almond extract
1 to 2 tablespoons 2% milk

Steps:

  • Preheat oven to 400°. Toss apple with lemon juice., On a large sheet of parchment, roll crust into a 14-in. circle; transfer to a baking sheet. Spread jelly onto crust to within 2 in. of edge. Sprinkle with apple, sugar, baking chips and almonds. Fold up edge of crust over filling, leaving opening in center. Brush folded crust with milk., Bake until golden brown, 20-25 minutes. 125 g butter

3 eggs

Steps:

  • Preheat oven to 350 degree.
  • Grease a pie or flan dish.
  • Melt butter in saucepan over low heat.
  • Remove saucepan from heat.
  • In a bowl, beat eggs together with caster sugar.

1/2 recipe Quick Basic Pizza Dough, or 1 pound store-bought pizza dough, thawed if frozen
1/2 cup unsalted butter (1 stick), room temperature, cut into pieces
1 tablespoon fresh lemon juice
2 tablespoons light-brown sugar
1/4 teaspoon coarse salt
1/4 plus 1/8 teaspoon ground cinnamon
2 Granny Smith apples, peeled, cored, and very thinly sliced
1 large egg yolk
1 teaspoon granulated sugar
Ice cream (optional), for serving

Steps:

  • On a floured work surface, roll dough to a 6-by-14-inch rectangle. Dot upper two-thirds of dough with butter and fold dough in thirds, like a letter, starting with the unbuttered portion. Roll dough to a 6-by-14-inch rectangle; refrigerate on a baking sheet until firm, 1 hour (or up to 1 day). Cut dough crosswise into 4 equal rectangles. Place dough on sheet lined with parchment.
