This is a dense cake-like most coffee cakes, but very moist too....

FOR CAKE:
1 box spice cake mix
1 pkg Marie Callander's apple muffin mix or any apple muffin mix (6 oz size)
3 eggs (I used Egg Beaters)
1/2 tsp salt
1 Tbsp cinnamon
1 c yogurt (I used the one with cream on the top)
1/3 c oil
1 Tbsp instant coffee
2 fresh chopped apples (peeled and cored)
1 c chopped nuts (I used pecan, cause it's all I had on hand)
1 c almond milk
FOR CINNAMON SWIRL
1/2 c melted butter
2 Tbsp sugar
1/2 c light brown sugar
1 1/2 Tbsp cinnamon
FOR ICING (OPTIONAL)
3 Tbsp powdered sugar
1/2 tsp vanilla extract
1-2 Tbsp almond milk

Steps:

  • 1. For Cake: Sift together all the dry ingredients several times - cake and muffin mix, instant coffee, cinnamon, and salt. Set aside.
  • 2. In stand mixer, using paddle, starting on slow speed blend dry ingredients with eggs (one at a time).
  • 3. Add yogurt, milk, oil. Blend on medium speed for 2-3 minutes.
  • 4. Add apples and nuts. Blend a few more minutes until all ingredients are incorporated scraping the sides often.
  • 5. CINNAMON SWIRL (best to do this after batter has been mixed as it only takes a minute). Melt butter. Add sugars and cinnamon. If mixture is too thick add a few teaspoons of milk until the consistency of gravy.
  • 6. Pour your batters in prepared pans. For this one I used 6 mini loaf pans, filling to about 3/4 full. Test Kitchen Note: We used a 9x13 pan.
  • 7. Dollop cinnamon swirl onto the batter 2 tablespoons at a time.
  • 8. With a knife, gently swirl the cinnamon through being careful not to touch the bottom. NOTE: I learned the hard way, it sticks to the bottom and cake is difficult to get out.
  • 9. BAKE @ 350 for how however many minutes, depending on size pan. For the mini loaf pans, it took 30-33 minutes. It also depends on your oven. Test Kitchen Note: It took 40 minutes for our 9x13 pan.
  • 10. If you want an icing, with a mix whisk 3 tbsp of powdered sugar, 1/2 tsp vanilla and 1-2 tbsp of almond milk.
  • 11. Drizzle or spread over cooled cakes.

Steps:

  • In a large bowl, beat the cake mix, pudding mix, eggs, sour cream and butter on low speed for 30 seconds. Beat on medium for 2 minutes. , Pour half into a greased 8-in. square baking dish. Top with apples. Combine the sugar, nuts and cinnamon; sprinkle half over the apples. Top with remaining batter and sugar mixture. , Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

Steps:

  • Preheat oven to 350°F Spray 9x9x2" metal baking pan with vegetable cooking spray and set aside.
  • Topping: In medium bowl, combine SPLENDA, flour, cinnamon and margarine. Stir until well blended. Separate mixture into small clumps, approximately ¼ teaspoon each and place on cookie sheet. Bake 8-10 minutes. Cool to room temperature. Crumble into fine, uniform texture. Set aside.

  • In medium bowl, stir together flour, baking soda and baking powder. Add ½ cup flour mixture to margarine/egg mixture. Beat on low speed until ingredients are blended.

I modified the original recipe a little but included the original amounts in brackets so you can make my adapted version or the original. The magazine recommends serving it warm (you can rewarm slices for a few seconds in the microwave). Recipe can easily be doubled. MAKE AHEAD: Cool completely, wrap (still in the pan) in foil, and leave out at room temperature for up to one day, or freeze for up to three months. To reheat thawed cake, unwrap and bake at 250 F for 15-20 minutes. The recipe is from Robin Miller in "Cooking Light" (Nov. 2007).

2 granny smith apples, medium-large, peeled and cored, cut into 1/4-inch dice
1 1/4 cups granulated sugar

10 tablespoons unsalted butter, softened (1 1/4 sticks)
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup buttermilk (or low-fat plain yogurt)

3/4 cup walnuts, finely chopped (or pecans)

Steps:

  • Heat 1 tablespoon butter in a 10-inch skillet (preferably nonstick) over high heat until golden. Add apples, cover, and cook over high heat, stirring frequently, until they are dry and very tender, 2 to 3 minutes.

  • Add nuts, brown sugar, and remaining teaspoon cinnamon to reserved crumbs; toss with a fork or your hands until blended.
  • Sprinkle crumbs over batter, pressing lightly so that mixture adheres.
  • Bake cake until center is firm and cake tester comes out clean, 50 to 55 minutes (See Tip *).
  • Transfer cake to rack; remove pan sides.
  • Let cake cool completely, about 2 hours, before serving.
  • When completely cooled, cake can be slid off pan bottom onto serving plate.

  • *Do not insert a skewer into this cake to test for doneness until the center appears firm when the pan is shaken. If you do, the topping may squeeze air out, and the middle of the cake may sink.

  • 1. pre heat oven to 350 degree's. Grease and flour a Bundt or angel food cake pan.
  • 2. Beat butter, and sugars together. Add eggs, and vanilla. Beat on low speed until well blended. Mix in the apple sauce.

1/2 cup orange juice (any fruit juice may be used)

1 tablespoon lemon juice
3 large eggs
1 cup all-purpose flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon allspice
1/2 cup milk
1/2 cup raisins
2 medium apples, peeled & sliced
2 tablespoons honey, warmed
3 tablespoons cinnamon sugar, for topping

Steps:

  • Preheat oven to 350*.
  • Beat butter and brown sugar in large bowl until fluffy, add lemon juice & eggs & beat well.
  • In another bowl, stir together the flours, baking powder, salt and spices.
  • Fold flour mixture into brown sugar mixture, add milk & raisins; don't overbeat.
  • Pour batter into a greased 9 x 13 springform pan & Arrange apples on top, pressing them down somewhat into the batter.

Steps:

  • Heat oven to 400°F. Spray bottom only of 9-inch round cake pan with cooking spray. In small bowl, mix all streusel ingredients except butter. Cut in butter with fork until mixture is crumbly; set aside.
  • In medium bowl, stir muffin mix, water, oil and eggs just until blended (batter may be lumpy). Spread in pan. Sprinkle with streusel.
