APPLE CIDER HONEY CAKE

Apple Cider Honey Cake image

Alex Levin, the pastry chef of Osteria Morini in Washington, adapted this Rosh Hashana honey cake recipe from his grandmother, an accomplished baker, though he put his own touches on it. Mr. Levin took out the cloves, allspice and raisins, and added an apple cider compote to the batter, which moistens the cake and gives it a caramelized apple flavor that deepens the cake beyond honey and spice. With its combination of apples and honey, it's a lovely and symbolic finale for a New Year's celebration.

Time 2h

Yield 12 to 14 servings

Number Of Ingredients 14

2 pounds/910 grams Granny Smith apples (about 5 or 6 apples), peeled, cored and cut into medium chunks
3/4 cup/150 grams light brown sugar
4 tablespoons/56 grams unsalted butter, or use 1/4 cup/60 milliliters grapeseed or other neutral oil
1/2 to 1 1/2 cups/118 to 355 milliliters apple cider
3/4 cup/170 grams melted unsalted butter or 3/4 cup/177 milliliters olive oil, more for the pan
2 1/2 cups/310 grams all-purpose flour
1 teaspoon salt
1 1/2 teaspoons baking soda
3 1/2 teaspoons baking powder
2 teaspoons ground cinnamon
3 large eggs
3/4 cup/177 milliliters honey
1/4 cup/60 milliliters whiskey
Confectioners' sugar, for dusting

Steps:

  • Prepare the apple cider butter: Combine apples, light brown sugar and butter or oil in a medium saucepan over medium-high heat until mixture comes to a simmer. Reduce heat to low and cook, stirring occasionally, until mixture is reduced and appears soft and golden, 15 to 20 minutes.
  • Let mixture cool slightly, then transfer to a large measuring cup and add enough apple cider to make 3 cups/710 milliliters. Transfer mixture to a food processor or blender and purée until smooth. (This can be made up to 1 day ahead.)
  • Prepare the cake: Arrange a rack in the middle of the oven and heat to 325 degrees. Generously grease a 10-inch Bundt pan.
  • In a large bowl, whisk together flour, salt, baking soda, baking powder and cinnamon.
  • In another large bowl, whisk together eggs, prepared apple cider butter, honey, melted butter or oil and whiskey. Whisk in the dry ingredients until smooth.
  • Pour batter into prepared pan and bake for 50 to 60 minutes or until firm to the touch and a cake tester comes out clean. Cool for 30 minutes, then carefully unmold cake and let cool completely on a wire rack. Before serving, transfer cake to a platter and dust with confectioners' sugar.

For the caramel apple cider glaze:

4 oz unsalted butter
4 fl oz heavy cream

  • For the cake: Creaming method. Spray and line with parchment paper, 2 - 8" pans. One, 1/3 (1# 1.2oz) full, the other 2/3rds (2# 2.4oz) full. Bake in 350 degree (F) oven until toothpick comes out clean, around 45 minutes for the 2/3 full pan. Cool the cake layers and cut one into two equal layers. Wrap in plastic wrap separately and place in frige until ready to assemble. For the filling: peel, core and slice the apples (whatever thickness you desire). Sprinkle the dry ingredients over and saute until the apples are tender. You may add a little water if the filling begins to dry out before the apples are tender. For the glaze: place ingredients in a large sauce pot, bring to a boil, reduce to a simmer and cook for 2-3 minutes. Swirl the pan to combine ingredients if necesary. Let sit to thicken for approximately 30 minutes. To assemble: place one cake layer on a cake stand or plate, cover with 1/2 of the filling, place another cake round centered on top and repeat with remaining cake filling. Apple cider honey cake is a scrumptious dessert that combines the natural sweetness of apples and honey with the richness of cinnamon and vanilla. This cake is perfect for fall and winter season, as it contains the warm flavors that complement the cool weather. Making an apple cider honey cake isn't a difficult task, but there are some valuable tips you should consider to ensure that your cake turns out perfectly. In this article, we'll discuss some of the valuable tips you can follow when making apple cider honey cake recipes.

1. Use high-quality honey

Honey is a key ingredient in apple cider honey cake recipes, and the quality of honey you use can make a significant impact on the taste and texture of your cake. When selecting honey for your cake recipe, choose high-quality honey that is pure and unprocessed. The best honey to use is raw honey that has not been heated or pasteurized. Raw honey has a robust flavor that enhances the taste of apple cider honey cake.

2. Use fresh ingredients

Another essential tip when making apple cider honey cake is to use fresh ingredients. Fresh apples are the base ingredient for this cake, and they should be firm and ripe. When selecting apples for your cake recipe, choose those that are in season and locally grown. If possible, purchase organic apples that have not been treated with pesticides or chemicals. Fresh ingredients will ensure that your cake is flavorful and moist.

3. Choose the right flour

Choosing the right flour is crucial when it comes to making apple cider honey cake. Cake flour is the best flour to use, as it has less gluten than all-purpose flour. The reduced gluten content enables the cake to rise evenly and creates a tender texture. However, if you don't have cake flour, you can use all-purpose flour, but you'll need to reduce the amount of flour in your recipe by two tablespoons per cup.

4. Use apple cider vinegar

Apple cider vinegar is another essential ingredient in apple cider honey cake recipes. It adds moisture to the cake and enhances the flavor of the apples. When selecting apple cider vinegar for your recipe, choose one that is pure and unprocessed. Avoid using distilled or white vinegar, as they lack the flavor and nutrients found in apple cider vinegar.

5. Pay attention to the temperature of your ingredients

The temperature of your ingredients can affect the texture and consistency of your cake. To ensure that your cake turns out perfectly, make sure that all your ingredients are at room temperature before mixing. Cold ingredients can result in a dense cake, while warm ingredients can cause the cake to rise unevenly.

6. Don't overmix the batter

Overmixing the batter can cause your apple cider honey cake to be tough and dense. Mix the batter only until the ingredients are well combined. Alternately, you can also fold the ingredients together gently, which will help to preserve the texture of the cake.

7. Preheat your oven

Preheating your oven is crucial when it comes to making apple cider honey cake. The oven should be heated to the right temperature before placing the cake inside. A preheated oven will cook the cake evenly and ensure that it rises correctly.

8. Line the cake pan with parchment paper

When making apple cider honey cake, it's essential to line the cake pan with parchment paper. This will prevent the cake from sticking to the pan, and it will make clean up easier. To line the cake pan, place a piece of parchment paper in the bottom of the pan and cut to size.

9. Test the cake for doneness

Testing the cake for doneness is crucial when baking apple cider honey cake. Insert a toothpick or cake tester in the center of the cake to check for doneness. If the toothpick comes out clean, the cake is ready. If not, continue baking for a few more minutes and check again.

10. Let the cake cool before serving

Letting the cake cool before serving is essential to preserve its texture and flavor. Remove the cake from the oven and let it cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely. Once the cake has cooled, you can serve it with a dollop of whipped cream or a drizzle of honey.

Conclusion

Apple cider honey cake is a warm and inviting dessert that is perfect for fall and winter season. Making this cake a success requires following valuable tips, like using fresh ingredients, choosing the right flour, using honey and apple cider vinegar, paying attention to the temperature of your ingredients, preheating the oven, and letting the cake cool before serving.
