8 bone-in chicken thighs (3 pounds), skin removed
2 tablespoons butter
1 medium red onion, chopped
1 celery rib, chopped
2 tablespoons minced fresh parsley
Salt and pepper to taste
3 tablespoons all-purpose flour
3 cups chicken broth
1 cup apple cider or juice
DUMPLINGS:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon cold butter
1 large egg, room temperature, lightly beaten
2/3 cup 2% milk

Steps:

  • Preheat oven to 350°. In a Dutch oven, brown chicken in butter; remove and set aside. In the same pan, combine the onion, celery, parsley, salt and pepper; cook and stir until vegetables are tender. Sprinkle with flour and mix well. Add broth and cider. Bring to a boil; cook and stir until thickened, about 2 minutes. Add chicken. , Cover and bake for 45-50 minutes. Increase heat to 425°. , For dumplings, combine the flour, baking powder and salt in a bowl; cut in butter until crumbly. Combine egg and milk; stir into dry ingredients just until moistened. Drop batter into 12 mounds onto hot broth. , Bake, uncovered, at 425° for 10 minutes. Cover and bake until a toothpick inserted into a dumpling comes out clean, about 10 minutes longer.

1 cup whole milk
3 tablespoons unsalted butter
1 tablespoon canola oil
3 carrots, cut into 1/2-inch rounds
1 sweet onion, chopped
1 large sweet potato, peeled and cut into 1/2-inch cubes
2 cloves garlic, finely chopped
6 cups chicken stock or low-fat, reduced-sodium chicken broth
2 pounds boneless, skinless chicken breasts, cut into 3/4-inch cubes
2 sprigs fresh thyme
10 ounces fresh baby spinach

Steps:

  • To prepare the dumplings, in a bowl, combine the flour, baking powder, parsley and 3/4 teaspoon of salt. In a small saucepan, bring the milk and butter to a simmer over low heat; season with black pepper. Add the milk mixture to the dry ingredients and stir to combine.
  • In a second large saucepan, heat the oil over medium heat. Add the carrots, onions and sweet potatoes. Cook until the onions are translucent, 3 to 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Add the stock and bring to a boil over high heat. Reduce the heat to simmer. Add the chicken and thyme.

1/4 c chopped onion
1/4 c chopped celery
1 Tbsp olive oil
1/4 c butter
3 Tbsp flour
2 c chicken broth
1/4 c frozen peas (no need to thaw)
1 c baking mix (bisquick)
1/3 c milk

Steps:

  • 1. Slice sausage links into coins, about 1/4-inch thick.
  • 2. In a large saucepan, sauté the sausage, carrots, celery and onion in oil for 2-3 minutes until vegetables are tender. Set aside.

1 teaspoon cooking oil or butter
1 medium-size onion, chopped
2 medium-size leeks, well rinsed, trimmed and chopped
6 cloves garlic, chopped
5 cups well-seasoned chicken stock
18 small new potatoes
1 cup dry white wine
3 carrots, peeled and sliced 1/2-inch thick
Salt and freshly ground black pepper
6 ounces fresh button mushrooms
2 teaspoons fresh thyme leaves
1 pound sweet pork or chicken sausage
1/2 pound hot sausage or chorizo
1/2 pound fresh green beans, trimmed
1/4 pound sugar snap peas
Herbed dumpling batter (see next recipe)
1 tablespoon fresh lemon juice
1 tablespoon finely minced parsley

Steps:

  • Dry chicken wings on paper toweling. Heat oil or butter in heavy five-quart casserole. Add chicken wings and cook over medium-high heat until they are browned on both sides. Remove wings from the casserole.
  • Add the onion, leeks and garlic and saute over medium-low heat until they are tender but not brown.
  • While the wings and vegetables are browning, bring four cups of stock to a simmer in a saucepan and add the potatoes. Cook potatoes until tender, about 15 minutes. Remove the potatoes with a slotted spoon, cover and set aside. Keep the stock in the saucepan on the stove.
