APPLE-CHICKEN SALAD

Apple-Chicken Salad image

Salad made with Golden Delicious apples fills lettuce "bowls" for lunch or dinner; serve leftovers as an after-school snack.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken     Chicken Breast Recipes

Yield Makes about 10 half-cup servings

Number Of Ingredients 9

2 cups homemade or low-sodium store-bought chicken stock
2 boneless, skinless chicken breast halves, about 1 pound total
Coarse salt and freshly ground pepper
1/2 cup plus 2 tablespoons mayonnaise
1 celery stalk, thinly sliced crosswise (about 1/2 cup)
1/4 cup dried apricots, cut into 1/4-inch dice
1/3 cup sliced almonds with skins, toasted (omit if serving to children under 3)
1 medium Golden Delicious apple, cored and cut into 1/2-inch chunks
1 head Bibb or Boston lettuce, leaves separated (optional)

Steps:

  • Bring stock and 3 cups water to a boil in a medium saucepan. Reduce heat to medium-low, and simmer 2 minutes. Season chicken with salt and pepper; add to stock mixture. Simmer, covered, until chicken is cooked through, about 14 minutes. Remove chicken using a slotted spoon; discard liquid. Let chicken stand until cool enough to handle. Cut into 1/2-inch pieces.
  • Stir together mayonnaise, 1/4 teaspoon salt, 1/8 teaspoon pepper, the celery, apricots, almonds, if using, and apple in a medium bowl. Stir in chicken. Refrigerate chicken salad, covered, until cold, about 30 minutes. To serve in lettuce bowls, spoon about 1/2 cup chicken salad onto each leaf, using the smaller, inside leaves for kid-size portions. Any leftover chicken salad can be stored in an airtight container in the refrigerator up to 3 days.

APPLE & MANGO CURRIED CHICKEN SALAD

Apple & Mango Curried Chicken Salad image

This salad is fresh and appealing with several distinct flavors that meld together beautifully. The apple and celery add a nice crunch and there is a mild spicy kick with the addition of curry powder. For guests who enjoy curry, I would definitely entertain with this dish. It is filling, delicious and it presents well. This recipe is adapted from Good Housekeeping light and healthy recipes (2007).

Provided by A.B. Hall

Categories     Chicken Breast

Time 35m

Yield 2-4 serving(s)

Number Of Ingredients 12

1/2 lb boneless skinless chicken breast
6 tablespoons low-fat yogurt (1/4 cup plus 2 tbsp)
2 tablespoons low-fat mayonnaise
2 tablespoons salsa
1 tablespoon lime juice, freshly squeezed
1 teaspoon curry powder
1 mango, ripe (substitute mandarin orange slices, if desired)
1 apple, a small Fiji apple (if you would like more tang, use a less-sweet apple such as Granny Smith)
1 stalk celery, medium sized
4 ounces fresh mozzarella cheese
6 -8 sprigs cilantro
1 cup greens (field greens, about two small handfuls)

Steps:

  • Cook the chicken breast in an oven preheated to 350 degrees for 20-30 minutes (until no longer pink in the center).
  • As the chicken is baking, combine the yogurt, mayonnaise, salsa, lime juice and curry powder in a medium bowl. Stir to combine.
  • Peel and de-seed the mango then chop into half-inch chunks (I haven't tried this salad with mandarin orange slices, but I think they would make a nice substitution if mango is unavailable).
  • Remove the apple's core and chop into one-inch chunks. Chop the celery into 1/4-1/2 inch chunks. Cut the fresh mozzarella into one-inch chunks.
  • Add the mango, apple, celery and mozzarella to the bowl. Toss to combine.
  • Finely chop the cilantro. Add the cilantro and field greens to the bowl and stir to combine.
  • Shred the cooked chicken after it has cooled (cutting the chicken into small cubes would work as well, but shredded chicken adds a nice texture to the dish). Add to the bowl and toss.
  • Serves four as a small dish or serves two as a large dish.

CHICKEN-APPLE-WALNUT SALAD WITH HONEY MUSTARD DRESSING

Chicken-Apple-Walnut Salad With Honey Mustard Dressing image

Served at the 1870 Wedgwood Inn in New Hope Boro, Pennsylvania, this simple chicken salad combines common ingredients in a less-than-common way, and with great results. If you happen to have some cooked chicken in your fridge (or perhaps a rotisserie chicken), you could probably save time by simply shredding that and using it instead of the freshly cooked diced chicken. NOTE: Cook time is chill time for the prepared salad.

Apple chicken salad is a delicious recipe that combines the flavors of juicy apples, tender chicken, and crunchy vegetables. It is a quick and healthy meal that can be served anytime. In this article, we will provide valuable tips on how to make the perfect apple chicken salad recipes.

Choose the right chicken

The first and most important step in making apple chicken salad is to choose the right chicken. You can use any type of chicken as long as it is boneless and skinless. However, chicken breasts are the most commonly used part for this recipe because they are lean and have a mild flavor. Make sure to buy fresh chicken and not frozen. You can also opt for organic or free-range chicken.

Cook the chicken properly

Cooking the chicken properly is crucial to ensure it is tender and juicy. There are different ways to cook chicken for salad, such as grilling, baking, or poaching. Grilling is the most preferred method because it adds charred and smoky flavors to the chicken. However, baking is a healthier option as it uses less oil or butter. Poaching involves simmering the chicken in boiling water or broth until it is fully cooked. Remember to season the chicken with salt and pepper and let it cool down before slicing or shredding.

Choose fresh and crisp apples

The choice of apples is also important as they add sweetness and crunch to the salad. Choose apples that are fresh, crisp, and slightly tart. Some of the best apple varieties for chicken salad include Granny Smith, Honeycrisp, Gala, and Fuji. Make sure to wash the apples thoroughly, remove the core and dice them into small pieces.

Balance the flavors

Apple chicken salad should have a balance of flavors, including sweet, tangy, savory, and crunchy. You can achieve this by adding ingredients such as onions, celery, grapes, pecans or walnuts, and a dressing with vinegar or lemon juice. However, be careful with the amount of dressing, as too much can overpower the flavors of the salad. You can also add herbs and spices, such as rosemary, thyme, or paprika, to enhance the taste.

Add vegetables for extra crunch and nutrition

Adding vegetables to apple chicken salad not only increases its nutritional value but also adds texture and color to the dish. You can add any vegetables of your choice, such as carrots, bell peppers, cucumbers, or radishes. Make sure to slice or dice them into small pieces so they blend well with the other ingredients. You can also mix different colors of vegetables to make the salad look more appetizing.

Use fresh herbs

Adding fresh herbs to apple chicken salad can add a burst of flavor and fragrance. Some of the best herbs for chicken salad include cilantro, basil, parsley, and dill. Chop the herbs finely and sprinkle them over the salad before serving. However, be careful not to add too much, as some herbs may overpower the other flavors.

Choose the right dressing

The dressing is an important part of apple chicken salad as it brings all the flavors together. There are different types of dressings you can use, such as vinaigrette, mayonnaise, yogurt, or sour cream. Vinaigrette is a healthier option as it is low in calories and fat. You can make vinaigrette at home using olive oil, vinegar, mustard, and honey. Mayonnaise, yogurt, or sour cream dressing adds creaminess and richness to the salad. However, they are high in calories and fat. Make sure to use them in moderation and balance the flavors with vinegar or lemon juice.

Let the salad rest

Once you have mixed all the ingredients, let the salad rest in the fridge for at least an hour to allow the flavors to meld. Cover the bowl with cling wrap or a lid so the salad remains fresh. However, do not leave the salad in the fridge for too long, as it can make the vegetables soggy and the flavors may become too strong.

Conclusion

Making the perfect apple chicken salad recipe requires attention to detail and the right balance of flavors. By choosing the right chicken, apples, vegetables, herbs, and dressing, you can create a delicious and healthy meal that is perfect for any occasion. Remember to let the salad rest for some time to let the flavors develop and serve it chilled.
