CHICKEN APPLE SAUSAGE PATTIES

Chicken Apple Sausage Patties image

Imagine a sausage patty made from chicken that's just as tender, juicy, and flavorful as one made from pork. It's possible, with a little help from pancetta. Using chicken thighs makes for a significantly more succulent and tender patty, as long as you keep the meat very cold while working with it.

Time 4h50m

Yield 8

Number Of Ingredients 20

1 ½ pounds boneless, skinless chicken thighs
1 (4 ounce) package pancetta
2 teaspoons kosher salt, or to taste
1 teaspoon freshly ground black pepper
¼ teaspoon dried thyme
½ teaspoon crushed toasted fennel seeds
¼ teaspoon ground coriander
¼ teaspoon cayenne pepper
¼ teaspoon freshly grated nutmeg
2 teaspoons minced fresh sage
2 Granny Smith apples
½ tablespoon oil, or as needed
6 tablespoons butter
8 leaves fresh sage
6 tablespoons all-purpose flour
2 ½ cups chicken broth, or more as needed
1 tablespoon maple syrup
⅓ cup creme fraiche
salt and freshly ground black pepper to taste
4 buttermilk biscuits, split

Steps:

  • Cut chicken thighs into 1-inch pieces. Chop pancetta finely using a meat cleaver until paste-like in texture. Mix chicken and pancetta together. Sprinkle salt, pepper, thyme, fennel, coriander, cayenne, nutmeg, and sage. Mix until combined and place mixture on a plate; cover with plastic wrap and freeze for 15 to 20 minutes before grinding.
  • Peel and quarter apples. Grate apples into a bowl. Place grated apples in a paper towel and squeeze all the water out. Add apples to the partially frozen chicken sausage meat.
  • Place 1/2 of the chicken mixture in a food processor. Pulse on and off until mixture is slightly finer than coarse sausage. Repeat with the remaining chicken. Cover with plastic wrap and refrigerate to let the flavors develop, 4 hours to overnight.
  • Use a large ice cream scoop to portion out the meat. Flatten scoops with dampened hands to make patties about the same size as your biscuits.
  • Heat oil in a large skillet over medium-high heat. Cook patties until bottom is browned and leaves a deep brown fond in the skillet, 3 to 5 minutes. Reduce heat to medium and flip patties over. Add butter and sage leaves. Cook until patties are firm to the touch, removing leaves once they stop bubbling, about 5 minutes more. Remove patties.
  • Whisk flour into the pan; cook and stir until starting to thicken, about 1 minute. Pour in broth and bring to a boil, whisking the browned bits of food off the bottom of the skillet. Add maple syrup and creme fraiche; season with salt and pepper. Cook until gravy is spoonable and reaches desired thickness, 2 to 3 minutes more. Add more broth if gravy is too thick. Remove from heat.
  • Place biscuit halves on individual plates. Top each with a chicken sausage patty; spoon gravy on top. Garnish each with a fried sage leaf.

Apple chicken patties are a delicious and healthy meal option that can be perfect for any time of day. The dish is easy to prepare, and it can be made with a variety of ingredients to suit different preferences, making it a versatile option for any meal. However, there are some key tips to keep in mind when making apple chicken patties. In this article, we’ll discuss some valuable tips for making apple chicken patties that are flavorful, healthy, and easy to make. Tip #1: Choosing the right chicken When making apple chicken patties, it’s important to choose the right chicken. For the best results, it’s recommended to use ground chicken instead of chicken breast. Ground chicken tends to be moister than chicken breast and has a better flavor, making it ideal for making patties. When buying ground chicken, it’s essential to look for a brand that is grass-fed, organic, or free-range. These types of chicken are healthier and have a better taste than conventional chicken. Tip #2: Adding apples Adding apples to chicken patties is a great way to enhance the flavor of the dish. Apples are also a healthy ingredient that adds natural sweetness to the patties. When adding apples, it’s important to choose apples that are sweet, crisp, and slightly tart. Granny Smith apples are a good choice because they are firm, tart, and hold up well when cooked. To incorporate the apples into the patties, they should be grated finely and mixed with other ingredients to evenly distribute the flavor. Tip #3: Adding spices Adding spices to apple chicken patties can take the dish from ordinary to extraordinary. Spices not only add flavor but also provide a range of health benefits. Some spices that work well with apple chicken patties include paprika, cumin, coriander, oregano, and thyme. When adding spices, it’s important to be mindful of the heat level. Spices like cayenne pepper, chili powder, and red pepper flakes should be used sparingly, as they can easily overpower the flavor of the dish. Tip #4: Choosing the right binder A binder is an ingredient that holds the patty together. It’s important to choose the right binder for apple chicken patties to ensure that they hold their shape and don’t fall apart. Some common binders that work well with apple chicken patties include eggs, breadcrumbs, and oatmeal. For a healthier option, coconut flour or almond flour can be used as a binder. It’s essential to use the right amount of binder to ensure that the patties hold together but aren’t too dry or dense. Tip #5: Choosing the right cooking method Choosing the right cooking method is crucial for making perfectly cooked apple chicken patties. The most common methods are pan-frying, baking, and grilling. Pan-frying is the quickest and easiest method, but it requires a bit of oil to prevent sticking. Baking is a healthy option that requires minimal oil, but it takes longer than pan-frying. Grilling is another healthy option that adds a smoky flavor to the patties, but it requires a bit more time and effort. Whichever method is chosen, it’s important to cook the patties until the internal temperature reaches 165°F to ensure they are cooked through. Tip #6: Serving suggestions Finally, when it comes to serving apple chicken patties, there are many options to choose from. The patties can be served on a bun as a traditional burger or served with a side of vegetables like roasted sweet potatoes or sautéed spinach. They can also be topped with a variety of condiments like avocado, tomato, and mayonnaise. The possibilities are endless, making apple chicken patties a versatile and delicious meal option. Conclusion In conclusion, apple chicken patties are a healthy and delicious meal option that can be prepared in a variety of ways. By following these tips, anyone can make apple chicken patties that are flavorful, healthy, and easy to make. With the right chicken, apples, spices, binder, and cooking method, apple chicken patties can be a real crowd-pleaser.
