Time 3h5m

Yield 8 to 10 servings

Number Of Ingredients 19

1 piece refrigerated pie dough (half of a 14-ounce box)
2 tablespoons all-purpose flour, plus more for dusting
3 pounds crisp apples (such as Braeburn or Empire)
2/3 cup granulated sugar
2 tablespoons fresh lemon juice
3 tablespoons unsalted butter
1/2 teaspoon ground cinnamon or apple pie spice
1/4 teaspoon salt
1 1/2 cups mixed berries (such as raspberries, blueberries and blackberries)
1 1/2 cups mixed berries (such as raspberries, blueberries and blackberries)
1 cup all-purpose flour
3 tablespoons granulated sugar
1 teaspoon baking powder
1/8 teaspoon baking soda
Pinch of freshly grated nutmeg
Pinch of salt
4 tablespoons cold unsalted butter, cut into small pieces
1/2 cup buttermilk
Turbinado sugar, for sprinkling

Steps:

  • Prepare the crust: Roll out the dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate, fold the overhanging dough under itself and crimp the edge with your fingers. Chill 30 minutes.
  • Position a rack in the lower third of the oven and preheat to 350 degrees F. Line the dough with foil and fill with pie weights or dried beans. Bake until golden around the edge, about 20 minutes. Remove the foil and weights and continue baking until golden all over, 10 to 15 more minutes. Transfer to a rack and let cool completely.
  • Meanwhile, make the filling: Peel the apples; cut into 1/2-inch pieces. Toss with the granulated sugar and lemon juice in a bowl. Melt the butter in a large skillet over medium-high heat. Add the apples and cook, stirring occasionally, until slightly softened, 10 to 12 minutes. Add the flour, cinnamon and salt and stir until the juices thicken, 2 minutes. Remove from the heat and fold in the berries; let cool completely. (The filling can be made up to 2 days ahead; cover and refrigerate.)
  • While the filling cools, make the topping: Whisk the flour, granulated sugar, baking powder, baking soda, nutmeg and salt in a large bowl. Cut in 3 tablespoons butter with your fingers until it is in pea-size pieces. Add the buttermilk; stir with a wooden spoon to make a shaggy dough.
  • Spoon the filling into the crust; dot with the remaining 1 tablespoon butter. Drop large spoonfuls of the topping over the filling and sprinkle generously with turbinado sugar. Place the pie on a rimmed baking sheet. Transfer to the oven and bake until the topping is golden, 50 minutes to 1 hour. (Cover the pie with foil if it is browning too quickly.) Transfer to a rack and let cool until set, about 3 hours.

APPLE-CHERRY LATTICE PIE

Categories     dessert

Time 5h30m

Yield 8 servings

Number Of Ingredients 15

2 1/2 cups all-purpose flour, plus more for dusting
2 tablespoons granulated sugar
1/2 teaspoon salt
2 sticks cold unsalted butter, cut into small pieces
3 tablespoons ice water
3 tablespoons cold vodka
3 pounds assorted apples (such as Cortland, Granny Smith and McIntosh)
Juice of 1 lemon
4 tablespoons unsalted butter
1 cup jarred cherries in syrup or whole cherry jam
1 tablespoon all-purpose flour
1/4 teaspoon pure almond or vanilla extract
Pinch of allspice
1 large egg, lightly beaten
Coarse sugar, for sprinkling

Steps:

  • Make the crust: Pulse the flour, granulated sugar and salt in a food processor to combine. Add one-quarter of the butter; process until it disappears into the flour, about 30 seconds. Add the remaining butter and pulse until the mixture looks like cornmeal with bean-size bits of butter. Combine the water and vodka and drizzle over the flour mixture. Pulse until the dough just starts coming together but stop before it gathers into a ball. Divide evenly between 2 pieces of plastic wrap and gently pat each into a disk, using the plastic wrap to help you. (If the dough seems dry with large bits of butter, turn it out onto a work surface and use the heel of your hand to press the dough together.) Wrap tightly and refrigerate until firm, at least 1 hour and up to 24 hours.
  • Make the filling: Peel and thinly slice the apples; toss in a bowl with the lemon juice. Melt the butter in a large skillet over medium-high heat; add the apples and cook, tossing occasionally, until juicy, about 10 minutes. Remove from the heat; fold in the cherries, flour, extract and allspice. Transfer to a bowl and let cool completely, about 30 minutes.
  • Roll out 1 disk of dough into a 12-inch round on a lightly floured surface. Ease into a 9-inch pie plate; refrigerate until ready to fill. Place a piece of parchment paper on an inverted baking sheet. Roll out the remaining disk of dough into a 12-inch round, transfer to the parchment and refrigerate until firm, about 30 minutes.
  • Transfer the dough (on the parchment) to a work surface. Using a fluted pastry wheel or a chef's knife, cut the dough into 14 to 16 half-inch-wide strips. Weave into a lattice on the parchment. Slide back onto the baking sheet and refrigerate until firm, about 30 minutes.
  • Pour the filling into the crust. Gently slide the lattice off the parchment and onto the fruit, adjusting as needed; trim the excess dough if needed, leaving a 1-inch overhang. Fold the overhanging dough under itself. Brush the lattice with the beaten egg and sprinkle with coarse sugar. Refrigerate the pie 30 minutes.
  • Position a rack in the lowest position of the oven and preheat to 400 degrees F. Place the pie on a foil-lined baking sheet and bake until the crust is deep golden brown and the filling is bubbling, about 1 1/2 hours. Transfer to a rack and let cool at least 2 hours.

APPLE OR CHERRY OR BLUEBERRY PIE QUESADILLA

Apple or Cherry or Blueberry Pie Quesadilla image

A quick and easy dessert that is quite tasty. You can change the fruit filling and cheeses to suit your mood or use fresh fruit in season. If using fresh fruit, you may have to cook atop the stove for a few minutes to help break down the fruit. Add 1/4 C sugar for each 2 C fruit. You may end up with extra fruit, so make 2 Quesadillas. Use cream cheese with cherry and top with sugar. Use provolone with blueberry or blue cheese with blueberry. Very inexpensive, too.

Apple cherry berry pie is a popular dessert that combines the goodness of three delicious fruits, creating the perfect balance of sweetness and tartness. Making a perfect apple cherry berry pie requires not only the right ingredients but also careful preparation and baking. Here are some valuable tips on how to make an apple cherry berry pie that will impress your family and friends.

Choosing the Right Fruits

The key to making a great apple cherry berry pie is choosing the freshest and best-quality fruits. You want to select fruits that are firm, ripe, and flavorful. When selecting apples for your pie, go for firm and tart varieties such as Granny Smith or Honey Crisp, which will hold up well during the baking process. For the cherries, look for dark-colored, sweet cherries like Bing, Rainier, or Lapin. Blueberries, raspberries, and strawberries are popular choices for the berry component of the pie. Make sure to give them a good rinse before using them.

Prepping the Fruits

Once you have selected your fruits, the next step is to prepare them for the pie. For apples, peel, core and slice them into even chunks or thin slices. For the cherries, pit them by slicing them in half and removing the pit with a small knife or a cherry pitter. With the berries, simply give them a gentle wash and remove any stems or leaves. Once you have prepped your fruits, combine them in a bowl and toss them with sugar, lemon juice, and any other spice or flavoring you like.

Choosing the Right Pie Crust

The crust is an important part of the pie, and it is essential to choose the right one. Homemade pie crust made from scratch is always best, as it is flakier and more flavorful than store-bought crusts. However, if you do not have the time or the skills to make your own crust, you can opt for pre-made store-bought options. Look for frozen or refrigerated crusts that are made with natural and high-quality ingredients.

Preparing the Pie Crust

Before you begin assembling your pie, you need to properly prepare the crust. If you are making your own crust, you will need to roll it out to the appropriate thickness and size to fit your pie dish. Make sure to sprinkle some flour on your surface and rolling pin to prevent sticking. If you are using a pre-made crust, follow the instructions on the package to thaw or bake it before filling it with the fruit mixture.

Assembly

Once you have prepped your fruits and crusts, it is time to assemble the pie. Start by lining your pie dish with one of the pie crusts, making sure to press it firmly against the sides and bottom of the dish. Pour your fruit mixture into the crust and spread it evenly. Cut the second crust into strips or shapes and lay it over the top of the fruit mixture, creating a lattice or any desired design. Brush the top of the crust with an egg wash, sprinkle some sugar on top, and cut a few slits on the surface to allow steam to escape.

Baking

It is time to bake your pie. Preheat the oven to 375 degrees F and bake the pie for about 45-50 minutes, or until the crust is golden brown and the filling is bubbly. If the crust begins to brown too quickly, cover it with a piece of foil. Once done, remove the pie from the oven and let it cool for at least 30 minutes before serving.

Serving

Once your pie has cooled, it is time to serve it. Apple cherry berry pie pairs well with vanilla ice cream, whipped cream, or a dollop of crème fraiche. Slice the pie into even wedges and serve it on plates or bowls. Enjoy it while still warm and gooey!

Conclusion

Making an apple cherry berry pie may seem daunting, but with the right ingredients and preparation, it is a simple dessert that anyone can master. These valuable tips should help you make the perfect pie that will be sure to impress your guests. Remember to always use fresh and high-quality ingredients, prepare your fruits carefully, choose the right crust, assemble your pie with care, and bake it to perfection. With these tips, you will have a delicious and delightful apple cherry berry pie that is sure to be a crowd-pleaser.
