3 tablespoons sugar
1/4 teaspoon vanilla extract
6 tablespoons all-purpose flour
FILLING:
3 ounces cream cheese, softened
2 tablespoons beaten egg
1/4 teaspoon vanilla extract
2/3 cup thinly sliced peeled tart apple (1/8-inch slices)
2 teaspoons sugar
1/4 teaspoon ground cinnamon
2 tablespoons slivered almonds
Whipped cream and ground nutmeg, optional

Steps:

  • In a small bowl, cream butter and sugar; beat in vanilla. Stir in flour. Press onto the bottom and 1 in. up the sides of a 6-in. springform pan coated with cooking spray; set aside. , For filling, in a small bowl, beat the cream cheese, egg and vanilla. Pour over crust. In a bowl, combine the apple, sugar and cinnamon; arrange over filling. Sprinkle with almonds. , Place pan on a baking sheet. Bake at 350° for 30-35 minutes or until apples are tender. Cool on a wire rack. Remove sides of pan. Garnish with whipped cream and nutmeg if desired. Refrigerate leftovers.

This sweet and savory apple tart is both substantial and sophisticated. The chewy, pizza-like crust is fortified with three kinds of flour. The topping is a comforting, mellow jumble of sweet roasted apples and shallots scented with thyme and zipped up with pungent blue cheese.

1 (1/4-ounce) envelope active dry yeast (2 1/4 teaspoons)
5 grams sugar (1 teaspoon)
150 grams all-purpose flour (1 1/2 cups), more as needed
55 grams whole wheat flour (1/2 cup)
60 grams fine cornmeal (1/2 cup)
10 grams fine sea salt (2 1/4 teaspoons), more as needed
1/2 cup extra-virgin olive oil, more as needed
2 1/4 pounds apples, cored, quartered and sliced 1/4-inch thick
3/4 pound shallots, peeled, trimmed, and sliced 1/4-inch thick
1/4 teaspoon black pepper, more as needed
5 thyme branches
3/4 cup finely crumbled blue cheese
Flaky sea salt

Steps:

  • Place 3/4 cup lukewarm water in a large bowl. Sprinkle yeast and sugar over water. Let stand until frothy, about 5 minutes.
  • In another large bowl, whisk together both flours, cornmeal and 8 grams (1 3/4 teaspoons) salt. Make a well in center of dry ingredients; stir in yeast mixture and 1/3 cup oil until mixture is combined. If the dough seems dry, add a little more water. Turn dough out onto a lightly floured surface and knead gently until dough is smooth and elastic, about 7 to 10 minutes. Or, knead in a mixer or food processor fit with the dough blade for 3 to 5 minutes. Transfer to a lightly oiled bowl and cover loosely with plastic wrap. Allow to rest at room temperature until dough has doubled in volume, about 1 hour.
  • While dough rises, heat oven to 425 degrees. In a large bowl, toss together apples, shallots, 1/4 cup oil, 2 grams ( 1/2 teaspoon) salt, the black pepper and thyme. Spread onto two large baking sheets. Roast, tossing occasionally, until mixture is tender and golden, about 30 minutes.
  • Increase oven temperature to 450 degrees. Lightly oil a large rimmed baking sheet. Punch down dough and transfer to baking sheet. Using a rolling pin or your fingers, roll or stretch dough to make an even layer about 3/16-inch thick. Scatter apple-shallot mixture over crust. Scatter cheese on top. Drizzle with oil and season with flaky sea salt and black pepper. Transfer pan to oven and bake until crust is golden brown and cheese is just melted, 17 to 25 minutes. Cool slightly, then cut into squares and serve.

This is a super simple recipe and everyone loves it. The cream cheese dough is not rolled but simply pressed into a rough round. This is the richest and most delicious pastry dough I know. 2 large tart apples, such as granny smiths
2 tablespoons strained fresh lemon juice
1/4 cup sugar, plus
2 tablespoons sugar
1/4 teaspoon ground cinnamon
4 ounces chilled cream cheese, cut into 6 pieces
1/2 cup chilled unsalted butter, cut into 8 pieces
1 cup unbleached all-purpose flour, plus
extra unbleached all-purpose flour, for shaping
1/2 cup sugar
1/8 teaspoon salt
1 large egg yolk, lightly beaten for brushing rim of the crust
vanilla ice cream (optional)
1 1/2 cups heavy cream, chilled (optional)
3 tablespoons confectioners' sugar (optional)
1 teaspoon pure vanilla extract (optional)

Steps:

  • Preheat the oven to 400 degrees.
  • TO MAKE THE FILLING: Peel the apples and cut them in half.
  • Remove the cores with a paring knife.
  • Cutting from blossom end to stem end, slice each half into 1/4 inch thick slices.
  • Combine the apple slices with the lemon juice, 1/4 cup of the sugar, and the cinnamon in a large mixing bowl.
  • Stir to combine.
  • Let the apples stand until the sugar is dissolved, about 15 minutes, stirring once or twice.
  • Place a shaped large dough round on a baking sheet.
  • Arrange the apples slices in 2 concentric circles on the large dough round or in one circle on the small rounds, overlapping the apple slices slightly.
  • Brush the rim of the crust with the egg yolk.
  • Sprinkle the apples with the remaining 2 tablespoons sugar.
  • Bake until golden, 30 to 35 minutes.
  • Serve warm or at room temperature with Vanilla Whipped Cream or ice cream on the side.
  • Rustic Apple Tart is best served on the day it is made.
  • TO MAKE THE CHEESE TART DOUGH: Line a baking sheet with parchment paper.
  • Place the cream cheese, butter, 1 cup flour, salt, and sugar in a food processor.
  • Process until the dough just comes together.
  • It will be sticky.
  • Sprinkle the parchment paper with flour.
  • Turn the dough out onto the sheet and, with floured hands, press the dough into a rough 10-inch circle or four 5-inch circles.
  • Roll about 1/2 inch of the edge of the circle inward to create a lip to catch the juices.
  • Refrigerate the crust for 1 hour or wrap the baking sheet in plastic and refrigerate it for up to 24 hours until you are ready to use it.
  • Shaped Rich Cream Cheese Tart Dough, wrapped in plastic, may be frozen for up to 2 months and used directly from the freezer.
  • TO MAKE VANILLA WIHPPED CREAM: Combine the cream, sugar, and vanilla in a large mixing bowl.
  • With an electric mixer fitted with a whisk attachment, whip on high speed until the cream just holds stiff peaks.
  • Do not over whip.
  • Use immediately, or refrigerate it, wrapped in plastic wrap, for up to 6 hours.
  • Whisk it again for a couple of seconds before using.
  • NOTE: If you are having eight or fewer people for Thanksgiving, double this recipe and make eight individual tarts.
  • The dough can be made and shaped weeks ahead of time, and the rest of the prep is minimal, leaving lots of time to prepare the rest of the meal.

1 prepared pie pastry (such as Pillsbury® Pie Crust)
1 (21 ounce) can apple pie filling
7 ½ ounces part-skim ricotta cheese
1 egg, beaten
1 ½ ounces shredded Cheddar cheese
¼ cup all-purpose flour
3 tablespoons brown sugar
1 teaspoon salt
1 teaspoon ground cinnamon
1 tablespoon butter, softened

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Roll out pie crust lengthwise to fit into the bottom a 13x9-inch baking dish with a good 1/2-inch of the crust up all sides.
  • Mix apple pie filling, ricotta cheese, egg, and shredded Cheddar cheese together in a bowl; pour over the pastry and flatten into a smooth layer.

1 baguette
24 ounces goat cheese (more or less to taste)
3 tart apples
4 tablespoons heavy cream
pepper
herbes de provence

Steps:

  • Cut the baguette in half lengthwise.
  • Drizzle the cream onto both halves of the bread.
  • Peel, core and thinly slice the apple.
  • Spread the apple slices on the bread.
  • Spread the goat cheese over the apple slices. (Depending on the age of the goat cheese, you may have better luck putting the cheese on in slices.).
  • Sprinkle with pepper and Herbes de Provence.
  • Bake in 350 oven for about 10 minutes, then broil until cheese browns slightly.
  • Cut each half into about 12 pieces. (These can be assembled individually on precut bread slices if you prefer.).

4 endive, preferably red, leaves separated

  • Preheat oven to 300°F. Toast pecans on a rimmed baking sheet, tossing halfway through, until slightly darkened and fragrant, 12-15 minutes. Let cool. Toss in a medium bowl with blue cheese, oil, honey, lemon juice, salt, and pepper.
  • Dressing and Assembly
  • Whisk apple juice, vinegar, lemon juice, oil, and 1/4 tsp. lemon zest in a small bowl; season dressing with salt.
  • Toss endive in a large bowl with half of dressing; season with salt.
  • Divide nut salsa among plates and arrange salad on top. Spoon remaining dressing onto endive and grate some lemon zest over top to finish.

1 pie crust, to fit a 9-inch pan
1 (7 ounce) box odense almond paste
8 ounces cream cheese, room temperature
1/4 cup sugar
1 large egg
1/2 teaspoon grated lemon rind
1 pinch salt
2 tart apples, peeled, cored and cut into thin slices
1/4 cup brown sugar
1/2 teaspoon cinnamon
3 tablespoons apricot jam

Steps:

  • Preheat oven to 375°F.
  • Roll out pie crust to a line tart pan, carefully pressing into corners and up sides.
  • Between two sheets of wax paper, roll the Almond Paste into a 9-10 inch circle.
  • Lay the Almond Paste circle over the pie shell and gently press into it. With knife, remove any excess pie shell or Almond Paste from edge of tart pan, making it even.
  • Beat cream cheese, sugar, egg, lemon rind and salt until light and fluffy, and spoon evenly onto crust.
  • In a bowl, toss together the sliced apples, brown sugar, and cinnamon. Layer apple slices over cream cheese mixture.
  • Bake for 40-45 minutes or until cream cheese is set and slightly puffed. Set pan on wire rack to cool.
  • In a microwave or small saucepan, melt apricot jam with one tablespoon water. Brush apples for a shiny beautiful glaze. Unmold when cool. Serve room temperature or chilled.

2 tablespoons raspberry jam (regular or light)
1 cup low-fat ricotta cheese
6 tablespoons granulated sugar, divided

4 medium apples, peeled, thinly sliced
1/2 teaspoon ground cinnamon

Steps:

  • Place 2 sheets of phyllo in centre of a 9-inch pie plate, allowing edges to overhang. Brush lightly with butter. Repeat twice.
  • Spread bottom of phyllo with jam.
  • Whisk together cheese, 3 tablespoons sugar, lemon rind and egg; pour over jam.

3 Jonagold apples, halved and cored
1 pound sugar
16 ounces water
16 ounces raw green apple puree
16 ounces sparkling cider
10 ounces simple syrup
5 ounces golden raisins
6 ounces white grape juice
4 ounces apple juice
2 ounces sugar
1/2 vanilla bean, split and scraped
6 Jonagold apples, peeled, cored and cut into 12 slices
3 1/2 ounces sugar
2 ounces water
1 teaspoon light corn syrup
1 ounce softened butter
14 ounces puff pastry
12 ounces cream cheese
8 ounces fresh goat cheese
4 ounces sugar
1 vanilla bean, split and scraped
12 ounces mascarpone
4 eggs

Steps:

  • Preheat oven to 200 degrees F.
  • To make the apple chips, slice the apples thinly on a mandolin. In a saucepan, bring the sugar and water to a boil, add the apple slices, and blanch for 30 seconds. Remove apples, place on a cookie sheet lined with parchment paper, and bake for 2 hours, or until crisp.
  • To prepare the apple sorbet, combine all of the ingredients together and strain. Freeze the mixture in an ice cream machine.
  • To make the apple sauce, combine the raisins, grape juice, apple juice, sugar, and vanilla seeds, and bring the mixture to a simmer, stirring occasionally for 5 minutes. Reduce the heat to low, cook gently until the mixture is reduced by half, about 35 minutes. Let sauce cool at least 15 minutes before serving, or store in refrigerator.
  • Preheat oven to 375 degrees F.
  • To make the apple tart tatin, peel, core and slice the apples thinly. Cut the butter into small pieces. In a saucepan, combine the sugar and water, and cook to caramel stage, washing down the sides as necessary with a brush and water. Add corn syrup. Remove the pan from the heat and whisk in the butter until melted and smooth. Pour an equal amount of the sauce into 6 (2-inch) ramekins. Arrange the apple slices over the caramel, filling the ramekins.
  • Roll the puff pastry out, and using a cookie cutter, cut out 6 (2 1/2-inch) circles, and dock the dough using a fork. Drape 1 pastry circle over each mold, and tuck the edges in.
  • Place the molds on a baking sheet, and bake for about 20 minutes, or until the pastry is puffed and golden. Allow the tarts to cool for at least 1 hour.
  • Preheat oven to 290 degrees F.
  • To make the goat cheese timbale, combine the cream cheese, goat cheese, sugar, and vanilla in a mixer using a paddle attachment. Add the mascarpone and eggs, and mix well. Spoon the mixture into 6 (2-ounce) timbale molds, cover with foil, and prick the foil with a fork. Place in a baking pan with water, and bake for 10 minutes. Rotate the molds and lift the foil to allow the steam to escape. Replace the foil, and bake for 8 minutes more.
  • To serve, reheat the apple tatins, and unmold onto a dessert plate. Unmold the timbale next to the tatins. Make the Napoleons by layering an apple chip with a small scoop of sorbet, adding another apple chip on top, a scoop of sorbet, and topped with a third apple chip. Place a bit of the apple raisin sauce on top of the goat cheese timbales, and drizzle some sauce around the timbales and tart.

8 tablespoons (1 stick) cold unsalted butter, cut up

For the filling:
Two 8-ounce packages cream cheese, softened
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/4 teaspoon nutmeg
1 tablespoon cider vinegar
1/2 cup powdered sugar
For the topping:
2 Granny Smith or Golden Delicious apples, peeled, cored and sliced
1/2 cup packed light brown sugar
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 teaspoon cider vinegar
1/4 cup golden raisins
2 tablespoons cornstarch
2 tablespoons water
1/2 cup toasted walnuts, optional

Steps:

  • Heat the oven to 375 degrees. Coat a 9-inch removable-bottom tart pan with baking spray. To make the crust, in a food processor pulse together the flour, sugar and salt. Add the butter, then pulse together, adding cold water as needed until a meal forms that sticks together easily when you squeeze it. Press the mixture into the prepared tart pan, making sure to press the dough up the sides. Prick the bottom of the crust with a fork. Bake for 15 to 20 minutes, or until the edges just start to turn golden and the center is slightly firm to the touch. Cool on a wire rack. While the crust cools, prepare the filling. In the bowl of an electric mixer, beat together the cream cheese, cinnamon, vanilla, nutmeg, vinegar and powdered sugar until smooth. Spoon the mixture into the cooled tart shell and smooth the top. Refrigerate while making the topping. To make the topping, in a medium skillet over medium-high heat, combine the apple slices, brown sugar, salt, cinnamon, vinegar and raisins. Cook until the apples are tender, about 5 minutes. In a small bowl, stir together the cornstarch and water. Add this mixture to the skillet, stirring constantly until the mixture is thickened, about 2 minutes. Remove from the heat and allow to cool slightly. Spoon the apples over the top of the tart. 3 tablespoons butter
2 medium shallots, finely chopped (about 1/3 cup)
1 medium apple (or pear), peeled and cut into 1/4 inch slices (about 1 cup)
1/4 cup chopped pistachio nuts
2 tablespoons sweetened dried cranberries.
1/4 cup crumbled blue cheese (1 oz).
1 teaspoon fresh thyme leaves.

Steps:

  • Heat oven to 450 degrees. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch tart pan with removable bottom. Bake 8 to 10 minutes or until lightly browned. Meanwhile, in 8 inch skillet, melt butter over medium heat. Add shallots, cook 2 to 4 minutes stirring occasionally, until tender. Remove from heat. Arrange apple slices in concentric circles in a single layer in crust. Spread butter mixture over apples. Bake 15 to 20 minutes. Sprinkle nuts, cranberries, cheese and thyme over apples. Steps:

8 ounces sugar
1 lb butter
2 ounces eggs
1 1/2 lbs pastry flour
1 1/2 lbs cream cheese
6 ounces sugar
1/8 ounce lemon zest
6 ounces eggs
2 lbs granny smith apples, peeled, cored, thinly sliced
9 ounces sugar
3 ounces cinnamon

Steps:

  • Tart:.
  • Cream Sugar and Butter with paddle until fluffy.
  • Add Eggs in one at a time to full incorporate.
  • Slowly add Pastry Flour.
  • Wrap and refrigerate for at least six hours.
  • Roll out 1/2 in thick.
  • Place in Tart shell. Make sure there are no air bubbles.
  • Cream Cheese Filling:.
  • Cream Sugar and Cream Cheese using paddle attachment.
  • Add lemon zest.
  • Add eggs in one at a time to fully incorporate.
  • Spread filling in an unbaked tart shell.

60 grams fine cornmeal (1/2 cup)
10 grams fine sea salt (2 1/4 teaspoons), more as needed
1/2 cup extra-virgin olive oil, more as needed
2 1/4 pounds apples, cored, quartered and sliced 1/4-inch thick
3/4 pound shallots, peeled, trimmed, and sliced 1/4-inch thick
1/4 teaspoon black pepper, more as needed
5 thyme branches
3/4 cup finely crumbled blue cheese
Flaky sea salt

Steps:

  • Place 3/4 cup lukewarm water in a large bowl. Sprinkle yeast and sugar over water. Let stand until frothy, about 5 minutes. 2. In another large bowl, whisk together both flours, cornmeal and 8 grams (1 3/4 teaspoons) salt. Make a well in center of dry ingredients; stir in yeast mixture and 1/3 cup oil until mixture is combined. If the dough seems dry, add a little more water. CRUST:
1 c all purpose flour
1/3 c confectioners (powdered or icing) sugar
1/2 c cold unsalted butter, cut into small pieces
FILLING:
1 oz 8 oz cream cheese, at room temperature
1/4 c granulated white sugar
1 large egg
1/2 tsp prue vanilla extract
TOPPING:
1/4 c granulated white sugar
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
4 c granny smith apples, peeled and cut into ¼" slices (about 3-4 large apples
1/3 c sliced almonds or walnuts, you're choice

Steps:

  • 1. Preheat oven to 450 degrees F and place rack in center of oven. Grease a 9 inch springform pan.
  • 2. Crust: In the bowl of your food processor place the flour and sugar. Pulse to blend together. Add butter and pulse until dough just begins to come together. Pat the dough onto the bottom and one inch up the sides of the pan. Cover with plastic wrap and place in refrigerator while you make the filling. Filling: In a food processor process the cream cheese until smooth. Add the sugar and mix well. Blend in the egg and vanilla extract and process until smooth. Remove the crust from the fridge and pour in the filling. Return to refrigerator while you prepare the topping.
