APPLE CINNAMON CHEESE BALL
One of my friends made something similar to this at a party, and I loved it. I asked for the recipe but lost it, and ended up trying to make it by memory. It may not be the original recipe, but its darn good! It has a sweeter taste than your average cheese ball. Excellent with Sesame Seed Crackers.

Steps:
- In medium to large bowl, combine cream cheese, cheddar cheese, and cinnamon. Beat until well blended.
- Stir in apples until evenly distributed.
- Shape mixture into a ball by rolling it around inside the bowl.
- Once ball is formed, pour crushed nuts into a second bowl, and roll cheese ball in the crushed nuts until the outside is covered.
- Presenting the cheese ball on a plate, place cinnamon stick and bay leaf in the top of the ball to make it look like an apple.

This is an adorable little appetizer that's fun to make, fun to show off, and fun to eat. And it's tasty to boot. I understand this came from Southern Living, October 1998. Be sure to soften the cream cheese beforehand for ease of processing.

Steps:
- Process first 4 ingredients in a food processor until smooth, stopping to scrape down sides. Chill 30 minutes.
- Shape cheese mixture into a ball, and make an indentation in the top to resemble an apple. Chill ball 30 minutes.
- Coat ball heavily with paprika; cover and chill 1 hour.
- Insert cinnamon stick and bay leaf into indentation to resemble apple stem and leaf. Serve with assorted crackers.

CARAMEL APPLE CHEESE BALL
One of my favorite treats is caramel and apples, most usually just the store-bought caramel will do. I'm not terribly fussy when it comes to something like that. However, if I'm entertaining, which I used to do quite a bit, I want to go a bit farther than a tub of dip and a cut-up apple. This was delicious and when I read the recipe in gourmet class, could NOT wait to try it. The first time I got to sample it, I didn't make it; the girl next to me did. She didn't like it. I told her she was nuts. It's a bit unusual for a cheese ball, but hey, who says the norm is always the way to go?? The cheeseball is an alternative to "straight" dipping apples. I like to drizzle the caramel on top of the nuts when serving. I have also just spread the mixture on a graham cracker and topped with an apple slice. It's up to you to use the caramel. Passive time is refrigerator time, but is very approximate.

- Soften cream cheese. Mix in sugars and add vanilla. Add nuts. Add powdered sugar; more may be needed, depending on thickness. Cover with plastic wrap and refrigerate until firm enough to shape. Keep in mind this is very soft but the end result is fabulous. After refrigerated roll into two balls. Roll balls in additional chopped peanuts then drizzle with caramel sauce. Serve with apple slices, vanilla wafers and graham crackers.

- Toast walnuts in the oven or in a skillet on the stovetop over medium-high heat just until browning starts, stirring often; about 5 minutes. Do not let them get too dark.
- Remove and let them cool completely. Chop or crush walnut into small pieces using a rolling pin (or anything else you have on hand).
- In a medium mixing bowl, stir together softened cream cheese and cheddar cheese until well incorporated.
- Mix in diced apple, nutmeg and caramel until ingredients are evenly incorporated. Use hands to roll into a ball shape.
- Spread walnut pieces on a plate or cutting board, and roll cheese ball to evenly coat the outside. Drizzle top with extra caramel sauce and serve with crackers. Enjoy!
