Time 40m

Yield 35 scones

Number Of Ingredients 12

3 cups all-purpose flour
6 tablespoons sugar
1 tablespoon baking powder
Pinch kosher salt
1 1/2 sticks very cold butter, cut into pea-size pieces
2 cups Irish Cheddar, grated
1 cup heavy cream
2 teaspoons malt vinegar
2 Granny Smith apples, julienned

  • Add 1 1/2 cups of the Cheddar and pulse, pulse, pulse, while slowly drizzling in the cream, until the dough starts to come together.
  • Form the dough into a disk, and transfer to a floured work space. Gently roll the dough with a rolling pin into a 1-inch-thick rectangle. Cut out 35 pieces of dough, using a 1-inch-diameter ring mold, and transfer to a parchment-paper-lined sheet pan.

APPLE CHEDDAR SCONES

Scones, in my book, get a bad rep. Most people think they are flavorless rocks. In reality, scones are the perfect blend of muffin and biscuit. The key to a perfect scone is to NOT over mix. Scones should be mixed just enough that the dough starts to bind. That's it! You can then form, by hand, a flat circle and roll out to...

Categories     Other Breakfast

Time 1h10m

Number Of Ingredients 10

2 large firm, tart apples (granny smiths work great)
11/2 c all purpose flour
1/4 c granulated sugar (plus a little for dusting)
1/2 Tbsp baking powder
1/2 tsp salt
6 Tbsp cold butter (not margarine) , diced
1/2 c shredded cheddar (i use mild cheddar but sharp works well for more flavor)
1/4 c heavy cream
2 large eggs (1 for batter & 1 for wash)
(if desired, cinnamon and sugar mixture to sprinkle on after egg wash instead of plain sugar.)

Steps:

  • 1. Preheat oven to 375 degrees F. Line baking sheet with parchment paper.
  • 2. Peel, core and slice apples into sixteenths. Place them in a single on prepared baking sheet. Bake in preheated oven for about 20 minutes or until the slices are dry to the touch and slightly colored. Allow to cool completely.
  • 3. Meanwhile, in a separate bowl, sift together flour, sugar, baking powder and salt. Set aside.
  • 4. In a separate bowl, blend together butter, cheese, cream and one egg.
  • 5. Coarsely chop cooled apple slices and stir into butter mixture.
  • 6. Mix butter mixture into flour mixture just until it begin to come together. (I mix with my hands so I am sure to not over mix.) It's ok to have large chunks of butter as this will add moisture to the scone as it bakes.
  • 7. Turn dough onto a lightly floured surface, and mold into a disc shape. Flour your rolling pin (or press it out with your fingers) and roll to about 1/2 inch in thickness. Cut into 6 triangular pieces.
  • 8. Line your baking sheet with parchment paper again. Place each scone on prepared pan leaving roughly 2 inches between the scones.
  • 9. Beat remaining egg in a bowl and brush on each scone and sprinkle each scone with sugar or cinnamon and sugar, if you prefer. Bake @ 375 degrees F. for about 20-30 minutes until firm and golden brown. Cool on wire rack.
  • 10. These freeze well prior to baking. To prepare from frozen, brush with egg wash, sprinkle with sugar and bake as above but for perhaps a little longer.

APPLE CHEDDAR SCONES

Apple Cheddar Scones image

These are wonderfully light and moist scones- a perfect meeting of sweet and savoury. The recipe is from the fabulous Dorie Greenspan and is printed in her cookbook "Baking: From My Home To Yours".

Provided by blucoat

Categories     Scones

Time 40m

Yield 12 scones

Number Of Ingredients 12

1 large egg
1/2 cup cold buttermilk
1/4 cup cold apple cider or 1/4 cup unsweetened apple juice
1 3/4 cups all-purpose flour
1/3 cup yellow cornmeal, preferably stone-ground
2 tablespoons sugar
1 tablespoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cold unsalted butter, cut into small pieces
3/4 cup grated cheddar cheese
1/2 cup finely diced dried apple (can also use fresh diced apples)

Steps:

  • Getting reading: Center a rack in the oven and preheat the oven to 400 degrees F. Line a baking sheet with parchment or a silicone mat.
  • Stir the egg, buttermilk and apple cider together.
  • Whisk the flour, cornmeal, sugar, baking powder, baking soda and salt together in a large bowl. Drop in the butter and, using your fingers, toss to coat the pieces of butter with flour. Quickly, working with your fingertips or a pastry blender, cut and rub the butter into the dry ingredients until the mixture is pebbly. You'll have pea-size pieces, pieces the size of oatmeal flakes and pieces the size of everything in between - and that's just right.
  • Pour the liquid ingredients over the dry ingredients and stir with a fork just until the dough, which will be very wet and sticky, comes together. If there are still some dry ingredients in the bottom of the bowl, stir them in, but try not to overdo the mixing. Stir in the grated cheese and dried apple.
  • Still in the bowl, gently knead the dough by hand, or turn it with a rubber spatula 8 to 10 times. Then, because the dough is very sticky, the easiest thing to do is to turn it out onto a lightly floured work surface, pat it into a rectangle about 1/2 inch thick and, using a dough scraper or a chef's knife, cut it into 12 roughly equal pieces; place on the baking sheet. Alternatively, you can just spoon out 12 equal mounds onto the baking sheet. (At this point, the scones can be frozen on the backing sheet, then wrapped airtight. Don't defrost before baking - just add about 2 minutes to the baking time.).
  • Bake the scones for 20 to 22 minutes, or until their tops are golden and firmish. Transfer them to a rack and cool for 10 minutes before serving, or wait for the scones to cool to room temperature. (Or you can let them cool for about 3 minutes, and enjoy them while the cheese is still warm and gooey!).

APPLE AND CHEDDAR SCONES

Apple and Cheddar Scones image

I got this recipe from the cooking blog, Smitten Kitchen. I made these for breakfast for my family and they loved them! The scones are perfect for autumn.

Provided by elisechristiane

Categories     Scones

Time 1h50m

Yield 6-8 serving(s)

Number Of Ingredients 9

2 firm tart apples
1 1/2 cups all-purpose flour
1/4 cup sugar, plus 1 1/2 tablespoons for sprinkling
1/2 tablespoon baking powder
1/2 teaspoon salt plus additional for egg wash
6 tablespoons unsalted butter, chilled and cut into 1/2-inch cubes plus additional for baking sheet if not lining it with parchment
1/2 cup sharp cheddar cheese, shredded (white is recommended, I assume for aesthetics)
1/4 cup milk
2 large eggs

Steps:

  • Position a rack at the center of oven and preheat oven to 375 °F. Line baking sheet with parchment paper.
  • Peel and core apples, then cut them into one-sixteenths. (I assumed this meant chunks, not slivers.) Placed them in a single layer on a baking sheet lined with parchment paper and bake them until they take on a little color and feel dry to the touch, about 20 minutes. They will be about half-baked. Let them cool completely. (You can speed this up in the fridge, as I did.) Leave oven on.
  • Sift or whisk flour, sugar, baking powder and salt together. Set aside. Place butter in the bowl of an electric mixer with a paddle attachment, along with cooled apple chunks, cheese, cream and one egg. Sprinkle flour mixture over the top and mix on low speed until the dough just comes together. Do not overmix. [Don't have a stand or hand mixer? I'd rub the cold butter into the flour mixture with my fingertips or with a pastry blender, hand-chop the apples coarsely and mix the rest together with a wooden spoon until combined. It might feel awkward, but it should all come together. Again, don't overmix it though it will be harder to do this by hand.].
  • Generously flour your counter top and place the scone dough on top of it. Sprinkle with flour. Use a rolling pin to gently roll (or use your hands to pat) the dough into a 1 1/4-inch thick, 6-inch circle. Cut circle into 6 wedges. Transfer them to a baking sheet that has either been buttered or lined with a fresh sheet of parchment paper. Leave at least 2 inches between each scone.
  • Beat remaining egg in a small bowl with a pinch of salt. Brush the scones with egg wash and sprinkle them with remaining tablespoon of sugar. Bake until firm and golden, about 30 minutes. With a spatula, lift them to a wire rack to cool for 10 minutes.

Apple cheddar scones are a delicious and savory twist on the classic scone recipe. This recipe combines the sweetness of apples with the sharpness of cheddar cheese to create a flavor explosion in your mouth. While making apple cheddar scones may seem daunting, these valuable tips will guide you through the process and make baking these scrumptious treats a breeze.

Tip 1: Choose the Right Apples

When making apple cheddar scones, it’s important to choose the right type of apple. You want to select an apple that is both sweet and tart to balance out the richness of the cheddar cheese. Some great apple varieties to use in this recipe include Honeycrisp, Granny Smith, and Braeburn. It’s also important to use firm apples to prevent them from turning mushy during the baking process.

Tip 2: Keep the Butter Cold

One of the keys to making perfect apple cheddar scones is keeping the butter cold. Cold butter helps create a flaky and tender texture, which is essential for scones. Make sure to cut the butter into small pieces and store it in the refrigerator or freezer until you are ready to use it. Additionally, you can use a food processor to gently pulse the butter into the flour mixture until it resembles coarse crumbs.

Tip 3: Don’t Overmix the Dough

When making scones, it’s important not to overmix the dough. This can lead to tough and dry scones instead of the desired tender and flaky texture. Once you add the wet ingredients to the dry ingredients, stir the dough with a fork until it just starts to come together. Then, use your hands to gently knead the dough a few times to form it into a ball. Be sure not to overwork the dough.

Tip 4: Use Sharp Cheddar Cheese

To really bring out the savory flavor of the scones, it’s important to use sharp cheddar cheese. This type of cheese has a stronger and more pungent flavor that pairs perfectly with the sweetness of the apples. When shredding the cheese, use a coarse shredder to create small, uneven pieces. This will help distribute the cheese throughout the dough more evenly.

Tip 5: Use Cold Liquid

In addition to keeping the butter cold, it’s important to use cold liquid when making apple cheddar scones. This helps keep the dough cold, which is necessary for a flaky texture. You can use milk, cream, or buttermilk as the liquid in this recipe. Be sure to chill the liquid in the refrigerator for at least 30 minutes before using it in the recipe.

Tip 6: Shape the Scones Properly

To create the signature triangular shape of scones, it’s important to shape the dough properly. Start by patting the dough into a circle that is about 1 inch thick. Then, use a sharp knife to cut the circle into 8 equal sections. Make sure to cut straight down without twisting the knife to prevent the scones from baking unevenly.

Tip 7: Egg Wash for a Golden Brown Crust

For a beautiful golden brown crust on your scones, use an egg wash. This simple mixture of egg and milk or cream brushed onto the top of the scones before baking helps create a shiny and crispy exterior. Be sure to brush the egg wash on lightly to prevent the scones from being too greasy.

Tip 8: Bake at the Right Temperature

Baking scones at the right temperature is crucial for achieving the desired texture and flavor. Preheat your oven to 400°F and bake the scones for 18-20 minutes, or until they are light golden brown on top. If you notice that the scones are browning too quickly, you can cover them loosely with foil.

Tip 9: Let the Scones Cool Before Serving

While it may be tempting to dig into your freshly baked apple cheddar scones right away, it’s important to let them cool first. Allowing the scones to cool on a wire rack for 10-15 minutes helps them set properly and prevents them from being too crumbly or falling apart. Then, enjoy your warm and delicious scones with a cup of tea or coffee.
Conclusion
Apple cheddar scones are a delicious and savory treat that’s perfect for any occasion. With these valuable tips, you’ll be able to make perfect scones every time. Remember to choose the right apples, keep the butter and liquid cold, use sharp cheddar cheese, shape the scones properly, and bake at the right temperature. Then, let them cool and serve with your favorite hot beverage. Happy baking!
