1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

1-1/2 cups shredded cheddar cheese, divided
1/3 cup grated Parmesan cheese
1 large egg
1 cup buttermilk
1/4 cup vegetable oil
2 medium tart apples, peeled and chopped

Steps:

  • In a large bowl, combine the first six ingredients; stir in 1 cup cheddar cheese and Parmesan cheese. In a small bowl, beat the egg, buttermilk and oil; stir into dry ingredients just until moistened. Fold in apples. , Fill greased or paper-lined muffin cups three-fourths full. 1/2 cup 2% low-fat milk
1/4 cup vegetable oil
1 cup unsweetened applesauce
1/4 cup sugar
1 1/2 cups all-purpose flour
