This is a recipe I created with bits and pieces from other recipes. Great for the fall when you have extra apples and don't want to make sweets.

Time 45m

Yield 3

Number Of Ingredients 6

cooking spray
¼ teaspoon dried thyme, divided, or more to taste
3 skinless, boneless chicken breast halves
3 small apples - peeled, cored and chopped
2 ¼ ounces white Cheddar cheese (such as Babybel®), chopped
1 teaspoon olive oil, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray and sprinkle with 1 pinch thyme.
  • Place chicken breasts between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a thickness of 1/4-inch.
  • Spread apples and Cheddar cheese evenly over each chicken breast. Starting at one end, roll each breast around filling and secure the roll with a toothpick through the center. Transfer breasts to prepared baking dish. Drizzle olive oil over each breast and sprinkle with remaining thyme.
  • Cook chicken breasts in the preheated oven until no longer pink in the center and the juices run clear, about 25 minutes. An instant-read thermometer inserted into the center of the meat should read at least 165 degrees F (74 degrees C).

Yield Makes 4 servings

Number Of Ingredients 19

Chicken
1/2 cup coarsely grated smoked cheddar cheese
1 tablespoon plus 1/4 cup pure maple syrup
1 tablespoon cream cheese, room temperature
2 teaspoons chopped fresh sage
4 boneless chicken breast halves with skin and tenderloin attached
1/4 cup Scotch whisky
2 tablespoons (packed) golden brown sugar
2 tablespoons (1/4 stick) unsalted butter
Green Apple Slaw
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 tablespoon pure maple syrup
1 tablespoon Scotch whisky
1 1/2 teaspoons chopped fresh sage
1 very large Granny Smith apple, halved, cored, cut into matchstick-size strips (about 2 1/2 cups)
1/4 cup paper-thin slices red onion
2 green onions, chopped
Nonstick vegetable oil spray

Steps:

  • For chicken:
  • Stir cheddar cheese, 1 tablespoon maple syrup, cream cheese, and sage in small bowl to blend. Place 1 chicken breast, skin side down, on work surface. Using small sharp knife, cut 1 1/2-inch-deep by 2-inch-long horizontal pocket in chicken. Pack in 1/4 of stuffing. Press tenderloin into pocket opening to seal in stuffing. Repeat with remaining chicken and stuffing. Arrange chicken on small baking sheet. Combine 1/4 cup maple syrup, whisky, brown sugar, and butter in small saucepan. Whisk over medium heat until sauce comes to simmer and is blended. (Chicken and basting sauce can be made 1 day ahead. Cover separately and refrigerate.)
  • For green apple slaw:
  • Whisk first 5 ingredients in medium bowl to blend. Mix in apple, red onion, and green onions. Season slaw to taste with salt and pepper. Refrigerate at least 1 hour and up to 4 hours, tossing occasionally.
  • Spray grill rack with nonstick spray and prepare barbecue (medium-high heat). Rewarm basting sauce; transfer half to bowl and reserve. Set pan with remaining sauce at edge of grill to keep warm. Grill chicken, skin side down, until golden, about 3 minutes. Turn chicken over, repositioning over medium to medium-low heat. Grill until cooked through, turning occasionally and basting with sauce in pan during last 5 minutes, about 8 minutes. Transfer chicken to platter. Serve with apple slaw, passing reserved sauce separately.

I found this recipe on line at The Recipe Link. After being at Cracker Barrel, I think this is close to the real thing. I had to eyeball the amounts on the crackers and soup as no measurements were given. Next time I will measure and post accordingly.

APPLE & CHEDDAR STUFFED CHICKEN BREASTS

APPLE & CHEDDAR STUFFED CHICKEN BREASTS image

Number Of Ingredients 9

2 Skinless, boneless chicken breasts -sliced thin to make 4 pieces of chicken
1/2 cup Chopped apple
2 tablespoons Shredded Cheddar cheese
1 tablespoon Italian-style dried bread crumbs
1 tablespoon Butter
1/4 cup Dry white wine (or apple juice)

1 tablespoon Water
1 1/2 teaspoons Cornstarch

  • 1.Combine apple, cheese, and bread crumbs. Set aside. 2.Flatten chicken breasts between sheets of waxed paper to 1/4 inch thickness. Divide apple mixture between chicken breasts, and roll up each breast. Secure with toothpicks. 3.Melt butter or margarine in a 7 inch skillet over medium heat. Brown stuffed chicken breasts. Add wine and 1/4 cup water. Cover. Simmer for 15 to 20 minutes, or until chicken is no longer pink. 4.Transfer chicken to a serving platter. Combine 1 tablespoon water and cornstarch; stir into juices in pan. Cook and stir until thickened. Pour gravy over chicken. Cook's Note: I usually use double the stuffing (apple, cheese, bread crumbs)...and when it comes time to simmer it- just add all of the stuffing thats leftover to the pan. Its going to make this delicious sauce that you can spoon over the chicken and whatever carb you'd like to serve (i usually serve it with rice). You can also put a dash of cinnamon in the apple/cheese mixture to make it even yummier. It smells SO good when its cooking!!

Time 1h

Yield 4 serving(s)

Number Of Ingredients 13

1 cup walnut halves
2 tablespoons butter
1 1/4 cups long-grain white rice
2 1/2 cups chicken stock
1 apple, peeled seeded and chopped (honeycrisp, gala or golden delicious)
3/4 cup fresh flat-leaf parsley (packed)
1/4 cup packed fresh dill
salt and coarsely ground black pepper
one 6-ounce brick sharp white cheddar cheese, cut into small, 1/4-inch cubes
1 tablespoon extra-virgin olive oil (EVOO)
8 bone-in skin-on chicken thighs
1/4 cup apple cider vinegar
1/2 cup dark maple syrup

Steps:

  • Preheat the oven to 325°. Spread the walnuts on a baking sheet and roast until well toasted and fragrant, 10 to 12 minutes.
  • In a large saucepan with a tight-fitting lid, melt the butter over medium heat. Add the rice and toast for a minute or two. Add 2 cups chicken stock and bring to a boil, then lower the heat, cover and simmer for 10 minutes. Add the apple and simmer for 8 minutes.
  • While the rice cooks, using a food processor, pulse 1/4 cup chicken stock, the parsley, dill and 1/4 teaspoon salt until finely chopped. Stir into the rice during the last minute of cooking. Turn off the heat and let the rice stand, covered, for 1 to 2 minutes before fluffing with a fork. Transfer to a serving dish and stir in the cheese.
  • Meanwhile, in a large skillet, heat the EVOO, 1 turn of the pan, over medium-high heat. Pat the chicken dry and season liberally with salt and black pepper. Add to the skillet and cook, turning once, until browned, about 10 minutes. Transfer the chicken to a platter. Drain off all but 1 tablespoon of the fat in the skillet and add the vinegar. Cook, scraping up the pan drippings, then add the remaining 1/4 cup chicken stock, the maple syrup and black pepper to taste. Cook until thickened, about 1 minute. Add the chicken and walnuts and spoon with the sauce. Loosely cover the pan with foil and simmer for 5 minutes. Serve the chicken, sauce and nuts with the rice alongside.

Valuable Tips When Making Apple Cheddar Chicken Recipes

Apple cheddar chicken recipes are becoming increasingly popular due to their sweet and savory flavor profile. Not to mention, it’s a perfect way to experiment with different ingredients and spice up your regular chicken routine. Here are some valuable tips that will help you create the perfect apple cheddar chicken recipe.

1. Choose the right apple for your recipe

The apple you choose for your recipe can make all the difference when it comes to taste. If you prefer a sweeter taste, go for an apple with a higher sugar content such as Honeycrisp or Fuji. If you prefer a more tart taste, try using Granny Smith apples. You can also experiment with different apple varieties to find what works best for your recipe.

2. Use fresh ingredients

Using fresh ingredients is key to creating a delicious apple cheddar chicken recipe. Be sure to use fresh chicken, fresh apples, and fresh cheese. Not only does it enhance the flavor of your dish, but it also ensures that your meal is healthy and packed with nutrients.

3. Do not overcook the chicken

Cooking chicken for too long will dry it out and make it tough. To avoid this, make sure to cook it to the correct temperature and time according to the recipe. A meat thermometer is an excellent tool for checking if the chicken is done. The ideal cooking temperature for chicken is 165°F (74°C).

4. Use quality cheese

The type of cheese you use will impact the overall taste of your dish. Cheddar cheese is an excellent choice for apple cheddar chicken recipes because it complements the sweetness of the apples. However, be sure to use quality cheese for the best flavor.

5. Coat the chicken in flour before cooking

Coating the chicken in flour before cooking helps to lock in the moisture and create a crispy exterior. It also adds a delicious texture to the dish. Be sure to season the flour with salt and pepper to add extra flavor.

6. Experiment with different herbs and spices

Herbs and spices can add an extra layer of flavor to your apple cheddar chicken recipe. Experiment with different spices like cinnamon, nutmeg, or paprika. You can also try adding fresh herbs like thyme, rosemary, or parsley for a pop of freshness.

7. Do not overcomplicate the recipe

It’s easy to get carried away with ingredients and overcomplicate the recipe. However, sometimes the simplest recipes are the most delicious. Keep your recipe simple and let the natural flavors of the chicken, apples, and cheese shine.

8. Add a touch of sweetness

Adding a touch of sweetness to your apple cheddar chicken recipe can take it to the next level. Try adding a drizzle of honey, maple syrup, or brown sugar to add a subtle, yet sweet taste.

9. Use a cast-iron skillet

Cooking with a cast-iron skillet can help to create a crispy, golden-brown exterior on the chicken. Cast-iron skillets also distribute heat evenly, making sure your chicken cooks evenly.

10. Pair with a fresh salad

The sweetness of the apples and cheesy flavor can create a heavy dish. Pairing your apple cheddar chicken recipe with a fresh salad can add a light and refreshing contrast. Try a simple spinach salad or a mixed greens salad with a balsamic vinaigrette dressing for the perfect balance.

Conclusion

Creating the perfect apple cheddar chicken recipe can seem daunting at first, but with these valuable tips, you can make a delicious and unique meal. Experiment with different apples, herbs, and spices, and do not overcomplicate the recipe. Most importantly, have fun and enjoy the process of creating a delicious meal.
