APPLE CHARLOTTE

Categories     dessert

Time 2h35m

Yield 6 servings

Number Of Ingredients 9

4 tablespoons unsalted butter, plus 10 tablespoons, softened
6 pounds mixed tart apples, peeled, cored and chopped
1/2 teaspoon lemon zest, plus 2 tablespoons lemon juice
3/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon vanilla extract
22 slices thin-slice white bread, crusts removed
Whipped cream or ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F. Melt 4 tablespoons of the butter in a large saucepan over medium heat. Add the apples, lemon zest, lemon juice, sugar, cinnamon, nutmeg and vanilla. Cover and cook until the apples break down and the mixture becomes stiff, about 50 minutes. Remove from the heat and let cool while you put together the bread.
  • Arrange 4 of the bread slices in a square shape on a flat surface. Place the Charlotte mold upside down on the bread and trace the opening with a sharp edge. (Alternatively, use a 2-quart ovenproof casserole dish.) Cut the bread following the traced line and brush both sides with the softened butter. Fit the bread into the bottom of the mold. Cut 11 of the bread slices in half lengthwise. They should be about the same height as the mold. Spread the halved slices with the softened butter and place them against the inside of the mold, overlapping like a fan. Fill the mold with the apple mixture. Cut the remaining 7 slices of bread into triangles, brush with the softened butter and fan the pieces over the top, pressing to fit into the top of the mold.
  • Bake until golden brown, about 30 minutes. Allow the pan to cool 15 minutes. Run a knife around the inside of the mold to loosen it before unmolding. Serve warm with whipped cream or ice cream.

APPLE CHARLOTTE WITH CINNAMON SABAYON

Apple Charlotte with Cinnamon Sabayon image

Provided by Tyler Florence

Categories     dessert

Time 50m

Yield 4 individual cakes

Number Of Ingredients 20

1/2 stick unsalted butter
4 medium Granny Smith apples
1 vanilla bean, split and scraped
1 lemon, juiced
1/2 cup packed light brown sugar
1/4 teaspoon ground cinnamon
2 large eggs
1/4 cup whole milk
2 tablespoons sugar
1 tablespoon ground cinnamon
2 tablespoons unsalted butter, for greasing ramekins
2 tablespoons sugar, for ramekins, plus extra for top
20 slices brioche bread, crust removed
Cinnamon sabayon, recipe follows
6 egg yolks
1/2 cup lightly packed light brown sugar
1/3 cup calvados or apple liqueur
1 teaspoon ground cinnamon
1 vanilla bean, split and scraped
Splash water

Steps:

  • Begin by making the filling. Set a large saute pan or roasting pan over medium heat and add butter. Peel and cut cheeks off apples then cut into 1/2-inch chunks. Once butter has melted and just starting to foam, add apples, scraped vanilla bean and pod, lemon juice, and brown sugar and cinnamon. Toss to coat well and cook for 20 to 25 minutes until apples are just tender and liquid has evaporated. The sauce will caramelize slightly and should be a nice, rich dark color.
  • In a shallow dish, make the batter by combining eggs, milk, sugar, and cinnamon. Stir with a whisk until fully combined.
  • Preheat oven to 375 degrees F and generously butter and sugar 4 (1-cup) ramekins.
  • Invert a ramekin, or use a round cutter, on half of the bread slices to use as a guide to cut out circles. These will be the bases and top of the charlottes - you should have 8 in total. Cut the other slices of bread in half lengthwise.
  • Working with the circles. lightly coat in the batter and place in the bottom of each ramekin. Lightly dip the other rectangles of bread in batter as well, then use them to line the walls of each ramekin - standing them upright around the perimeter leaving an overhang that you will later use to fold over and seal the charlotte. It should take about 6 strips per ramekin. Fill each mold with apples and some of the caramel from the pan. Fold over the edges to seal it up completely and sprinkle the tops with a little sugar.
  • Bake in the center of the oven for 20 to 25 minutes. If the tops brown too quickly, cover loosely with foil. When done, the bread will have puffed up slightly, the edges will be brown and the sugar on top will have caramelized. Allow to cool slightly, then run a knife around the edges and invert onto individual plates. Serve with cinnamon sabayon.
  • To make sabayon, combine ingredients in a large mixing bowl and set over a pot of boiling water on low heat, i.e. a double boiler. Whisk (you can use an electric whisk to make it easier) until the mixture becomes light and fluffy and the volume almost doubles.

APPLE CHARLOTTE

Apple Charlotte image

Rustle up a classic apple Charlotte for dessert. With a soft centre of caramelised apples and a bread and butter casing, it's delicious with custard or ice cream

Provided by Liberty Mendez

Categories     Dessert

Time 1h10m

Number Of Ingredients 9

100g unsalted butter, melted, plus extra for the basin
caster sugar, for dusting
6 slices white bread
custard or vanilla ice cream, to serve
150g caster sugar
50g unsalted butter, cubed
125g eating apples (we used Braeburn), peeled, cored and cut into 1cm chunks
1 tsp ground orange, zested and juiced
1 tsp cinnamon

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Butter a 1-litre pudding basin, then dust with sugar, making sure you cover the whole inside and tipping out any excess sugar. Put a strip of parchment parchment across it (so it's easier to remove the pudding later).
  • Cut the crusts off the bread and flatten the slices with your hands. Dip in the melted butter, covering both sides. Use around 4½ slices of the bread to line the base and sides of the basin, overlapping them to make sure there aren't any gaps. Transfer the mould to the fridge while you make the filling.
  • To make the filling, put the sugar in a large saucepan over a medium heat for a few mins until it turns a dark caramel colour - avoid stirring it. Add the butter and stir to combine, being careful as it will steam a little. Add the apples, orange juice, zest and cinnamon, and stir to combine. Cook over a high heat for 5-8 mins until the apple has softened and the liquid has reduced slightly, stirring occasionally.
  • Remove the pudding basin from the fridge and pour the apple filling into it. Cover the top of the filling with the remaining bread and press down the edges of the bread to seal it together.
  • Put the pudding on a baking tray and bake for 35-40 mins, or until golden brown. Leave to cool for 5 mins, then carefully tip upside down onto a serving plate and remove from the basin. Serve with custard or ice cream.

APPLE CHARLOTTE

Apple Charlotte image

This recipe relies on soft bread and loads of apples to bake a puffy variation on apple pie.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Number Of Ingredients 8

11 tablespoons unsalted butter, softened
6 pounds tart apples, such as McIntosh or Gravenstein, peeled, cored, and thinly sliced
2 tablespoons fresh lemon juice
1 vanilla bean, split and scraped
3/4 cup sugar
3 tablespoons brandy or Calvados (optional)
1 loaf thin-sliced white bread or brioche
1 cup heavy cream, whipped if desired

Steps:

  • Melt 4 tablespoons butter in a large saucepan over medium-low heat. Add apples, lemon juice, vanilla bean and scrapings, sugar, and brandy or Calvados, if desired. Cook until apples break down and become a chunky applesauce, about 20 minutes. Continue cooking over low heat until mixture is stiff enough to hold its shape when you press a spoon into it, 10 to 15 minutes longer. Remove and discard vanilla bean. Let sauce cool, and refrigerate until cold.
  • Heat oven to 400 degrees. Trim crusts from bread, and discard. Place 4 slices of bread together in a square, and place a 7-inch charlotte mold on top. Trace shape of mold onto bread with knife tip, and cut bread to fit in bottom of mold. Butter both sides, and fit into mold.
  • Reserve at least 4 slices of bread for the top; cut remaining slices in half lengthwise. They should be about the same height as the mold. Butter rectangles on both sides, and fit them against walls of mold, overlapping like shingles. Fill with apple mixture. Cut reserved bread to fit top of mold; butter, and fit into place. Chill 15 minutes.
  • Bake until bread is golden brown, 30 to 40 minutes. Let cool in pan for at least 30 minutes. Unmold, and serve warm, with whipped cream, if desired.

BRIOCHE APPLE CHARLOTTE WITH RASPBERRY SAUCE

Brioche Apple Charlotte With Raspberry Sauce image

Provided by Moira Hodgson

Categories     weekday, dessert

Time 1h30m

Yield 6 servings

Number Of Ingredients 8

2 pounds apples
6 tablespoons unsalted butter
Juice 1/2 lemon
1 teaspoon diced lemon peel
2 to 3 tablespoons sugar
8 to 9 slices brioche bread (white bread may also be used)
1 pint raspberries (frozen can be used)
1/4 cup sugar

Steps:

  • Preheat oven to 375 degrees.
  • Peel and core apples and cut into one-quarter-inch slices. Melt two tablespoons butter in saucepan and add apples with lemon juice and lemon peel. Add two to three tablespoons sugar (the amount depends upon the sweetness of the apples) and cook the apples over gentle heat. They will get soft. Cook until puree is stiff enough to hold its shape.
  • Meanwhile, melt remaining butter in saucepan and skim off foam.
  • Remove crusts from bread, dip slices of bread into butter and with them line sides and bottom of an oven-proof dish four inches deep and about eight inches in circumference (a souffle dish is perfect).
  • Arrange apples in layers in dish (it can be prepared ahead to this point) and top with remaining bread. Bake uncovered for one hour.
  • Make sauce. Cook raspberries with the sugar for five to 10 minutes, or until soft, and strain through a sieve. Place in a small bowl.
  • Cool charlotte for about 10 minutes and serve with raspberry sauce. Heavy cream or creme fraiche is good passed around with this, too.

APRICOT AND APPLE CHARLOTTE

Apricot And Apple Charlotte image

Provided by Nigella Lawson

Categories     dessert

Time 1h20m

Yield 6 servings

Number Of Ingredients 9

2 1/2 pounds (about 6 medium) Granny Smith apples
2/3 cup freshly squeezed orange juice
Finely grated zest of 1 orange
1 tablespoon sugar
1/3 cup plus 3 tablespoons apricot jam
8 tablespoons butter (more as needed), melted
1 loaf thin-cut whole wheat bread, slightly stale, crusts removed
1 large egg white
3 large egg yolks, beaten

Steps:

  • Peel and core apples, and cut them in two. Cut the two pieces into 8 chunks, and put in a saucepan. Add orange juice, zest, sugar and 1/3 cup apricot jam. Place pan over high heat and bring to boil. Reduce heat to medium-low, and cook at a lively simmer until apples are soft but still keep their shape, about 8 minutes. Remove from heat and let cool.
  • Heat oven to 350 degrees. Brush butter onto bottom and sides of an 8-inch springform pan. Paint both sides of each slice of bread with butter (or dip briefly into butter) before lining pan with dampened pieces. Fit pieces of bread together like a jigsaw puzzle with no gaps. Paint joints with egg white to help seal them, and press them together.
  • Add egg yolks to cooled apple filling and spoon mixture into bread-lined pan. Layer with more butter-painted bread, and carefully spread remaining 3 tablespoons jam over top. (Jam may be heated, if desired, for ease in spreading.)
  • Place pan on a baking sheet. Bake until browned on edges and top, about 45 minutes. Place on a cooling rack until warm or room temperature. To serve, remove side of pan, and slice like a cake.

APPLE CHARLOTTE WITH CINNAMON SABAYON (TYLER'S ULTIMATE) image

Number Of Ingredients 16

For the filling:
1/2 stick unsalted butter
4 medium Granny Smith apples
1 vanilla bean, split and scraped
1 lemon, juiced
1/2 cup packed light brown sugar
1/4 teaspoon ground cinnamon
For the batter:
2 large eggs
1/4 cup whole milk
2 tablespoons sugar
1 tablespoon ground cinnamon
2 tablespoons unsalted butter
2 tablespoons sugar, plus extra for top
20 slices brioche bread, crust removed
Cinnamon sabayon, (see recipe)

The sauce will caramelize slightly and shou ld be a nice, rich dark color. In a shallow dish, make the batter by combining eggs, milk, sugar, and cinnamon. Stir with a whisk until fully combined. Preheat oven to 375 degrees F and generously butter and sugar 4 (1-cup) ramekins. Invert a ramekin, or use a round cutter, on half of the bread slices to use as a guide to cut out circles. These will be the bases and top of the charlottes - you should have 8 in total. Cut the other slices of bread in half lengthwise. Working with the circles. lightly coat in the batter and place in the bottom of each ramekin. Bake in the center of the oven for 20 to 25 minutes.

Apple Charlotte is a classic dessert that dates back to the 18th century, originated in England. It is a dessert made from cubed or thinly sliced apples, sugar, cinnamon, and butter, layered in between slices of buttered bread soaked in custard. The dish is then baked, and served warm with a sprinkle of powdered sugar or accompanied by whipped cream.

Origins and history

The dish got its name from Queen Charlotte, wife of King George III. It is believed that it was one of the queen's favorite desserts, and her personal chef, Marie-Antoine Carême, created this dish to honor her. At that time, Apple Charlotte used stale bread, which was soaked in milk and then layered with the apples and the sugar. Over time, the recipe evolved, and butter was added to the bread to make it richer, and the milk was replaced with custard.

Variations

Apple Charlotte is a versatile dessert that can be made in various ways, depending on the individual's preference. Here are some variations of the dish:
Classic Apple Charlotte
This is the traditional way of making Apple Charlotte. Cubed or thinly sliced apples are sautéed with butter, cinnamon, and sugar. The bread is lightly buttered, then thickly sliced and cut into the desired shape. The apple mixture is layered with the bread slices and topped with more bread before being baked until golden brown.
Apple Charlotte Pudding
This variation of Apple Charlotte is more like a bread pudding. The bread is mixed with the apples and custard, and baked until set. This version is served sliced and drizzled with caramel sauce.
Apple Charlotte Tart
For this version, the crust is made with a mixture of flour, butter, and sugar. The sliced apples are then arranged on top of the crust, followed by the bread layer, and baked until the crust is golden brown.
Miniature Apple Charlotte
A great option for a small gathering, this variation is made in muffin tins. The bread is cut into rounds and placed at the bottom of each muffin well. The apple mixture is then added on top of the bread, followed by more bread rounds. The tray is then baked until the mini Apple Charlottes are golden brown.

Conclusion

Apple Charlotte is a delicious dessert that has stood the test of time. Its variations have made it even more appealing and adaptable to individual tastes. Whether you are hosting a big party or simply whipping up a dessert for your family, Apple Charlotte is sure to delight your guests.

Valuable Tips When Making Apple Charlotte Recipes

Apple Charlotte is a classic dessert of French origin that is made using sliced apples, buttered bread, and sugar. The dish is traditionally served warm and topped with whipped cream, although many variations exist that incorporate different spices, fruits, and even liqueurs. However, if you're looking to create the perfect apple charlotte, there are a few tips and tricks that you need to know.
1. Choose the Right Apples
The type of apples you select can have a significant impact on the final outcome of your apple charlotte. Look for apples that are firm and slightly tart, such as Granny Smith, Honeycrisp, or Braeburn. These apple varieties will hold up better during the cooking process and provide a nice balance of sweetness and acidity in the dish.
2. Prepare the Apples Properly
To ensure that your apple charlotte has the perfect texture, it's important to slice the apples thinly and evenly. This will help them cook evenly and prevent them from turning mushy. You should also consider peeling the apples before slicing to create a more uniform appearance and texture.
3. Use Stale Bread
One common mistake that people often make when making apple charlotte is using fresh bread. Since fresh bread is soft and moist, it can become soggy when soaked in the apple mixture. Instead, use stale bread that has been left out overnight or lightly toasted to create a more stable base for your dish.
4. Layer the Ingredients Carefully
When assembling your apple charlotte, it's important to layer the ingredients carefully to ensure that the dish cooks evenly and has a consistent texture. Start by greasing the bottom of your baking dish with butter and adding a layer of sliced apples. Then, add a layer of stale bread, followed by another layer of apples, and so on until you reach the top of the dish.
5. Add Seasonings and Spices
While traditional apple charlotte recipes rely on sugar for sweetness, you can enhance the flavor of your dish by adding additional seasonings and spices. Consider adding cinnamon, nutmeg, or allspice to give your dish a warm, comforting flavor. You can also add a splash of rum or brandy for a boozy twist on the classic recipe.
6. Bake at the Right Temperature
To ensure that your apple charlotte is cooked evenly and has a crispy, golden brown crust, it's important to bake it at the right temperature. Most recipes call for baking at 375°F for 30-40 minutes, but you may need to adjust the temperature or cooking time based on your oven's performance.
7. Let the Dish Rest Before Serving
Once your apple charlotte is done baking, it's crucial to let it rest for at least 10-15 minutes before serving. This allows the dish to cool slightly and for the flavors to develop more fully. You can also top your apple charlotte with whipped cream, vanilla ice cream, or caramel sauce for a decadent finishing touch. In conclusion, apple charlotte is a delicious and comforting dessert that can be customized to suit your tastes and preferences. By following these valuable tips, you'll be able to create the perfect apple charlotte that is sure to impress your friends and family. Happy baking!
