- Drain pineapple, reserving juice in a bowl. Add apples to the juice; toss to coat. - Heat a skillet over medium heat; pour sesame seeds into the hot skillet. Cook, stirring often, until sesame seeds are lightly browned and fragrant, 3 to 5 minutes. Remove from heat.
- Mix carrots, apple, toasted sesame seeds, and parsley together in a bowl.
- Whisk lemon juice, vinegar, sugar, garlic, salt, and pepper together in a separate bowl; slowly drizzle safflower oil into lemon juice mixture while continuing to whisk. Pour dressing over carrot mixture; toss to coat.

For the salad:
- 2 medium apples, cored and shredded
- 1 medium carrot, peeled and shredded
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon chopped fresh mint
- 1/2 cup shelled pistachios, chopped
For the dressing:
- 1/3 cup extra-virgin olive oil
- 1/4 cup fresh lemon juice
- 2 teaspoons honey
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Prepare the salad ingredients by shredding the apples and carrots and chopping the fresh herbs and pistachios.
- In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper to prepare the dressing. Set aside.
- In a large mixing bowl, combine the shredded apples and carrots with the chopped cilantro and mint.
- Pour the dressing over the salad and toss gently to combine.
- Sprinkle the chopped pistachios over the salad and serve immediately.
