DAZZLING WINTER SLAW - RED CABBAGE, APPLE AND PECAN SALAD

Dazzling Winter Slaw - Red Cabbage, Apple and Pecan Salad image

A dazzling coleslaw salad for your winter festive table. Red cabbage is mixed with apples, carrots, pecans and onions which is then dressed with a tangy mustard and nut vinaigrette - fabulous! Plus, the colours as well as the taste, is amazing! This goes so well with cold cuts, pies, tarts, quiches, buffets as well as being a wonderful supper or light lunch accompaniment. I do all the shredding and grating in my food processor, it is so easy and cuts down on time. You can of course grate and shred by hand - it will just take a little longer! I sometimes add semi-dried cranberries and grated beetroot - these are listed as optional exras. The pie shown in the photograph, is my Recipe #268117, which I often serve with this winter slaw salad - they make a wonderful combination. (This recipe was posted to our personal preferences - with a light dressing and not a creamy or heavy dressing; if you like your salads with more dressing - please adjust the dressing quantities up!)

APPLE-CABBAGE SLAW

Apple-Cabbage Slaw image

In the South, cole slaw is a must at big get-togethers. To modernize it, I add my favorite Arkansas Black apples and swap more than half of the usual mayo with yogurt, but it's still that classic Southern slaw that everyone loves.

Provided by Hugh Acheson

Categories     side-dish

Time 1h30m

Yield 4 servings

Number Of Ingredients 13

2/3 head cabbage, about 2 cups, sliced and lightly packed
2 large apples, Arkansas Blacks or any firm apple
kosher salt
1/2 cup scallions, finely sliced
1/2 cup celery, minced
1/2 cup low-fat plain yogurt
1/4 cup mayonnaise
1 tablespoon freshly squeezed lime juice
3 tablespoons cider vinegar
1 teaspoon freshly ground cumin seeds
1/4 teaspoon freshly ground black pepper
1/4 cup flat-leaf parsley, chopped
1/4 cup mint leaves, chopped

Steps:

  • For the salad: Cut the cabbage around the core and julienne. Place in a large bowl and set aside. Core and julienne the apples and add them to the cabbage. Sprinkle with a pinch of salt. Add the scallion and celery to the cabbage/apple mixture.
  • For the dressing: Combine the yogurt, mayonnaise, half the lime juice, vinegar, cumin, and pepper in a small bowl. Add the remaining lime juice to the cabbage/apple mixture to prevent the apples from oxidizing. Season the dressing with salt to taste. Pour over the cabbage/apple mixture and set aside. Roughly chop the parsley and mint and add to the slaw. Toss to coat and let rest several minutes for the flavors to macerate. (Slaw can be made and refrigerated up to two hours in advance.)
  • Place slaw in a dish and serve.

GREEN APPLE, CABBAGE, AND CARAWAY SLAW

Green Apple, Cabbage, and Caraway Slaw image

At my first barbecue competition in Des Moines, Iowa, one of the old-timers who was cruising the grounds in a golf cart stopped to chat and then took me under his wing. We started to talk about food, as one deeply interested professional to another. "I'd love to show you my Walla Walla onions," he said with paternal pride. I'm always glad to taste someone's prize ingredients, and thankful for their sharing. I think my genuine appreciation of his gesture moved him. With the air of a seasoned veteran offering advice to a newcomer, he said, "If you want to win, think apple." I gave his advice some serious thought. Champion barbecuers often inject their creations with apple juice or slather them with apple jelly or both. So, as the saying goes, when in Rome . . . I microplaned some Granny Smith apples and added them to my board dressing, which was a new way of using an ingredient that the judges knew and liked. The technique has become my secret weapon for waking up barbecue flavors. This slaw is slightly acidic and tangy from the green apple. It has massive crunch and little flavor capsules of caraway. I love it with the Smoked Pork Shoulder with Lime Coriander Salt.

BREADED PORK CHOPS WITH WARM APPLE-CABBAGE SLAW

Breaded Pork Chops with Warm Apple-Cabbage Slaw image

Think of this as a new, healthier (and less messy!) take on pan-fried pork chops and applesauce. We bread these low-calorie, low-fat chops in whole-wheat panko and spray them with cooking spray to get them crispy in the oven. We prefer to use McIntosh or Red Delicious apples, because they soften quicker.

Provided by Food Network Kitchen

Categories     main-dish

Time 50m

Yield 4 servings

Number Of Ingredients 12

1/2 large head green cabbage, cored and cut into 2-inch chunks
1 large McIntosh or Red Delicious apple, cut into 1/2-inch chunks
2 tablespoons plus 1 teaspoon apple cider vinegar
1 tablespoon olive oil
3 teaspoons light brown sugar
Kosher salt and freshly ground black pepper
1/4 cup chopped fresh dill (about 1/2 bunch), optional
4 thin boneless pork chops (about 1 pound)
3 tablespoons sour cream
2 teaspoons Dijon mustard
1 cup panko bread crumbs
Cooking spray

Steps:

  • Adjust oven racks to the top- and lower-third positions and preheat to 425 degrees F. Put a wire rack in a rimmed baking sheet.
  • Toss the cabbage, apples, 2 tablespoons of the vinegar, olive oil, 2 teaspoons of the brown sugar, 3/4 teaspoon salt and a few grinds of black pepper together on another baking sheet. Roast on the top rack until the cabbage and apples are golden in spots and tender, 20 to 25 minutes. Remove and toss with dill, if using.
  • Meanwhile, lay the pork chops between two pieces of plastic wrap and pound until about 1/4 inch thick. Sprinkle all over with 1/2 teaspoon salt and a few grinds of black pepper. Combine 1 tablespoon of the sour cream and 1 teaspoon of the mustard in a small bowl and brush both sides of each chop with the mixture.
  • Pour the panko crumbs out onto a plate and press each side of the pork chops into the crumbs. Generously spray both sides of each chop with cooking spray and place on the rack on the prepared baking sheet. Bake on the lower rack until the pork chops are golden, crispy and cooked through, 6 to 8 minutes, flipping halfway through.
  • Mix together the remaining 2 tablespoons of sour cream, 2 teaspoons water and the remaining 1 teaspoon each mustard, brown sugar and vinegar. Divide the pork chops and apple slaw among four plates; drizzle the chops with some of the sauce.

Plus, it's incredibly versatile, meaning you can use it as a topping for sandwiches, tacos, or even as a side dish for grilled meat. However, creating the perfect apple cabbage slaw can be tricky, and there are a few tips that can help you make this recipe perfectly. Here are some valuable tips to consider when making apple cabbage slaw recipes.

Tip 1: Choose the Right Cabbage

Cabbage is one of the essential ingredients in apple cabbage slaw recipes, and choosing the right type is crucial. Green and purple cabbage are the most commonly used varieties for slaw recipes. Green cabbage has a mild flavor and a softer texture, which makes it perfect for slaw recipes. Purple cabbage, on the other hand, is crispier and has a sweeter taste, making it an excellent addition to apple cabbage slaw recipes.
Tips:
  • Always choose fresh cabbage that has bright and shiny leaves.
  • Make sure the cabbage is firm and heavy, with no bruises or small holes.
  • To save time, you can buy pre-cut and washed cabbage, but make sure to check the expiration date.
  • Cut the cabbage into thin slices or shred it to make it easier to mix with other ingredients.

Tip 2: Use Fresh Apples

Apples are another essential ingredient in apple cabbage slaw recipes, and using fresh ones makes a world of difference. Choose apples that are firm, crisp, and have a bright color. You can use any variety of apples, depending on your taste preference. Granny Smith and Honeycrisp apples are popular choices for slaw recipes, but any apple that can hold its shape and retains its texture well works well.
Tips:
  • Remove the apple's core and slice it into thin pieces or cut it into small cubes.
  • Make sure the apple slices are roughly the same size as the cabbage to ensure even texture.
  • You can leave the skin on the apples for extra texture and nutrition.
  • Cut the apples at the last minute to prevent browning.

Tip 3: Add Crunch with Nuts and Seeds

Adding nuts and seeds to apple cabbage slaw recipes gives it an extra crunchy texture and makes it more satisfying. Walnuts, almonds, pecans, and sesame seeds are popular choices that go well with slaw recipes. You can roast the nuts or seeds for a few minutes in the oven or on a skillet to enhance their flavor before adding them to the slaw.
Tips:
  • Chop the nuts into small pieces or use slivered options to make it easy for mixing with other ingredients.
  • If you're using seeds, you can toast them in a pan or oven until they turn golden brown.
  • Don't add the nuts or seeds until right before you're ready to serve the apple cabbage slaw recipes to prevent them from getting soggy.

Tip 4: Make-Ahead Without Apples

Apple cabbage slaw recipes taste better when they've had some time to marinate, but this can be tricky with the apples involved. Apples tend to release water as they sit, making the slaw watery and unappetizing. Therefore, when you plan to make-ahead, prepare the slaw mixture without the apples and store them separately. Add the apples to the slaw mixture just before serving.
Tips:
  • After mixing the cabbage, nuts, seeds, and dressing, store them in an airtight container in the fridge.
  • Store the apple slices in a separate container, preferably in the fridge, to keep them fresh and crispy.
  • Add the apples to the slaw mixture just before serving to prevent them from releasing too much moisture and making the slaw watery.

Tip 5: Experiment with Dressing

Dressing plays a significant role in the flavor profile of apple cabbage slaw recipes. You can use store-bought dressing, but if you want to create a unique flavor, it's worth experimenting with homemade dressings. A simple dressing made with olive oil, apple cider vinegar, honey, lemon juice, and Dijon mustard works well. Alternatively, you can try a creamy dressing made with mayonnaise, sour cream, yogurt, or buttermilk.
Tips:
  • Start with a little amount of dressing and add gradually until you find the perfect balance.
  • Experiment with different flavors, such as adding garlic, ginger, or hot sauce to the dressing.
  • Add salt and pepper to taste and adjust the seasoning as needed.
  • For a different twist, add some dried herbs like oregano, thyme, or parsley to enhance the flavor profile of the slaw.

Conclusion

In conclusion, apple cabbage slaw is a delicious recipe that's easy to make, healthy, and versatile. Choosing the right cabbage, using fresh apples, adding nuts and seeds, making ahead without apples and experimenting with dressing are valuable tips that can make a difference in the slaw's taste and texture. With a little bit of creativity, you can create a unique apple cabbage slaw recipe that will impress your family and friends.
