1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
2 eggs, lightly beaten
1/2 cup sugar (or use less if you prefer)
1/2 cup mashed ripe banana (about 2 small)
1/2 cup apple butter
1/4 cup canola oil
1/4 cup brown sugar, packed
3 tablespoons all-purpose flour
2 tablespoons butter, cold
1/3 cup chopped walnuts or 1/3 cup pecans

Steps:

  • Preheat oven to 350°.
  • Grease and flour bottom and sides of a 9x5 pan only about 1/2 inch up sides of pan and set aside.
  • In a large bowl combine flour, baking powder, cinnamon, baking soda, salt and nutmeg until blended and set aside.
  • In a medium bowl combine eggs, banana, apple butter, sugar and oil and blend.
  • Combine egg mixture to flour mixture, stir just until moistened and pour into prepared pan.
  • Bake at 350° about 45 minutes or until bread tests done with a toothpick.
  • Cool bread in pan for about 5-10 minutes and then remove from pan and cool completely on a wire rack.
  • It's best to refrigerate before serving.
  • *** NOTE: For nut topping, mix sugar and flour together and cut in cold butter with a pastry blender until mixture resembles course crumbs. Stir in nuts and top bread before baking.

1/2 cup brown sugar
1/2 cup granulated sugar
2 eggs
3 tablespoons sour cream
3 bananas, mashed
1 teaspoon vanilla
2 cups flour

2 apples, cored & grated (peel is optional)

Steps:

  • Preheat oven to 350 deg F.
  • In a mixer, cream peanut butter and sugars, and beat in eggs.

1 1/2 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp salt
1/8 tsp ground nutmeg
2 slightly beaten eggs
3/4 c sugar
1/2 c mashed ripe banana (2 small)
1/2 c apple butter
1/4 c canola or cooking oil

Steps:

  • 1. Grease and flour the bottom and 1/2 inch up the sides of a 9x5x3-inch loaf pan; set aside. In a large bowl combine flour, baking powder, cinnamon, baking soda, salt, and nutmeg. Make a well in center of the flour mixture; set aside.
  • 2. In a medium bowl combine eggs, sugar, banana, apple butter, and oil. Add egg mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Spoon batter into prepared pan.

1 tsp. vanilla extract

Bread Pudding:
1 loaf banana bread
3 eggs
1 1/2 C. heavy cream
1 t. vanilla
Apple Butter Cream Sauce:
1 cup heavy cream
1/4 cup powdered sugar
1 tbls cornstarch
2 tbl milk or cream
1/4 cup prepared apple butter

  • Make banana bread first by preheating oven to 350 degrees and beating butter and sugar together til fluffy. Add bananas and vanilla to butter and beat together til blended fully. In seperate bowl, mix flour, soda and cinnamon. Sift flour mix into banana mix and beat on low til blended. Use spatula to scrape bottom of bowl and mix ingredients fully. Pour into greased 9x5 loaf pan and bake for 50-60 mins. Let loaf cool for about 30 mins. Once cooled, tear banana bread into small pieces and put in large bowl. Mix eggs, cream, and vanilla in seperate bowl, then pour over bread pieces. Cover and let soak for 10 mins. Pour bread mixture into a greased 8x8 pan and cook at 350 degrees for 45-55 mins. When bread pudding done, make apple butter cream sauce by bringing cream and sugar to gentle boil in small saucepan, reduce heat to a simmer. Mix baking soda and milk til no clumping, then whisk into simmering cream until thickened. Remove from heat and stir in apple butter. Once sauce has thickened, pour over bread pudding.

1 cup rolled oats, processed until fine
1/2 tsp cinnamon
1 Tbsp baking powder
1/2 tsp salt
dash of cayenne or nutmeg (optional added spices)
liquid blend - in my Vitamix:
1 tsp vanilla extract
1 1/2 very ripe bananas, peeled
1/2 cup honeycrisp apple, chopped
1/4 cup raw turbino cane sugar, organic
(note: the bananas and apples will vary in sweetness, if you are worried about your bread being too sweet you can reduce the sugar even further)
4 tsp chia seeds (chia is my egg replacer in this recipe)
1 cup almond milk (or any non-dairy substitute)
Fold in:
1/2 banana, sliced
1/2 cup honeycrisp apple, diced (add a few pinches more for extra-apple-y bread)
1/4 cup melted organic coconut oil
2 heaping tablespoons Earth Balance, vegan butter
1 tsp apple cider vinegar

Quickly stir together almond butter + coconut oil + maple until smooth. Warm almond butter if needed to soften before mixing. Set aside at room temp until ready to drizzle over top bread. 12.
