2 large very ripe bananas
1/2 cup dark brown sugar
1/4 cup applesauce
2 eggs
1 cup all-purpose flour
3/4 cup ground almond meal
1 tablespoon baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
2 large golden delicious apples, sliced
1/4 cup honey
1 tablespoon melted organic butter, for greasing
3/4 cup frozen blueberries

Steps:

  • Preheat oven to 400 degrees.
  • Arrange sliced apples on a baking sheet and drizzle honey over them. Bake at 400 degrees for 10-15 minutes until apples are moist and tender.
  • Remove apples from the oven and lower the oven temperature to 350 degrees.
  • In a large bowl, mash bananas and brown sugar until creamy, don't worry if there are a few lumps.
  • Add the apple sauce and eggs and beat with a whisk until well combined.
  • Add the flour, almond meal, baking powder, cinnamon, nutmeg, and ginger; use a spatula to fold together.
  • Grease the cake pan with melted butter and arrange one layer of apple slices on the bottom of the pan.
  • Pour half the banana batter into the pan, and arrange a second layer of apples around the outside edges.
  • Spoon frozen blueberries into the center area of the cake and gently cover with the remaining batter.
  • Bake the cake in 350 degree oven for about 1 hour; check it at 45mins.
  • Serve with natural yoghurt and a drizzle of honey.

1 can (8 ounces) unsweetened crushed pineapple, drained
1 package (12 ounces) frozen unsweetened blueberries
1/2 cup sugar
1 package white cake mix (regular size)
2/3 cup butter, melted
1 cup chopped walnuts
1/2 cup sliced almonds

Steps:

  • Preheat oven to 350°. Mix pie filling and pineapple in a greased 13x9-in. baking dish until combined. Toss blueberries with sugar; spoon over pie filling mixture.   • 1. Prehate oven 350 degrees. Lightly butter and flour 9-in. springform pan 2. Combine flour, baking powder, salt in a small bowl 3. Beat butter on medium high for 2 minutes 4. Add sugar, vanilla; beat 5. Add eggs; beat 6. Add flour mixture; beat 7. Pour in pan 8. Decide on fruit option. For berries, combine all ingredients and when cake is done top with powdered sugar. For peaches or apples, sprinkle with cinnamon sugar on top before baking. 9. Bake at 350 degrees for 40-45 minutes

1/4 cup whipping cream
1 1/4 cups sugar
3 large eggs
2 1/3 cups flour

Steps:

  • Melt butter in the cream/milk. Cool.
  • In a large bowl, mix sugar and eggs for 1-2 minutes at medium speed.

1/2 c white sugar
1/2 c unsalted butter
2 eggs
1-1/2 c all purpose flour
1-1/2 tsp pure vanilla extract
1-3/4 tsp baking powder
1/2 c milk
1 apple
1/4 c brown sugar
1 tsp cinnamon
1/3 c blueberries, fresh
1/2 c milk
1 Tbsp olive oil, extra virgin
2 Tbsp sour cream

Steps:

  • 1. Preheat oven 350 degrees & oil a 5* 9" baking pan. Peel & chop 2 apples,place in saucepan with 1/2 c. Water, cinnamon & nutmeg then 2 slices butter. Cook covered on Low heat and stirring until soft and flavorful. Set aside.
  • 2. Beat softened butter, vanilla, sour cream and white sugar. Add eggs then sift flour, pour milk then mix smooth.
  • 3. Pour batter in baking pan. Place blueberries, then Apple mixture, Sprinkle cinnamon & brown sugar, as topping.
  • 4. Bake 30-40 minutes. Cool & serve.
