SWEET POTATO BISCUITS WITH PEPPERED PORK LOIN, APPLE MUSTARD BUTTER AND SALAD

Sweet Potato Biscuits with Peppered Pork Loin, Apple Mustard Butter and Salad image

Provided by Damaris Phillips

Categories     main-dish

Time 4h10m

Yield 4 to 6 servings

Number Of Ingredients 30

1 3/4 cups all-purpose flour, plus extra if needed
2 tablespoons brown sugar or honey
2 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon cayenne pepper
6 tablespoons chilled unsalted butter, diced, plus extra melted to brush biscuits
3/4 cup mashed sweet potato, cold
1/3 cup buttermilk
1/4 cup golden raisins
2 tablespoon sorghum or molasses
2 tablespoons salt
2 tablespoons freshly ground black pepper
1 teaspoon crushed red pepper flakes
2 tablespoons vegetable oil
One 4-pound pork loin
1 pound peeled and cored apples, cut into 1/2-inch chunks, or 12 ounces unsweetened applesauce
4 ounces light brown sugar
2 teaspoons ground cinnamon
1 teaspoon ground allspice
2 tablespoons Dijon mustard
1 tablespoon whole grain mustard
2 bunches arugula
1 pint grape tomatoes or baby heirlooms
1/4 cup sunflower seeds
2 lemons, juiced
1/4 cup olive oil
Salt and freshly ground black pepper
Salt and freshly ground black pepper
2 ounces shaved Parmesan

Steps:

  • For the sweet potato biscuits: Preheat the oven to 425 degrees F. In a large mixing bowl, whisk together the flour, brown sugar, baking powder, salt, baking soda and cayenne. Using a pastry cutter or your hands, cut in the chilled butter until the mixture resembles coarse meal.
  • Stir together the sweet potato and buttermilk in a separate bowl until smooth. Make a well in the dry ingredients and pour in the sweet potato mixture. Add the raisins and combine until it just comes together. Be very careful to not over mix.
  • Turn the dough onto a floured surface and knead until it comes together. If the dough is too sticky, work in up to 1/4 cup additional flour. Shape into a disk and pat to an even 1- to 1 1/2-inch thickness. With a floured 3-inch round biscuit cutter, cut out biscuits. Gather together scraps, and repeat to cut out more biscuits.
  • Butter a baking sheet and place each biscuit 1/2 inch apart. Brush with melted butter and bake until golden brown, 20 to 25 minutes.
  • Reduce the oven temperature to 350 degrees F.
  • For the peppered pork loin: In a small bowl, stir together the sorghum, salt, black pepper, crushed red pepper and oil. Trim the pork loin of any excess fat, and transfer to a shallow roasting pan (or my favorite, a cast-iron skillet). Rub the pork loin with sorghum and spice mixture, coating evenly. Roast until the internal temperature is 140 degrees F, about 45 minutes. Remove from oven and let rest for 10 minutes.
  • For the apple mustard butter: Place the apple chunks in a large, heavy-bottomed pot over low heat. Cook, uncovered, for 1 1/2 hours, stirring occasionally. Add the brown sugar, cinnamon and allspice. Continue cooking over low heat, stirring occasionally, until very thick, about 30 minutes. Remove from the heat and stir in the mustard. (Or if using applesauce, place in a heavy bottomed pot with the sugar and spices and cook until it is thick, 30 minutes or so.)
  • For the salad: Toss the arugula, tomatoes and sunflowers seeds in a large bowl. Drizzle with lemon juice and olive oil and season with salt and pepper. Top with the shaved cheese.
  • To serve: Split the sweet potato biscuits and spread the apple mustard butter on both sides. Thinly slice the pork loin and place on each of the bottom biscuits. Top with the other biscuit halves and serve with salad on the side.

CARAMEL APPLE BISCUITS

Caramel Apple Biscuits image

This dessert puts a biscuit at the heart of fall's best flavors. Flaky, tender biscuits are split and filled with sautéed apples, a drizzle of caramel sauce, and a scoop of ice cream, then topped with crunchy-spiced walnuts. The caramel sauce and spiced walnuts can be made well ahead of time; refrigerate the caramel if you're making it more than a day ahead, and keep the nuts well-covered. On the day you plan to serve this dessert, make sure y our caramel is at room temperature. Sauté the apples while the biscuits are in the oven. And finally, be sure to have some top-quality ice cream on hand!

Provided by @MakeItYours

Number Of Ingredients 16

1 3/4 to 1 cup heavy cream
1 pinch of cayenne pepper, optional
1 1/3 to 1/2 cup milk
1 1 teaspoon boiled cider
1 3/4 to 1 cup heavy cream
1 pinch of cayenne pepper, optional
1 1/3 to 1/2 cup milk
1 1 teaspoon boiled cider
1 3/4 to 1 cup heavy cream
1 pinch of cayenne pepper, optional
1 1/3 to 1/2 cup milk
1 1 teaspoon boiled cider
1 3/4 to 1 cup heavy cream
1 pinch of cayenne pepper, optional
1 1/3 to 1/2 cup milk
1 1 teaspoon boiled cider

Steps:

  • To make the caramel: Place the sugar in a 2-quart heavy saucepan (preferably light colored). Add the water and salt. Cook over medium heat, stirring once or twice, until the sugar is dissolved. Bring to a boil, and cook without stirring until the sugar begins to caramelize (become light to medium brown), which will take about 8 minutes. If using a thermometer, cook the sugar until it's between 350°F and 360°F. 2) Remove the pan from the heat and slowly pour in the heavy cream; the mixture will boil up, so be careful. Return the pan to the heat and stir until smooth. Use more cream for a thinner sauce, the smaller amount if you want it thicker.3) To prepare the walnuts: Place a medium skillet over medium heat. Melt the butter and add the walnuts. Cook, stirring occasionally, until the nuts are barely starting to brown; this can happen quickly, so keep an eye on them. Sprinkle the sugar over the nuts and stir; add the boiled cider or maple syrup and stir again to coat the nuts. Sprinkle with salt and a pinch of cayenne. When the nuts are coated, remove from the heat and spread on a baking sheet or piece of parchment to cool.4) To make the biscuits: Preheat the oven to 425°F. In a medium bowl, whisk together the self-rising flour and brown sugar. Work in the butter until it's in small pieces. Combine the boiled cider with the smaller amount of milk and add to the flour mixture, stirring until the flour is evenly moistened. Dribble in more milk, if necessary, to bring the dough together. Use a bowl scraper to fold the dough over on itself a few times to bring it together. 5) Turn the dough out onto a piece of parchment paper, pat it into a 6" to 6 1/2" circle (about 3/4" thick), and cut into circles with a 2" cutter. Pile any scraps on top of each other, fold twice to bring them together, and cut the remaining dough; you should get 8 to 10 biscuits.6) Place the biscuits on a baking sheet, leaving 2" between them. Bake for 14 to 16 minutes, until they're light golden

  • Bake for 10 minutes. About halfway through, rotate the pans 180° and switch the pans on the racks. The biscuits are done when they are a golden brown. Remove from the oven, let cool in the pan for a minute or two, then transfer to a wire rack to cool.

Apple biscuits recipes are a delicious way to incorporate fresh apples into a baked good. These recipes typically involve adding chunks of apple to a biscuit dough that is then baked in the oven. The result is a tender, flaky biscuit with bursts of sweet apple flavor throughout.

History

Biscuits have been a staple of southern cuisine in the United States for generations. While the origins of apple biscuits are unclear, it is likely that they were invented as a way to use up excess apples during the fall harvest season. Today, apple biscuits are enjoyed by people all over the world as a sweet and satisfying breakfast treat.

Ingredients

The ingredients for apple biscuits vary depending on the recipe, but most require basic baking ingredients such as flour, butter, sugar, and baking powder. The addition of fresh apples adds natural sweetness and moisture to the biscuits.
Flour
All-purpose flour is typically used in apple biscuit recipes, though some recipes call for self-rising flour.
Butter
Unsalted butter is usually preferred in biscuit recipes because it allows for better control over the amount of salt in the recipe.
Sugar
Granulated sugar is commonly used in biscuit recipes to add sweetness. Some recipes also call for brown sugar or honey for added flavor.
Baking Powder
Baking powder is used as the leavening agent in biscuit recipes, helping them rise and become fluffy.
Apples
Any variety of apple can be used in apple biscuit recipes, but some popular choices include Granny Smith, Honeycrisp, and Gala.

Preparation

To prepare apple biscuits, the biscuit dough is first mixed together and then folded in chunks of apple. The dough is then rolled out and cut into rounds or squares before being baked in the oven.
Biscuit Dough
Biscuit dough is typically made by combining flour, baking powder, sugar, and salt in a bowl. Cubes of cold butter are then cut into the dry ingredients until the mixture resembles coarse sand. Finally, cold milk or buttermilk is added gradually until a shaggy dough forms.
Adding Apples
To incorporate apples into the biscuit dough, they should be peeled, cored, and chopped into small pieces. These pieces are then gently folded into the biscuit dough to evenly distribute them.
Rolling and Cutting
Once the apple biscuit dough has been mixed, it is rolled out onto a floured surface to a thickness of about 1 inch. The dough can then be cut into circles or squares using a biscuit cutter or knife.
Baking
The apple biscuits should be placed on a baking sheet lined with parchment paper and baked in a preheated oven until they are golden brown on top. This usually takes about 15-20 minutes.

Variations

There are many ways to vary apple biscuit recipes to suit different tastes and preferences. Some popular variations include adding cinnamon or nutmeg for a warm, spicy flavor or drizzling the baked biscuits with a glaze made from powdered sugar and milk for added sweetness.
Cinnamon Apple Biscuits
These biscuits are made by adding ground cinnamon to the biscuit dough and mixing in chopped apples that have been coated in a mixture of sugar and cinnamon.
Savory Apple Biscuits
For a more savory version, some recipes call for adding grated cheddar cheese or diced bacon to the biscuit dough in addition to the apples.
Glazed Apple Biscuits
To make a glaze for the baked biscuits, powdered sugar is mixed with a small amount of milk until a thick but pourable consistency is achieved. The glaze can be drizzled over the warm biscuits and allowed to cool before serving.

Conclusion

Apple biscuit recipes are a delicious and easy way to enjoy the flavors of the fall season. By adding chunks of fresh apples to a basic biscuit dough, these baked goods become a sweet and satisfying breakfast or snack. With a little creativity, these recipes can be easily adapted to suit individual tastes and preferences.
Apple biscuits are a delicious treat that everyone can enjoy. They are perfect for breakfast, brunch, or as an afternoon snack. Making apple biscuits at home is a great way to control the ingredients and create a healthier version of this classic recipe. However, there are some tips you should keep in mind to ensure your apple biscuits are perfect every time.

Tip #1: Choose the Right Apples

When making apple biscuits, it is important to choose the right apples. You want apples that are sweet, juicy, and hold their shape well when baked. Some great options include Granny Smith, Honeycrisp, and Braeburn. These apples all have a nice balance of sweet and tart flavors and are sturdy enough to hold up when baked.

Tip #2: Use Cold Butter

When making apple biscuits, it is essential that you use cold butter. This is because the cold butter will create small pockets of air in the dough, resulting in a flaky, tender biscuit. If your butter is too warm, it will not create these pockets, and your biscuits will be dense and heavy.

Tip #3: Don't Overwork the Dough

Overworking the dough is a common mistake when making apple biscuits. When you overwork the dough, it can become tough and chewy. To avoid this, handle the dough as little as possible. Mix the ingredients together until just combined, and then turn the dough onto a floured surface and gently knead it a few times.

Tip #4: Add Spices and Flavorings

To make your apple biscuits even more flavorful, consider adding spices like cinnamon, nutmeg, or ginger. These spices complement the sweetness of the apples and add a warm, comforting flavor. You can also add other flavorings, such as vanilla extract or lemon zest, for a unique twist on the classic recipe.

Tip #5: Use Low-Fat Ingredients

If you are looking for a healthier version of apple biscuits, consider using low-fat ingredients. Instead of butter, you can use low-fat margarine or vegetable oil. You can also use skim milk instead of whole milk. These substitutions will help reduce the overall fat and calorie content of the recipe without sacrificing flavor or texture.

Tip #6: Add Some Texture

To add some texture to your apple biscuits, consider adding chopped nuts or oats to the dough. These ingredients will add a nice crunch and nuttiness to the biscuits. You can also sprinkle some sugar or cinnamon on top of the biscuits before baking to add a sweet, crispy topping.

Tip #7: Bake at the Right Temperature

The temperature of your oven plays a crucial role in the success of your apple biscuits. Be sure to preheat your oven to the correct temperature (usually around 400°F) and bake the biscuits for the recommended amount of time. Over-baking the biscuits can result in a dry, tough texture, while under-baking them can lead to a gooey, undercooked center.

Tip #8: Serve Warm

One of the best things about apple biscuits is that they are best served warm. When they come out of the oven, allow them to cool for a few minutes before serving them with a pat of butter or a drizzle of honey. The warmth of the biscuits will bring out the flavors of the apples and spices, making for a comforting and delicious treat.
Conclusion
With these tips in mind, you can create perfect apple biscuits every time. Remember to choose the right apples, use cold butter, and avoid overworking the dough. Experiment with spices and texture, and consider using low-fat ingredients to create a healthier version of the classic recipe. Most importantly, enjoy your delicious apple biscuits warm from the oven, and share them with your loved ones for a special treat they will love.
