Apple Banana Bread made with ripe bananas and diced sweet apple, topped with a cinnamon streusel and drizzled with icing. Our favorite banana bread recipe ever!

2 eggs
1/3 cup sour cream (or Greek yogurt- plain or vanilla)
1/2 cup vegetable oil
1 cup mashed ripe bananas (about 2-3 bananas)
1 cup granulated sugar
1/2 cup brown sugar
1 tsp vanilla extract
2 cups all purpose or bread flour
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1 cup peeled & diced apple ((about 1 small apple))
3 tbsp flour
4 tbsp brown sugar
1/4 tsp cinnamon
1 tbsp melted butter
1/2 cup powdered sugar
2 tsp hot water

Steps:

  • Preheat oven to 325°F. Spray two 8" or 9" loaf pans with non-stick baking spray and set aside.
  • In a large bowl, whisk together the eggs, sour cream and vegetable oil. Add mashed bananas, sugars and vanilla and stir until well combined.
  • In a smaller bowl combine dry ingredients and whisk until well incorporated.
  • Pour the flour mixture into the banana mixture and stir until just combined. Fold in apples.
  • Pour half the batter into each baking pan. Combine streusel ingredients and stir until mixture is uniform and crumbly. Sprinkle half streusel mix over each loaf.
  • Bake for 60-70 minutes, until internal temp of the middle of baked bread registers 200°F with a cooking thermomete
  • Remove from oven and let cool in bread pans for about 20 minutes. Overturn onto a cooling rack to cool fully.
  • Whisk powdered sugar together with hot water. Drizzle over cooled bread. Let icing cool to set (it's fast!) then slice and serve. Store leftovers in an airtight container.

1-1/2 cups mashed ripe bananas (4-5 medium)
1-1/2 cups chopped peeled apples (2 medium)
1/2 cup sugar
1/2 cup packed brown sugar
2 tablespoons water
2 tablespoons butter, melted
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sweetened shredded coconut
1/2 cup caramel sundae syrup
1/4 teaspoon sea salt

Steps:

  • Preheat oven to 350°. Combine bananas, apples, sugars and water. Stir in melted butter. In another bowl, whisk flour, baking soda, baking powder and salt. Stir into banana mixture. Transfer to a greased and floured 9x5-in. loaf pan., Bake until a toothpick inserted in center comes out clean, 50-60 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely., Meanwhile, toast coconut, stirring occasionally, in a shallow pan at 350° until golden brown, 4-6 minutes. Cool slightly. Mix coconut with caramel syrup and sea salt; spread over loaf.

This recipe is a bit unusual because there is apple butter added to the batter which replaces the fat that would come from butter (which a lot of quick bread recipes use) and there is also canola oil added instead of vegetable so It's a little healthier. 1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon ground nutmeg
2 eggs, lightly beaten
1/2 cup sugar (or use less if you prefer)
1/2 cup mashed ripe banana (about 2 small)
1/2 cup apple butter
1/4 cup canola oil
1/4 cup brown sugar, packed
3 tablespoons all-purpose flour
2 tablespoons butter, cold
1/3 cup chopped walnuts or 1/3 cup pecans

Steps:

  • Preheat oven to 350°.
  • Grease and flour bottom and sides of a 9x5 pan only about 1/2 inch up sides of pan and set aside.
  • In a large bowl combine flour, baking powder, cinnamon, baking soda, salt and nutmeg until blended and set aside.
  • In a medium bowl combine eggs, banana, apple butter, sugar and oil and blend.
  • Combine egg mixture to flour mixture, stir just until moistened and pour into prepared pan.
  • Bake at 350° about 45 minutes or until bread tests done with a toothpick.
  • Cool bread in pan for about 5-10 minutes and then remove from pan and cool completely on a wire rack.
  • It's best to refrigerate before serving.
  • *** NOTE: For nut topping, mix sugar and flour together and cut in cold butter with a pastry blender until mixture resembles course crumbs. Stir in nuts and top bread before baking.

2 ¾ cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
1 cup butter, melted
2 cups white sugar
4 eggs
1 cup plain Greek yogurt
1 ½ teaspoons vanilla extract
3 large very ripe bananas, mashed
2 apples, cubed
¾ cup chopped walnuts
½ cup packed brown sugar
½ cup white sugar
1 tablespoon ground cinnamon
¼ cup all-purpose flour
3 tablespoons butter, softened
banana slices for garnish
apple slices for garnish

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease two 7x3-inch loaf pans.
  • In a bowl, whisk together 2 3/4 cups of flour, 2 teaspoons of cinnamon, the baking soda, and salt until thoroughly combined. In a separate mixing bowl, beat the melted butter with 2 cups of sugar until smooth, and mix in the eggs, one at a time, followed by the Greek yogurt and vanilla extract. Stir in the flour mixture just until incorporated.
  • Fold in the bananas, apples, and chopped walnuts until combined; do not overmix. There should be small chunks of banana visible in the batter. Pour half the batter into each prepared loaf pan.

dry:
1 cup spelt flour, organic (mine was sprouted grain spelt)
1 cup rolled oats, processed until fine
1/2 tsp cinnamon
1 Tbsp baking powder
1/2 tsp salt
dash of cayenne or nutmeg (optional added spices)
liquid blend - in my Vitamix:
1 tsp vanilla extract
1 1/2 very ripe bananas, peeled
1/2 cup honeycrisp apple, chopped
1/4 cup raw turbino cane sugar, organic
(note: the bananas and apples will vary in sweetness, if you are worried about your bread being too sweet you can reduce the sugar even further)
4 tsp chia seeds (chia is my egg replacer in this recipe)
1 cup almond milk (or any non-dairy substitute)
Fold in:
1/2 banana, sliced
1/2 cup honeycrisp apple, diced (add a few pinches more for extra-apple-y bread)
1/4 cup melted organic coconut oil
2 heaping tablespoons Earth Balance, vegan butter
1 tsp apple cider vinegar
Top:
1 tsp rolled oats, 1 tsp sugar
Almond Butter Drizzle:
2 Tbsp melted coconut oil
2 Tbsp almond butter
2-3 tsp maple syrup

Steps:

  • 1. Preheat oven to 415 degrees. Yes, THAT hot. Also - add a few serving plates to your freezer. So they are fully chilled when serving. (You will see why and end.) 2. Grease your bread pan with coconut oil. 3. Chop your apple. 4. Add your whole rolled oats to Vitamix (or food processor). Process until mediun to fine in texture. You are essentially making oat flour. 5. Add oat flour and all other dry ingredients to large mixing bowl. Toss well. 6. Add all liquid blend ingredients to blender or fp. Process on low until smooth. Process for a good 2 minutes to fully blend apples and assist in plumping and "activating" the chia seeds for a thick texture liquid. 7. Fold liquid into the dry and then add fold in ingredients. Add the vinegar as the very last ingredient. 8. Pour batter into pan and top with oats and sprinkle of sugar. 9. Bake at 410 for 10 minutes. Then reduce heat to 350 degrees and bake for an additional 35 minutes. About 45-50 minutes total baking time. 10. Cool bread a bit before removing from pan. Make almond butter while cooling. 11. Quickly stir together almond butter + coconut oil + maple until smooth. Warm almond butter if needed to soften before mixing. Set aside at room temp until ready to drizzle over top bread. 12. Serving: Pull chilled plates from freezer. Add a warm, moist slice of banana bread to a chilled plate and drizzle the almond butter mix over top - let it hit the plate. You will notice that when the coconut oil-based almond drizzle hits the plate, it firms up a bit to a lovely frosting-ish texture. But the drizzle on the warm bread stays soft and warm. Serve and enjoy!
